Apam Pisang (Malay Steam Banana Cake)

Translation: "Apam" means steam Malay cake which does not use any oily/greasy ingredients and hence considered a healthy choice.

It has been very long time since I last ate Apam Pisang. Since I have some riped bananas, I decided to give a try on the recipe I found in Mesra.net for children's breakfast tomorrow. It turned out to be very soft Apam.

(Makes 8" round)
INGREDIENTS:
4 Eggs
1 cup Sugar
2 cups Plain Flour*
1 tsp Soda Bicarbonate*
1 tsp Baking Powder* (* sifted together)
6 Riped Bananas - mashed
A pinch Salt

METHOD:
1. Beat eggs & sugar until thick.
Mix in flour mixture until well combined.
Add in mashed banana & salt & mix well.

2. Put a layer of banana leaf in a tin & oil.
Steam for 45 minutes.

MeeHoon Soto


My sweet friend gave me varieties of paste recently, so this morning I tried making MeeHoon Soto using Soto paste that she gave me. Emmmh, not only it is less troubles but very delicious too. I planned this since last night, so I had the rice cubes (Nasi Himpit) cooked last night ready for consumption in the morning.

INGREDIENTS:
10-12 Mini Nasi Himpit (rice cubes) - boiled per packet instruction & cool
½ packet MeeHoon - blanched
1 packet Soto paste
1 whole Chicken Breast
1 bowl Bean Sprout - blanched
1 Bean Curd - sliced & deep fried
Some Suhun (vermicili) - deep fried
Some Shallots - sliced & deep Fried
Spring Onion - chopped for garnish
Salt

METHOD:
1. Boil 1½ liter water with Soto paste.
Add in whole chicken breast, Salt & boil until tender.
Pick the chicken out from the soup & shredd to thin long pieces - use it as garnish.

2. Serve Nasi Himpit, Mee Hoon with the Soto soup and garnish with shredded chicken flesh, bean sprout, fried bean curd, Suhun, spring onion, fried onion & chilli ketchup/oil.

3. To make chilli ketchup, blend Chilli Padi with garlic, soya bean, lime juice & chilli sauce.

Banana Fritters

I've got plenty of "Pisang Tanduk" from kampung. "Pisang Tanduk", literally translated as "Horn Banana", is a common banana variety planted in Malaysia. The name must be after its size & shape. The ones shown in photo below measured slightly above one foot long. This variety is commonly used to make banana fritters, a famous freshly fried off-street snacks.

Egg, Pineapple, Potato & Salted Fish Curry

This recipe is created based on my wild appetite and what available in the kitchen. I've been keeping the salted fish from my mum for quite sometime and it is time to dispose it into the cooking pot. I cannot find "Ikan Talang masin" (name of the salted fish) in Miri, so it is kind of precious stock & cook only when the craving is high.

INGREDIENTS:
4 boiled Eggs
½ Pineapple - peeled & sliced
1 Potato - peeled & cubed
Some Salted Fish (Ikan Talang is the best)
3 tbsp Curry Powder (I used curry powder for cooking beef instead of for fish)
3 Shallots - sliced
½ pot Coconut Milk
1 each Cinnamon stick*, Star Anise*, Cardamon* & few Cloves*

METHOD:
1. Place coconut milk & curry powder in a pot & boil.
Add in potato & cook until half cooked.
Add in pineapple, salted fish & cook for 5-10 minutes.
Adding salt may not be necessary but check to taste.

2. In a small pan, heat up 2 tbsp oil & fry sliced onion & spices* until onion is golden.
Pour the whole thing into the cooked curry.

3. Serve with rice.

Black Glutinous Rice Cake

I have been searching for black glutinous rice flour for ages and only last week I finally found it. I got so excited and cannot wait to try this recipe which I have been keeping for long time. The owner of the recipe is Loveliana from MR.

I was shocked when the cake mixture turned up grey in color. Luckily it turned to the expected color once cooked. The taste is marvellous! It is light like chiffon but the aroma of black glutinous is really seducing! (Makes 9" round tin)
INGREDIENTS:
5 Egg Whites*
150g Sugar*
½ tsp Salt*
5 Egg Yolks
100ml Coconut Cream
75ml Cooking Oil
150g Black Glutinous Rice Flour
½ tsp Baking Powder
½ tsp Bicarbonate Soda

METHOD:
1. Beat ingredients * until stiff.

