Apple Strudels

 
 I made this in the recent weekend but due to limited time for blogging I can only update one or few postings at one night. This is super good and my two boys finished them all in one go but managed to reserve few slices for myself & hubby.... hehe.

(Makes 2 big Strudels)
INGREDIENTS:
2 sheets Puff pastry
4 Red Apples - peeled & sliced
30g Butter
1 tbsp Honey
1/8 cup Brown Sugar
1/2 cup Raisins
1/4 cup Ground Almonds / Hazelnuts
1 Egg - lightly beaten
2 tbsp Brown Sugar + 1 tsp Cinnamon

METHOD:
1. Heat butter & cook apples for about 2 minutes.
Add in honey, sugar & rasins & cook until sugar dissolves.
Cool.

2. Fold pastry into half & cut 2cm interval like picture below.
Open up the folded sheet & sprinkle almond & apple filling.
Seal edges with egg.

3. Place seam-side down on a baking tray.
Brush top with egg & sprinkle with sugar & cinnamon mixture.

4. Bake 220C for 20-25 min until golden & crispy.

Dragon Fruit Panna Cotta

Creamy dessert that can be matched by any choice of fruit. I chose Dragon Fruit which makes beautiful color combination.

Inspired by Ika & Hana. Original recipe by Gert. Thanks to all.
Recipe is copied from Ika.
(Makes 6 cups)
INGREDIENTS:
7g Gelatin + 3 tbsp Hot Water
2 1/2 cup Full-cream Milk
1/4 cup Sugar
1 tsp EV
1 Dragon Fruit

METHOD:
1. Mix the gelatin and water together and set it aside to bloom.

2. Put the milk and sugar in a saucepan, cook over low medium heat until bubbles form around the edges of the saucepan.


3. Remove from heat and add in the vanilla and stir in the gelatin. 

Stir until the gelatin dissolved.

4. Pour the mixture into six ramekins or cups. 

Refrigerate until set & top it with some fruit puree.

Blueberry Slice-Cheese Cake

This is a very special cheesecake recipe because it uses cheddar slice cheese instead of cream cheese. I first made this long time ago when Ros introduced it in MR, which was plain flavor. I just wanted to clear some frozen blueberry paste I bought from Brunei & thought to experiment the recipe with a variation. The result was very good with moist and foamy texture.

(Makes 9" round)
INGREDIENTS:
4 slices Cheddar Cheese
200ml Milk
70g Butter
70g Flour
70g Caster Sugar
3 Eggs (AA) or 4 medium
300g Blueberry Paste

METHOD:
1. Melt cheese in milk over low heat.
Add in butter until melt.
Cool.
Mix in blueberry paste.

2. Whisk egg whites & sugar until stiff.
Add in beaten egg yolk, cheese, flour & meringue, in the order & until well mixed.

3. Bake in water bath at 170C for 20 min then 140C for next 40 min.
Cool at room temperature & chill.

Nestum Fish Fillet

Yesterday morning I bought a huge fish weighted almost 6kg. I asked the fish monger to slice it halfway for boneless fillet. At first I thought I wanted to make Fish & Chips but later I ended up with this dish and yes, a good choice - my two boys enjoyed it so much.

INGREDIENTS:
Boneless Fish Fillet - cut to smaller size 
1 Egg
Salt & Pepper
4 tbsp Flour
1 tsp Curry Powder
3 tbsp Butter
2 sprigs Curry Leaves
Chili Padi - cut
5 cloves Garlic - chopped 
1-2 tbsp Oyster Sauce
Nestum

METHOD:
1. Lightly beat egg white & add in salt & pepper.
Mix in fish fillet fillet.

2. Mix flour & curry powder.
Roll fish fillet into flour mixture & shallow fry until golden.

3. Heat up butter & fry garlic, chili & curry leaves until fragrant.
Add in oyster sauce & stir well.
Add in fried fish & stir until well coated.
Add in nestum & mix well.
Dish out...!

Liana's First Car

Liana's dad bought her new clothes (during his business travels) for her every monthly birthdays but on her 11th month birthday dad bought her a car....! He told me he is going out to have hair cut but returned with this little pink car for our lovely Liana. It took quite a while for her two brothers to assemble the car and finally here she goes...

Bandung Soya Milk with Basil Seeds

The weather is really hot nowadays and worst in weekends when I don't stay all day in the over-chilled office. Helped myself with this quick-to-prepare Bandung drink to quench my thirst in the hot afternoon...

INGREDIENTS:
1 packet sweetened Soya Milk
Rose Syrup
Soaked Basil Seeds
Lot of Ice cubes

Mix them all & ready..... srrrrrup!

