Gift from Ros aka Onigiri

Apam 100 Plus

Super soft Apam... but the top did not split up as it supposed to be... Recipe from Mamafami.

Recipe is retyped/simplified:

(Makes 20 cups)
INGREDIENTS:
3 Eggs
230g Caster Sugar
1tsp Vanilla Essence
200g Flour
1 tsp Ovalette
150ml 100 Plus
Color

METHOD:
1. Beat eggs, sugar, vanilla essence & ovelatte with high speed until fluffy.
Add in flour & beat until thick.
Add in 100 Plus & mix well.

2. Fill cups, drop color & stir with stick.
Steam 15 minutes.

Chocolate Pavlova



Ini Fiza yang buat hal sampai Along tergoda di buat nya. Resipi amik kat umah Inahar. Tapi kita takde stoberi, hentam je lah apa yg ada. Adeh, sedap betul, meleleh air liur waktu makan ni. Crunchy di luar, dalam macam marshmallow huuuu.... Thanks Ina for the fabulous recipe. Ni tengah angin semput, maleh nak mengupdate..... Kalau rajin nanti kita kopi kat umah ina.

UPDATE: Here is the recipe, retyped to simplify:

(Makes > 2 dozens)
INGREDIENTS:
6 Egg Whites
200g Caster Sugar
3 tbs Cocoa Powder
- sieved
1 tsp White Vinegar
50g Dark Chocolate
- finely chopped
Topping
- double cream / whipping cream / fresh cream

METHOD:
1. Preheat oven to 180C.

2. Beat egg whites until soft peaks.
Add sugar, a spoonful at a time until stiff.
Add in cocoa powder, vinegar & chopped chocolate - stir well each addition.
Spoon into paper cups.

3. Reduce oven temperature to 150C & bake for 45 minutes until crispy on the surface.
Turn off oven, keep door ajar slightly & cool in the oven.
Keep in an airtight container until serving time.

4. Just before serving, top with cream & fruits.

Spaghetti Chicken Bolognaise

These are all left, a spoon of Spaghetti Chicken Bolognaise and the rest are all in the stomach...LOL.

Be Careful in Bathroom...

My mum fell in her bathroom a couple of times and that caused her a serious pelvis injury. She has been limping and suffering from terrible pain that she needs to use a walking stick for support. She has been under ongoing painful medical treatment at the moment.

My colleague told me that he is scared to travel alone after one accident in a hotel bathtub. He fell unconscious & was fortunate to wake up again himself. He had no idea how long he was fainted. Eversince, he took his wife with him whenever on business travel.

My friend wrote to me recently (end March) to share his pain in loosing his father. The father was healthy but unexpectedly fell in bathroom and passed away before the paramedic arrived. It is very sad....

I always thought incidents in bathroom always happened to elderly and those who are less healthy. In my mind I am young & strong enough to manage myself from slip/trip. Especially so because my bathroom is a dry type and carpeted, the possibility of slipping is almost nil. Also, I rinsed bathtub well everytime I finished.

However, accidents always happened when we are in the least expected mind. Today, I fell in my bathtub and was almost fainted. I managed to force myself to crawl to the door & unlocked it despite my vision was blacked out.

It happened just after I finished my shower and about to get out from the tub. As usual I hold on the handrail & all the sudden the handrail fell off...! I fell with my rib on the edge of the tub. It happened too quickly that there was no chance for me to do anything to safe myself. I couldn't breathe from the terrible pain and felt blacked out and thought was going to faint. I fought myself to crawl to the door & my husband carried me to the bed. He helped massaging my back so that I could breathe. I was speechless as I was in pain while he continuously asking me where the pain is.

I'm sharing the story here because it can happen to any of you and can be more serious than mine....! The moral of the story....BE CAREFUL IN BATHROOM...!

Nasi Lalapan

Nasi Lalapan introduced by Indonesian caught popularity in the recent couple of years and you can find many restaurants in Miri adding this to their menu. Price is betwen RM10-15 depending on the type of fish but served with plain soup (you've got to pay extra for chicken soup like mine... no soup in Miri can match mine LOL....hehe)

It is not difficult to prepare and the above labels already describe well on the preparation needed. I enjoyed it when the fried stuff are hot from the pan! For the sambal recipe, refer here.

Mee Jawa

Mee Jawa is very popular in Sarawak and somehow today I'm in a mood to make my own.