2. In a separate bowl, mix the rest of ingredients until smooth.
Mix into egg white mixture.
Pour into ungreased tube pan (I used round pan lined with ungreased paper).

3. Bake at 180C for 50 minutes.

Mee Soup

The children enjoyed the Mixed Soup I made last night so much that I decided to make again this morning to serve with dried noodles that I received in the parcel the other day. Everybody complimented that the noodles taste chewy and very nice - unlike the typical ones sold in the supermarket. My third son even suggested that I request some more from my friend...hahaha (LOL) I laughed and told him that is an embarassing thing to do but will compliment my friend for the gift.

Here is how the noodles look like:
Blanche the noodles in hot water quickly and serve with hot soup & chili sauce of your choice. For the soup recipe, refer here.

Sambal Ikan Bilis Cili Padi

To accompany the Mixed Soup, I made this hot sambal - inspired from Hana's home. However, unlike Hana's sambal which was green, mine became red because of color of my Cili Padis. I also shortcut the method i.e. fry them all at one go instead of fry each ingredients separately & pound last (lazy......hehe). This is real good ...!

This time I just pasted her recipe here, if anyone needs translation, just shout.

Bahan-bahan
20 biji cili api (digoreng)
2 ulas bawang putih (digoreng)
1 biji bawang besar
segenggam ikan bilis (digoreng)
secubit garam
2 biji limau kasturi

Cara-cara
Tumbuk cili api, bawang putih dan bawang besar bersama sedikit garam
Masukkan ikan bilis, gaulkan dgn sudu, hancur2kan sedikit
Perahkan limau kasturi, sedia utk dihidangkan :)

Mixed Soup

I made this last night dinner - something healthy but also delicious. Whole family enjoyed it very much.

INGREDIENTS:
5 pieces Chicken parts
Imitate Crabsticks
Fish Balls & Squid Balls
Shrimps - peeled
Black Fungus
Dried Chinese Mushrooms
Carrots
1 Tomato - cut to 8 parts
4 cloves Garlic - chopped
1 tsp freshly grounded Black Pepper
Chicken cube
Salt

METHOD:
1. Heat up few tbsp oil & fry chopped garlic until fragrant.
Pour in 1/2 pot full water.
Add in chicken, carrot, pepper, chicken cube & salt.
Boil until chicken is fully cooked.
Add in the rest of ingredients & cook until all done.

2. Serve with white rice and chilli sauce of your choice.
Sprinkle fried onion when served.

Palm Sugar Jelly

I made it this morning for a friend's Thanks-Giving Gathering (Khenduri Doa Selamat). The invitation was 10 am, so I have to think of something that can be prepared in short time and make do with something available in hand.

INGREDIENTS:
1 packet (13g)Jelly powder
150g powder Palm Sugar
100g Sugar
1150ml Water
1 can (140ml) Coconut Cream*
(note: reduce Coconut Cream if you like two layered jelly)
2 Eggs* (*Beat together lightly with fork)
1 Screwpine leaf - knotted

METHOD:
1. Boil jelly powder & water until dissolved.
Add in sugar of both types & screwpine leaf.
Boil until sugar is fully dissolved.
Finally add in egg & Coconut Cream mixture & stir continuously to avoid curdling.
Boil only shortwhile & pour into mould.

2. Cool at room temperature & chill.
Slice, serve & enjoy.

Sticky Caramel Chicken Wings

There was no leftover from lunch so I have to cook again for dinner (sigh)... Tried this simple recipe from Hana's blog (original recipe is by mutiarazura MR).... simple but delicious. . I have modified the measurements below to suit the amount of chicken wings I had.

INGREDIENTS:
6 Chicken Wings - cut each to two parts
2 tbsp Oil
2 cloves Garlic*
1 inch Ginger* (* pounded)
1 tbsp Soya Sauce
1 tbsp Fish Sauce
1 tbsp Chilli Sauce
1/4 tsp Ground Black Pepper (not in the original recipe)
2 tbsp Honey

METHOD:
1. Heat up oil & fry pounded ingredients & chicken wings until fragrant.
Add in soya sauce, fish sauce, chilli sauce & black pepper.
Cover until chicken is cooked. Stir occasionally to avoid burning.
Lastly add in honey & stir until sauce is thick & chicken wings are well coated.