Bingka Pisang II (Banana Bingka)


I was tempting to try another version of Bingka Pisang that I saw at MR. It is quite a different flavour than the first version I tried earlier as this one uses palm sugar, hence dark colour.

(Makes 7" square)
INGREDIENTS:
2 cups mashed Banana
1/2 cup Palm Sugar
2 Eggs
100ml thick Coconut Milk
A bit Salt
VE
1 tbs Butter
1-1 1/2 cup Flour
(HomeKreation: I used 1 1/4cups)
2 Bananas
- cut into chunkies 
 
METHOD:
1. Mix all until well mixed.
(HomeKreation: I did not mashed the banana but used food processor to mix all & add flour & chunky banana last).

2. Grease tin & heat in oven for 10 min.
Place a piece of greased banana leaf & pour in batter.
Bake 180C for 30 min until top is brown.

3. Cool completely before slicing.

Brinjal in HoiSin Sauce

A simple dish.....

INGREDIENTS:
2-3 Long Brinjals - halved & cut 
2 Red Chilies*
2 Shallots*
2 cloves Garlic* (* pounded) 
2 tbsp Dried Shrimps - soaked & chopped 
1 tbsp Hoisin Sauce
1 tbsp Oyster Sauce

METHOD:
1. Heat up few tbsp oil & sautee the brinjals until golden.
Put aside.

2. Heat up few tbsp oil & fry pounded ingredients & shrimps fragrant.
Add in sauce & brinjals.
Dish out.

Banana Chocolate Muffins

Made this yesterday night while cooking for dinner in desperation to clear the overripe bananas. I was looking for this kind of recipe with no success after flipping many recipe books of mine in the last two days. Then, yesterday I had a message from MakLang to check out for her blossom cupcakes and I saw this recipe in there which exactly what I was looking for. The preparation is easy and most of all delicious to the last bite.... When I gave to my colleague a piece today, she said "...after one bite I just want to keep on biting more...". My two teenage boys did not have enough and they want more too....!

(Makes 12 small cups & 24 tiny cups)
Bahan-bahan
170g Tepung Gandum*
30g Serbuk Koko*
130g Gula*
1 sk Baking Powder*
secubit Garam*
100g coklat* - patah2kan jadi kecil-kecil
2 biji Telur**
75ml Minyak Masak**
100ml Susu Segar**
sedikit Vanila Esen**
2 biji Pisang**

Cara-cara
1. Panaskan oven sehingga 170C.

2. Masukkan semua bahan-bahan yang bertanda * ke dalam food processor.
Kisar sehingga sekata (If coklat tak hancur sangat pun takpe.. jadi ketul2 kecil dah ok).
Masukkan bahan yg bertanda ** ke dalam FP. Kisar sehingga sebati.

3. Cedukkan ke dalam cup muffin.
Bakar selama 25 minit atau sehingga masak.

INGREDIENTS:
170g Flour*
30g Cocoa Powder*
130g Sugar*
1 tsp BP*
A pinch Salt*
100g Chocolate*
2 Eggs**
75ml Veg Oil**
100ml Fresh Milk**
VE**
2 Bananas**

METHOD:
1. Preheat oven 170C.

2. Place ingredients marked * in food processor until well mixed.
Let the chocolate be chunky.
Add in the remaining ingredients marked ** & mix until combined.

3. Spoon into muffin cups.
Bake for 25min (I baked mine 15 or 20 min depending on size).

Misfortune Pizza

I wanted to make something like the CNY theme pizza but the special edge that I created had the cheese oozed out & burnt.... hence the name was reversed as Misfortune Pizza....LOL. Nevertheless, my two sons enjoyed it very much.

Here is the recipe for the soft & tasty dough.

(Makes one 30cm diameter)
INGREDIENTS:
500g Plain Flour
260g Water
2 tbsp Sugar
11g Instant Yeast
1/2 tsp Salt
2 tbsp Olive Oil

METHOD:
1. Mix all the ingredients in a mixer with dough hook until smooth.
Knead lightly with hand & rest until it doubled up.

2. Punch the dough & roll 2/3rd of the portion to fill pizza pan.
Roll the remaining 1/3rd into a long strip & fill with cheese.
Cut the long roll into small pieces & arrange around the pizza.
Brush surface of dough with olive oil & bake for 10 min 
(I baked mine 20 min & that's why it browned too much after final baking with topping).

3. Spread tomato sauce on top of the pizza dough.
Sprinkle with your favourite topping (I used chicken, sausage, onion, tomato, herbs) & finally mozarella cheese.

4. Bake for 20-25 min at 180C. 
(I accidentally set my oven at 200C & that's why the cheese at the edge was burnt).

Noodle Soup

This is our breakfast today.... also an occassion of officiating my new bowl set....