Recipe is in BM, a bit lazy to translate...

BAHAN2:
Kulit Kayu Manis & Bunga Lawang

3 sudu Cili Mesin
½ biji Bawang Besar*
4 ulas Bawang Merah*
2 ulas Bawang Putih*
½ inci Halia*

½ inci Lengkuas* (*Mesin)
3 sudu Rempah Kari
1 genggam Udang Kering - mesin halus
3 biji Ubi Kentang – rebus & lecek
1 sb Tepung Jagung - bancuh dgn air
300g Daging Lembu – hiris kecil & rebus sehingga empuk
1 kiub Stok Daging Maggee
Jus Asam Jawa, Garam, MSG, Gula Merah
1 kilo Mee Kuning – celur sebentar

Bhn tabur - Taugeh, Tahu Goreng, Telur rebus, Cili, Limau, Daun Sup

CARA2:
1. T
umis Kulit Kayu, Bunga Lawang & cili mesin sehingga wangi.
Kacau sehingga pecah minyak.
Masukkan bahan yg di mesin & serbuk kari.
Masukkan udang kering & kacau sebati.
Masukkan kentang lecek, air rebusan daging, air & kiub Maggee.

Masukkan tpg jagung, air asam, garam, MSG & gula.
Masak sehingga agak pekat.

2. Hidangkan kuah dengan mee & bahan tabur.

INGREDIENTS:
Cinnamon stick & Star Anise
3 tbsp Chili Paste
½ Big Onion*
4 Shallots*
2 cloves Garlic*
½ inch Ginger*

½ inch Galangals* (*blended)
3 tbsp Curry Powder
1 handful Dried Prawns - blended finely
3 Potato – boiled & mashed
1 tbsp Cornflour - mix with some water
300g Beef – slice thinly & boiled until tender
1 Maggee Mee cube
Tamarind juice, Salt, MSG, Palm Sugar
1 kilo Fresh Yellow Noodles – blanched

Garnishing - Blanche Bean Sprouts, Fried Beancurd, boiled Eggs, Chilies, Limes, Chinese Celery

METHOD:
1. Heat up some oil & fry Cinnamon, Star Anise & chili paste until fragrant.
Add in blended ingredients & curry powder.
Add in dried prawns & stir well for a while.
Add in mashed potato, beef+stock, water & Maggee cube.

Add in cornflour paste, tamarind juice, salt, MSG & sugar.
Boil until thick.

2. Serve noodles with gravy and garnishes.

Beef Parcel


In Sarawak, this beef recipe is cooked in a bamboo but I turned it into a parcel, which is faster & simpler to cook and particularly suitable for small portion.

INGREDIENTS:
Beef
- sliced thinly
3 Shallots*
1 cloves Garlic*
1/2" Ginger*
1 Lemongras*
1 each Red/Green Chili*
Some Chili Padi*
(* pounded)
2 tsp Turmeric Powder
2 tsp Tamarind Paste
Salt & Sugar

METHOD:
Mix all & wrap in a foil.
Bake in an oven or in a pot until cooked.

Abuk-Abuk


I've been craving for Abuk-Abuk for a long time and I cannot recall how long the sago has been in my pantry. What a relief, today the raw sago has finally turned into this springy edible...

INGREDIENTS:
+/- 400g Sago
- wash under running tap & strained
1+ cup Fresh Grated Coconut
7 Pandan Leaves
- blend & squeeze juice
Palm Sugar
Salt

METHOD:
1. Mix sago with coconut & salt.
Divide into two parts.
Mix one part with Pandan juice. Add green color if yyou like.
Add few tbs water to the plain portion.

2. Press the green part into a pan lined with banana leaf.
Steam for 15 minutes.
Spread palm sugar onto the first layer until well covered.
Spread & press the plain portion.
Steam for 45 minutes or until sago is fully cooked.

3. Cool slightly before slicing.

BAHASA MALAYSIA VERSION

BAHAN2:
+/- 400g Sagu
- Basuh bawah air paip & tapis
1+ cwn Kelapa Parut
7 helai Daun Pandan Leaves
- blend dgn sedikit air & tapis jus
Gula Merah/Melaka
Secubit Garam

CARA2:
1. Gaulkan sagu, kelapa parut & garam.
Bahagikan kpd dua bahagian.
Campurkan satu bahagian dgn jus air pandan.