2. Serve with rice. Mmmmmmh...yummy!

Fried Sambal Tempoyak (Fermented Durian)

Whilst children had their chicken for lunch, I had my favourite choice too. I never came accross fried Tempoyak in my hometown in Perak although Tempoyak is very famous there. However, in Sarawak this is a very common way of serving Tempoyak with rice, which I have been accustomed to.

INGREDIENTS:
4 tbsp Tempoyak
1 Red Chilli - pounded
½ Big Onion*
5 Chilli Padi* (* sliced)
3 tbsp Ikan Bilis (Anchovies)
Cooking Oil

METHOD:
1. Heat up 2 tbsp oil & fry sliced ingredients and Ikan Bilis until crispy.
Add in pounded chilli & fry for a while.
Add in Tempoyak & fry for another 2 minutes.

2. Dish up & serve with rice and hot deep fried fish.

Chicken in Plain Sauce

Chicken is a must in everyday menu for my children. Weekend is always packed with so much works and activities. I had not got a rest since I got up in the morning whilst my husband was attending friend's Widaq prayer. So I had to cook something very simple for lunch. This was what I came up with but surprisingly my boys liked it!

INGREDIENTS:
Some chicken parts
½ tsp Turmeric Powder
½ Big Onion*
2 cloves Garlic*
1 Red Chilli*
1 inch Ginger* (*sliced thinly)
1 tbsp Oyster Sauce
½ tbsp Cornflour - mix with water to form thin paste
Salt
Cooking Oil

METHOD:
1. Rub chicken with turmeric powder & salt.
Deep fry until cook.

2. Heat up two tablespoon oil.
Fry all sliced ingredients until fragrant.
Add in chicken, oyster sauce, ½ cup of water, cornflour paste & salt.
Boil & dish up.

3. Serve hot with rice.

Egg Benedict

This is a simple breakfast. The original recipe is by Zurin from MR. I added sliced cheese underneath the egg.

INGREDIENTS:
Bread Slices
Butter for spread
Eggs
Black Pepper Powder
Sliced Cheese (optional)

METHOD:
1. Grease muffin or small tins.

2. Spread bread slices with butter and place each in a tin.
Place a slice of cheese on top of the bread slices.
Break an egg on top of each bread slice & sprinkle with pepper.
Bake for 15-20 minutes at 180C until egg is done.

Banana Fritters

Only today I have the opportunity to make something out of the bananas that my hubby chopped down the other day. The bananas have ripened slightly which are just nice for fritters i.e. not too soft neither too young.

INGREDIENTS:
Banana - split to half
2 tbsp Plain Flour
2 tbsp Rice Flour
½ Egg White
A pinch Turmeric Powder
¼ tsp Bicarbonate Soda
A pinch Salt
Water sufficiently

METHOD:
Add all ingredients (except banana) to form smooth runny batter.
Dip banana in the batter & deep fry until golden.
Serve hot.

Vegetable Dhal

This is pure vegetarian dhal which I cooked for my Indian colleague who were vegetarian on the day my Hari Raya open house last month. My colleague (CLC) was asking for this recipe during breakfast today. It is so happened I have all the ingredients available and hence cooked this for dinner tonight.

INGREDIENTS:
1/2 cup small Lentils
2/3 pot Coconut Milk
2 tbsp Curry Powder
1 inch Ginger - knocked
1 Potato - peeled & cubed

1 Long Brinjal*
1 Carrot*
3 Long Beans*
1 Big Onion*
1 Tomato* (* cut to small pieces)
Salt & MSG (optional)
5 Shallots - sliced
Cooking Oil

METHOD:
1. Boil lentils until 3/4 cooked.

2. Place coconut milk & curry powder in a pot & boil.
Add in potato, carrot & salt. Cook until soften.
Add in lentils & the rest of vegetables.
Off fire.