Quite a simple recipe... too tired and lazy to type the recipe.... in case anyone needs it, just shout & I'll update it later if required.

BAHAN2:
1 kg Mee Kuning - basuh untuk hilangkan minyak & tos 
1 sb Lada Hitam*
5 biji Bwg Merah*
2 biji Bwg Putih*
2" Halia*
1 sb Rempah Sup* (* blender halus) 
1/2 ekor Ayam - potong2 
Sayur Sawi, Taugeh
Taburan - bwg goreng, daun bwg/sup
Garam

CARA2:
1. Panaskan sedikit minyak & tumis bhn blend sehingga wangi.
Masukkan ayam, garam & kacau sebentar.
Masukkan air secukupnya & tutup sehingga ayam empuk.

2. Tutup api, masukkan sayuran & mee & terus di hidang.
Taburkan bwg goreng & daun byg/sup.
Makan bersama cili pes atau cilipadi potong + kicap + limau.... wal....lah!

Banana Chips (Again)

My hubby chopped another banana tree few days ago and here it goes another round of banana chips making. It took me about two hours of frying to finish off the whole bunch of the bananas and I've got a full container of it.... guess what... they were all gone in a day!

Rolled Beef Lasagna


My two sons enjoyed my previous Spinach Lasagna so much that they requested me making Lasagna again. Although I enjoyed it as much as the kids did, the idea of repeating the same menu is always not so appealing to me especially it was just a week gap. I didn't want to disappoint them and hence I decided to try a different filling this time. I was attracted to this recipe shared by KakFida but found that it is much more tedious than the earlier recipe as I need to cook the skin piece by piece and also need to cook the beef filling. A bit frustrating that mine turned up a flat lasagna instead of rolls....! I guess because I used a lot of sauce (we like our lasagna wet) hence the rolls were all gummed up. (Makes 13" x 9")
CREPES:
100g Mashed Potato
1 1/4 cup Plain Flour
300ml Fresh Milk
2 Eggs
1/2 tsp Salt
2 tbsp Melted Butter / Oil

1. Place all ingredients in a blender & process until smooth.
2. Spread one scoop on hot griddle like making crepes.
3. Repeat until all better is use up.

BEEF FILLING:
500g Minced Meat
1 small can Mushroom (HomeKreation: my addition) 
1 Big Onions*
4 cloves Garlic* (* chopped) 
1 tsp Black Pepper
2 tsp Oregano
2 tsp Parseley
Salt
4 tbsp Red Sauce (see below) 
2 tbsp Flour

1. Heat up some olive oil & sautee garlic & onions until fragrant.
2. Add in sliced mushroom, meat & herbs.
3. Add in red sauce & flour to thicken.

BECHAMEL/WHITE SAUCE:
50g Butter
1/2 cup Flour
500ml Milk
125g Cheddar Cheese
1/4 tsp Pepper
1/4 tsp Nutmeg powder

1. Melt butter & add in flour gradually until well mixed.
2. Gradually pour in milk & stir until smooth.
3. Season & add in cheese. Stir until melt.

OTHER INGREDIENTS:
1 portion of Red/Tomato Sauce (HomeKreation: see my own recipe here)
Mozarela & Parmesan Cheese

METHOD:
1. Butter baking dish & pour in a scoop of red sauce.
2. Take one piece of crepe & spread white sauce, red sauce & beef filling.
Roll and place in baking dish.
Repeat with the rest of the crepes.
3. Spread on top, remaining red sauce & white sauce.
Sprinkle with mozarella & parmesan cheese.
Bake for 30 minutes.

Chocolate Banana Toffee Pie

I have been keeping this recipe for many years which is from my book collections. One of the main ingredients is homemade toffee (Dulce de Leche) which I managed to try recently here. As I imagined, this pie is really delicious and mouth watering dessert. My children were non-stop complimenting me in each bite that I felt very thrilled and paid off for my effort. However, my hubby didn't take big portion because the toffee was very sweet (of course!). At the end, there was no leftover & all swept cleaned (I had 4 pieces myself...haha LOL!)

The lovely pie recipe is from the book by Elizabeth Wolf-Cohen but I did not follow the whole recipe. Anyway it provides me the whole idea to assemble the pie and particularly the chocolate filling recipe. The crust and topping recipes are my own version.

(Makes 10" pie)
CRUST:
200g Marie Biscuits
100g Melted Butted
- Mix well.
- Grease pie tin & press crumbs until fully covered.
- Bake for 10 minutes & cool.