Campurkan beberapa sudu air ke dalam bahagian yg satu lagi.
2. Ratakan bahagian hijau ke dalam talam yg di lapik daun pisang.
Kukus selama 15 minit sehingga masak.
Ratakan gula merah/melaka sehingga menutupi semua permukaan.
Ratakan pula satu lagi bahagian sagu yg tidak berwarna tadi.
Kukus selama 45 minit sehingga sagu masak sepenuh nya.
3. Sejukkan sebelum di potong.

Lemon Ice

Refreshing...... that's all I can say.....

Recipe? Just add lemon juice/slices, sugar, water & ice together......

Quick Waffles


It has been a while since I last made waffles for the boys. My youngest boy, Radhi, is very good in making waffles himself but somehow we had not been into waffles mood until this morning.

(Makes 3 sets x 5 pieces)
INGREDIENTS:
2 Eggs
3/4 cup Fresh Milk
2 tbsp Veg Oil
1 cup Flour
1
½ tsp Baking Powder
1½ tsp Sugar
½ tsp Salt

METHOD:
1. Heat up waffle maker.

2. Beat eggs until frothy.
Add in milk & the rest while beating.
Mix well.

3. Pour into waffle maker & cook until golden.
Follow the instruction of the waffle maker for cooking time.

4. Serve hot with your favourite syrup (maple/honey/fruit sauce), icecream or jam.

Sausage Fried Rice

I made waffles for kids' breakfast and hubby requested for Fried Rice. Waffles are just too light for him & me, as we are so used to heavy breakfast.

INGREDIENTS:
4 bowls Cooked Rice
1 packet Maggee All-IN Seasoning ("Secukup Rasa")
2 Sausages - sliced
Some Ikan Bilis
4 Shallots*
2 cloves Garlic*
2 Red Chili*
Some Chili Padi*
(if preferred) (*pounded)
2 Eggs
Some cabbage - shredded
2 tbsp Oyster Sauce
Pepper

METHOD:
1. Mix rice with Maggee seasoning & pepper.

2. Heat up some oil & fry sausages. Dish up.
Fry Ikan Bilis until crispy & dish up.

3. Fry pounded ingredients until fragrant.
Add in cabbage & stir for a while.
Add in eggs & stir quickly & stir fry until egg is cooked.
Add in Rice, sausage & Ikan Bilis.
Stir fry until well mixed.

4. Serve with your preferred garnish (fried shallot, sliced chili, spring onion, etc).

Award from Inahar & Zana

Adik doc Inahar ni memang baik-hati and a very lovely friend...! Tak jemu-jemu dia menganto adiah2 untuk along & kawan2 lain. Cayang lah cama yu....Mmmmmmuah! Nanti kalau kita jumpa, Along nak hug2 Ina kuat2 tau.... Maceeeeeeh.... Nanti kalau ada hanto ler lagi ya...hehehe

Hari ni (16thApril), kita angkut adiah dari rumah Zana lak....hehehe. Caaaaaayang dgn adik Zana ni.....Mmmmmmmmuah! Maceh ya....

Sorry lah ya.... jamu mata je lah. Baru je buat ni tapi anak2 suruh buat lagi... minat sangat & they all komplen hari tu tak puas makan sebab ramai yang datang. Buat ni half portion je sebab apple tak banyak dalam fridge.

Smoked Fish Cooked in Sambal


It is now a season of Marine Catfish (Ikan Duri) in my hubby's village and my MIL made a lot of smoked fish. She sent several to us which we distributed amongst relatives in Miri. This smoked fish called "Ikan Jan Salai" is very popular amongst the Melanau from the area who eat it with Sago. As for me, I have less appetite to eat it as such snack but have created several types of dishes and also tart/quiche out of it. I enjoyed the aroma and the thick flesh which taste like smoked tuna to me.

The above dish is one way I enjoy cooking/eating this. Apart from that, you can also cook curry, Asam Pedas, Masak Lemak, Kerabu, etcs with this smoked fish. I can tell you that it taste a lot more delicious than fresh fish...!

Wanna recipe also? ok, here it is... very simple:

INGREDIENTS:
Smoked Fish
- chopped
1 Big Onion
- sliced
2 cloves Garlic
- sliced
1 tbsp Chili Paste
2 tbsp Chili Sauce
Salt & Sugar

METHOD:
Heat up some oil & fry sliced ingredients until soft.
Add in chili paste & fry until fragrant.
Add in the rest & stir well.
Ready.....!