3. Heat up few tbsp oil & fry shallots until golden.
Pour into dhal.

4. Serve with rice or rotis.

Fried Tempe

Tempe is fermented soya bean cake, originated by Jawa people in Malaysia but has become popular food amongst all races in Malaysia nowadays. There are variety of dishes that you can cook with Tempe but today I felt to have it deep fried.

INGREDIENTS:
1 packet Tempe - cut to smaller size
1 tbsp Plain Flour
1 bsp Rice Flour
1 tsp Chilli paste
Salt

METHOD:
1. Mix all ingredients (except Tempe) with sufficiet water to form smooth runny batter.
Dip Tempe in the batter & deep fry until golden.

2. Serve with rice or as snacks.

Surprise Gift

Hari ni Along terkejut sangat bila balik rumah, tiba2 dapat parcel....!! Along terharu betul atas ingatan nya itu.... tapi dia pesan jangan masukkan dlm blog. Along rasa tak salah kan - Along cuma nak abadikan kenangan ini...hehe (jangan marah, Along tak sebut nama pun, nama kat kotak tu pun Along dah censored...). Along nak ucapkan ribuan terima-kasih dan Along hargai pemberian ini. Semoga persahabatan kita akan berkekalan dan harapan Along kita akan bertemu suatu hari nanti.... Mmmmmuah! Hug-hug-hug!

Bananas from my Garden

I have four banana trees fruiting - one tree was cut down a couple of months ago and this time my husband cut down two trees at the same time. This type is called "Pisang Abu" and best for banana fritters. He chopped the trees on last Sunday and until today the two bunches of bananas are still resting at my back door (one of them start riping already). We are too busy to send away to relatives & friends. Gheee.... so many for a small family... anyone out there interested...? hehehe.

Teringat lak kat adik2 Azie & Hana. Few days ago they all cakap tingin sangat nak mkn pisang goreng. Hana yg kat Jepun tu hentam jer apa2 pisang yg jumpa nak lepas ngidam. Shian nya... I wish I could share these bananas with both of you.... takpe lah share gambo pun jadi lah ek... the thought that count, kan?

Steamed Strawberry Marble Cake

This is a very soft, spongy & tasty cake. I would recommend this recipe, if you have leftover egg whites. I would double the recipe if I make this again next time for a thicker cake.

(Makes 6-7" round tin)
INGREDIENTS:
150ml Egg Whites
¼ tsp Cream of Tartar
100g Castor Sugar

½ tsp Vanilla Essence
125g Superfine Flour
½ tbsp Ovalette
50g Cooking Oil
1-2 tbsp Strawberry Emulco

METHOD:
1. Beat egg whites and cream of tartar until fluffy & thick.
Add in sugar gradually & beat until stiff.
Beat in flour & ovalette.
Finally, pour in oil & mix well.

2. Divide into two parts & add strawberry emulco to one.
Pour alternately into a lined & greased tin.
Steam for 40 minutes.

Black Rendang Chicken

Favourite dish in the house.....

INGREDIENTS:
½ Chicken - cut
10 Shallots*
1 inch Ginger*
3 Lemon grass* (*blend)
5 tbsp Chilli paste
½ cup Soya sauce
1 tbsp Kerisik (roasted coconut paste)

METHOD:
1. Heat up oil & fry blended ingredients & chilli paste until fragrant.
Add Chicken & soya sauce. Stir until chicken is cooked & gravy is thick.
Add in Kerisik & cook further until almost dry.

2. Serve with rice, Ketupat or Lemang.

Bening Semangka (Watermelon Skin)

Occasionally it is nice to have something simple like Bening (Bening means simple soup). My hubby gave me the idea today when he was cutting a watermelon this evening.

INGREDIENTS:
Watermelon skin - peeled & cut
1 Red Chilli*
1 Shallot*
1 clove Garlic* (*sliced)
1 Turmeric leaf - tear to small pieces
1 Maggee Ikan Bilis mini cube
Salt & pepper

METHOD:
1. Place all ingredients in a pot.
Add sufficient water.
Boil & ready!

Almond Cake

This is a healthy cake as it is made of egg white, nut & oil free. I've got the recipe recently when visited a colleague's Hari Raya open house. His wife Fathirah was so kind to share the recipe.