CHOCOLATE FILLING:
5 oz Bittesweet Chocolate
2/3 cup Heavy/Whipping Cream
2 tsp Corn Syrup / Honey
3 tbsp Unsalted Butter
1 tsp Vanilla Essence

1. Place all choc, cream & syrup in a pot and heat until melted & smooth.
Off fire & add in butter & VE.
2. Pour into pie crust & fridge for 1 hour.

OTHER INGREDIENTS:
6 Bananas - sliced
1 can Toffee / Dulce de Leche
Whipping Cream
Cocoa Powder 

TO ASSEMBLE (Refer to diagram below):
1. Spread toffee on top of chocolate layer.
2. Arrange sliced bananas until fully covered.
3. Whip cream untl stiff & spread on top of banana layer.
4. Sprinkle cocoa powder.
5. Chill at least 1 hour before serving.

Dulce de Leche

I was so excited when I saw Wendy's step-by-step method on how to make Dulce de Leche (pronounced "Dool-say De Leshay") which in English means toffee or caramelised milk. I have a book on how to make this but I was not so confident to try as it sounds too cumbersome but Wendy showed a very simple way to make this although a very time consuming.

The recipe calls for condensed milk but in Malaysia you can only find sweetened creamer. Since I was so excited about it I gambled with two cans of sweetened creamer hoping something good to come out. I thought one can is a waste of three hours gas burning so might as well gave it a try for two cans straight away. It turned out okay with golden colour but not as creamy as the one uses condensed milk. Taste wise was also ok but I imagined it will be tastier with real milk.

HOW TO MAKE DULCE DE LECHE:
1. Place overturned a small wire rack at the bottom of a pot.
2. Peel off the paper wrapper around the can of condensed milk & place the can/cans on the rack.
3. Fill the pot with water until the cans are covered with water. Make sure the pot is tall enough so that water level is not more than 2/3rd of the pot depth.
4. Cover & boil. Lower the heat to the lowest possible & let it simmer for 3-4 hours.
The longer you cook it the darker the color will be. Refill water if necessary but I did not have to because the water remains above the can until the end.
5. Cool completely before opening the can. Opening it while still hot may cause burning on your skin.

Warning: Do not leave the cooking unattended. Cooking above big fire can cause the water to dry up and risk of the can exploding (that's what I learnt from reading other's experience)

See the type of pot I used which is a semi-pressure pot. The method above uses ordinary pot but I thought the pot below will be good to avoid too much steam escaping and I was right.

Chocolate Mooncake

This is my first attempt trying to make my own mooncake. However, I wasn't ready to try the traditional mooncake as I had no time to prepare for golden syrup which is the basic ingredient. From what I read, the longer the golden syrup is kept the better it tastes and it can be prepared up to a year in advance to mature. Alternatively, you can buy the ready made golden syrup but I feel that is killing my excitement a bit. I solved the problem of not having to make the golden syrup by making this simple Chocolate Mooncake instead. It tastes good to me & my second son loves it so much & requested me to make this again. I think my mooncake skin is a bit thicker than the typical mooncake but who cares, the skin tastes good & no harm having it a bit more than usual. The mooncake skin is a bit crispy on the day it is baked and therefore is recommended to keep the mooncakes two to three days in room temperature to soften the skin. In my case, that did not happen as everyone is so eager to try out right away and none left to be matured.

Oh dear, didn't realise I've been babbling so much... here is the recipe.

(Makes 9)
INGREDIENTS:
25g Butter
50g Icing Sugar
1 Egg - beaten
1 tbsp Fresh Milk
1/4 tsp Vanilla Essence
30g Chocolate - melted
120g Cake Flour* (Homekreation: I used plain flour)
15g Cocoa Powder*
1/8 tsp Bic Soda*
(* sifted together)
Ready-made Filling (Lotus/Mung bean paste)

METHOD:
1. Mix butter, icing sugar till well mixed. 
Add in beaten egg , mix thoroughly then add in fresh milk and mix again.
Add in vanilla essence and melted chocolate.
Add in flour mixture and mix till it becomes a dough. 
If the mixture is too soft, put into the fridge to let it harden a little.
 
2. Weigh dough about 30g & filling about 40g.
Wrap filling into the skin & press into a mooncake mould.

3. Bake at 180C for about 20 mins or till cooked.

Sambal Tempe

Here is all the time favourite dish --> Sambal Tempe mixed with peanuts & Ikan Bilis. Same recipe like my previous Peanut Sambal but added fried tempe. Refer here for recipe.

Hana kat Jepun tu pun ada kasi kat Along gak, tapi Along cuma amik cincin je sebab takut tengok intan berlian ni besor2 sangat. Anyway, maceh banyak2 kepada Su & Hana.... love you all... mmmmuah!