Milo Shake


My youngest boy, Radhi, was nagging me in the evening for something to munch the moment I walked in after returning from work.

There are plenty of fresh cream leftover in the fridge after making cupcakes the other day and also few tiers of half-ripe banana. So here what I came up with : Milo Shakes and Banana Fritters. Emmmm.... Radhi happily munching the hot crispy banana fritters and sipping cooled Milo Shakes but not forgetting to spare some for his brother & dad who have yet to return home.
Recipe? Oh, just topple the fresh cream on top of the cold milo... okay?

Chocolate Cupcakes

These chocolate cakes are moist and soft and a 5 star compliment from me to MakLang (recipe found in Kak Hanieliza's blog). The cupcakes were decorated with ready made fresh cream. Made some for my neighbour who return for a short break and also for my husband's nieces/nephews who spent afternoon with us today. The kids had fun helping & playing with the icing decorations.

(Makes 40 small cups)
INGREDIENT A:
2 cup Flour
1¼ cup Cocoa Powder
2 tsp BP
2 tsp Bic Soda
3 tsp Nescafe
Salt
(I skipped)
INGREDIENT B:
2 cup Castor Sugar
1 cup Oil
1 cup Evaporated Milk
(I used fresh milk)
3 Eggs
INGREDIENT C:
3/4 cup Hot Water

METHOD:
1. Mix all ingredient A.

2. In a separate bowl, mix all
ingredient B.
Mix B into A.
Add in C.
Place into cups 3/4 full.
Bake 20 min at 175C.

3. Cool before decorating.

Fruit Cocktail Pudding


This is cold refreshing desserts I made today for entertaining some relatives for evening tea. Recipe taken from ResipiNet (Baya). Really easy & fast to prepare and taste really good.

Also made Bubur Kacang (no photo taken) and Custard Apple Pie (my two boys' request):
Here is the recipe:

SAUCE:
1 can Evaporated Milk
1 can Mixed Fruit Cocktail
1/2 cup Water
4 tbsp Sugar
1 tsp Essence Vanilla
1 tsp Custard Flour
(optional)

PUDDING:
1 cup Custard Flour
5 cup Water
6 tbsp Sugar (modified)
(I've added some cocoa powder)

METHOD:
1. Mix all sauce ingredients & stir on slow fire until sugar dissolved.
No need to boil.
Chill.

2. Mix all pudding ingredients & stir on low fire until thick & transparent.
Put in small moulds & leave to set.
Unmould and place in the sauce. Chill.

3. Serve cold.

Chicken Murtabak


Made Chicken Murtabak this morning for breakfast from some leftover curry puff filling, served with onion pickles, chicken curry & fried long beans. I also made Roti Canai & Roti Boom from the skins. Refer to my earlier recipe for Roti Canai here.

For filling, I added egg, sliced chillies & onions to the leftover curry puff filling.

Sarawak Serikaya Cake


A lady from Singapore wrote to me asking for this recipe. I made this cake today especially for her and hope this is what she has been looking for. Apparently this cake is now quite popular in Singapore but the recipe is not easily shared.

In Sarawak, this cake is typically served during Hari Raya in southern Sarawak. So far, have not seen it in Miri. I've got the recipe from my sis-in-law. It looks like chocolate cake but no trace of chocolate at all. The taste is creamy, very moist texture and nice aroma.

The original recipe produces a huge cake. I halved the portion as below to make a standard size cake:

(Makes 8" round/square)
INGREDIENTS:
8 oz Butter
160g Caster Sugar
5 Eggs
1 tsp Ovalet
150g Serikaya

200g Condensed Milk
1 tin (170g) Nestle Cream
1 tsp Essence Vanilla
1 bottle (80-100g) Browning
150g Chocolate Horlicks (I used plain)
175g Plain Flour

METHOD:
1. Beat butter & sugar until fluffy.
Add in egg one by one while beating.

Add in the rest of the ingredients in the order while beating.

2. Pour into greased & lined tin.
Steam for 4 hours.

3. Sprinkle toasted sesame seeds if preferred (I skipped) while cake is hot.

This is a photo of browning in case you have not used it before. It is very thick in texture & will not pour. I used satay stick to get it out from the container.