INGREDIENTS:
325 ground Almond* (or any nuts)
2 tbsp Flour*
½ cup Sugar* (* mixed together)
7 Egg whites (230g)
¼ cup Sugar
Nutella spread
Chocolate fudge

METHOD:
1. Beat egg white until foamy.
Add in ¼ cup sugar gradually & beat until stiff.
Mix in the remaining ingredients.

2. Pour into ungreased lined 8" round tin.
Bake 180C for 30-40 minutes.

3. Slice into two parts & sandwich with Nutella spread.
Cover top & side cake with chocolate fudge & deco as you like.

Kerabu Paku (Fern Salad)

Another kampung vegetable dish herewith. Made this for lunch today.

INGREDIENTS:
1 bundle Fresh Ferns - wash, cut & blanche
Some Bean Sprout - blanche briefly
2 Red Chillies*
2-5 Chilli Padi*
½ Big Onion - sliced*
½ tsp Belacan* (*pounded coarsely)
1 tbsp Dried Shrimps*
1 tbsp Kerisik (roasted coconut paste)
½ inch Ginger - sliced like matchstick shape
1 lime - squeeze juice
Salt & sugar


METHOD.
Mix all ingredients well.
Serve immediately.

Lamb Vindaloo

Vindaloo is my favourite dish when I was studying in UK many years ago. The dish was served in many Northern Indian restaurants in London. I managed to obtain the recipe from a friend and eversince this has been kept as one of my special dish.

INGREDIENTS:
1 tsp Cumin Seeds*
2-5 Dried Chillies*
½ tsp Black Pepper corns*
½ tsp Cardamon Seeds*
1 cm Cinnamon stick*
¾ tsp Mustard Seeds*
½ Fenugreek Seeds*
½ tbsp Corriander Seeds*
¼ tsp Turmeric powder
3 tbsp Vinegar*
1 tsp Salt*
1 tsp Brown Sugar*
100g Big Onion - sliced thinly & fry* (*grinded together)
½ inch Ginger**
½ head Garlic** (** pounded)
500g Lamb
2 Potatoes - cubed
Water

METHOD:
1. Heat up ¼ cup oil & fry pounded ginger & garlic until fragrant.
Add in grinded ingredients*. Stir fry until fragrant & oil emerged on surfaced.
Add water, lamb & potato & salt.
Cook until lamb & potatoes are tender.

2. Serve with rice or roti.

Pau with Assorted Filling

Today I tried pau recipe from Baking Mum. Indeed as she literated, this is a very simple pau recipe which requires only 30 minutes proofing. It turned out to be very light & fluffy...! I filled up the paus with ready made red beans, yam (leftover from the buns the other day) and spicy sardine. All the 21 buns I made were gobbled up by my family in one go. LOL....

(Makes 21 buns)
INGREDIENTS:
400g Hongkong Flour
200g Water
70g Sugar
A pinch Salt
10g Double Action Baking Powder
7g Instant Yeast
30 Shortening

METHOD:
1. Place all ingredients, except shortening, in a mixer with dough hook.
Mix well and add in shortening & knead until smooth.

2. Flatten one ball & wrap your preferred filling.
Place each pau on a piece of paper or banana leaf.
Steam with medium high fire for 15 minutes.

SPICY SARDINE FILLING (HomeKreation's recipe) 
Fry pounded garlic & ginger until fragrant. Add in 1/2 big onion (chopped) & 5 tbsp chilli paste. Fry until fragrant. Add in mashed canned sardine (155g tin, sauce discarded), salt & tamarind juice. Stir until dry. Cool before use.

400g Tepung Hongkong
200g Air
70g Gula
Secubit Garam
10g Double Action Baking Powder
7g Yis Segera
30 Shortening/Lemak Sayur

CARA2:
1. Dgn menggunakan pengadun doh, adun kesemua bhn, kecuali shortening.
Masukkan shortening & uli sehingga lembut.Perap 30 minit.
Bahagi kpd 20 ketul & rihatkan 5 minit.

2. Leperkan seketul & doh & isi dgn inti pilihan anda.
Letak pau atas sekeping kertas atau daun pisang.
Kukus dgn api kuat selama 15 minit.
