Lemon Chicken

My children like Lemon Chicken & we used to take away from the club restaurant upon fetching them from karate class. This time I tried to make myself.... not sure the same...! No one gave any comment, so you can guess what it means...huhu...

Anyway, herewith sharing the recipe (after searching here & there, I ended up with whatever I felt like throwing in.

INGREDIENTS:
1 whole Chicken Breast - chopped to small pieces
1 tsp Black Pepper powder
1 tbsp Rice Flour
1 tbsp Plain Flour
Custard Flour - for coating
Salt

METHOD:
1. Mix all ingredients except custard flour.
Heat up oil for deep frying.
Roll battered chicken into custard flour & deep fry until golden.
Dish up.

SAUCE:
1/2 Lemon - squeeze juice & slice the rind*
(note: only used 1/4 lemon for rind. Remove the white part which has bitter taste.) 
1 cup Water*
1 tbsp Custard Flour*
Honey, Sugar & Salt* (* mixed) 
1 tbsp Butter

- Melt butter & add in * mixture.
- Boil until translucent.
- Pour on top of fried chicken.
- Serve hot.

Wow....! Surprise sesangat....! Tetiba dapat call dari sahabat yang jauh nun di Semenanjung suruh check nape parcel tak sampai2. Bila call PO, rupa2 nya parcel baru je sampai hari ni..... Terima-kasih tak terkata Along pada sahabat Along ni. Semuga Allah berkati nya sekeluarga, murah rezeki & sihat2 semua.

Sepasang gaun pink, hair band & klip rambut sempena hari jadi Liana 1 tahun.... (ingat je dia bulan lahir Liana, parcel ni dah di kirim 2 minggu lalu). Cantik sangat ler Auntie... Liana pun mmg tak byk dress sbb mama & abah asyik beli seluar terlupa lak nak beli dress, nasib auntie kasi satu ni haaa....
 Ini pulak hadiah untuk Along, fridge magnets (from luar negara....) & keychain:
Liana dapat baju & aksesori baru, terus je berposing....maceh ya auntie...love you...mmmmuah2, hug2...!
Sebenor nya, Along snap punya ler byk gambo, sampai 117...! Semua nya kelabu kecuali yg satu tu sebab Liana sekarang ni seminit pun tak duk diam, asyik jalan ke sana-kemari je. Dia terkejut bila Along buat suara meow2 baru dapat snap satu...aduh2... sekarang baru you all tau nape jarang2 kuar gambo Liana, berpeluh-peluh nak dapat satu gambo pun....hehe. Nak tengok versi kelabu, ni dia haaa

Fish Masak Hijau

This dish originally called Pari Masak Hijau by Ayu. Unfortunately I had just cooked my Stingray a day before Ayu published the recipe hence I got to use whatever fish I had in the freezer. It tastes real good & my whole family enjoyed it.

The recipe below copied/pasted from Ayu's blog in Malay. Thanks so much Ayu for sharing. Let me know if anyone wants English translation.

Ingredients:-
2-3 ekor anak ikan pari-dibersihkan, potong, gaul dengan kunyit & garam.
1 sudu besar bawang putih kisar
2 sudu besar sambal belacan
3-4 batang daun kari
3 batang cili hijau dihiris
1-2 sudu kecil serbuk lada hitam
garam & serbuk perasa secukupnya

Method:-
Campurkan bawang putih, serbuk lada hitam, sambal belacan dan ketepikan.
Panaskan minyak, goreng ikan pari hingga agak garing. Angkat, toskan dan ketepikan.
Kurangkan minyak kalau gunakan minyak gorengan ikan tadi.
Masukkan campuran, sambal belacan, bawang putih, serbuk lada hitam dan tumis hingga naik bau.
Masukkan lada hijau dan daun kari, kacau rata .
Masukkan sedikit perasa dan garam kalau necessary dan gaul rata.
Masukkan ikan pari yang telah digoreng tadi dan kacau gaul rata.
Biarkan sekejap hingga tumisan tadi sebati dan meresap dengan isi ikan.
Matikan api. Siap untuk dihidang.

Pandan Japanese Cheesecake

Besides Cheese Butter Cake, I also made Pandan Japanese Cheesecake and Pandan buns on Liana's birthday (not for Liana.... hehe)... Two types of cheesecake & you might wonder why... I had a kg of cream cheese in my fridge & trying to clear it before it get expired. I was so busy with the birthday cake decoration and preparing for this cake & the buns at the same time, I ended up making three mistakes.... yes, three mistakes and not one! One, I forgot to add in the cornflour. Two I spoilt one egg white but decided to make do without it. Three, I forgot to buy superfine flour so got to make do with plain flour. .... the result was very surprisingly beautifully spongy & moist cake just like the one I made earlier on...!

Kek Keju Surabaya ( Surabaya Cheese Butter Cake )

I chose Cheese Butter Cake for Liana's birthday since she cannot make her choice yet and furthermore I wanted something that can go well with buttercream.

I found this cake from SajiOnline but it has several negative and sceptical comments from readers. Despite not so good opinions about the cake/recipe, I like the idea of using condensed milk in place of sugar and I thought I could improve the recipe instead. Indeed there are few problems with the recipe that I could tell from the surface... the portion is far too big for a standard tin size, too much condensed milk resulted in a very sweet cake and too little flour. Also the method is incorrect as it adds flour first then eggs into the butter mixture. Another problem in it is the cooking method using steambath baking is not suitable for heavy type of cake like this. With so many errors like this, I can see why it is a disaster for people who tried it. Despite the complaint I see the writer made no attempt to respond and that concludes itself that the problem is true.

So here is my version, rewriting the whole recipe (the only idea I copied from the recipe is using condensed milk in place of sugar). The result is unbelievable rich & moist cake. My sons had 3 big pieces each, my hubby had 2, me & Patma had 1 each & the whole cake was almost gone in one serve. I manage to reserve two slices for my good friends in the office. You must try this great recipe....

(Makes 9" round)
INGREDIENTS:
250g Cream Cheese
250g Butter
250g Condensed Milk (I used sweetened creamer)
4 Eggs
225g Flour*
1 tsp Baking Powder* (* mixed) 
1 tsp Vanilla Essence

METHOD:
1. Beat cream cheese until creamy & smooth.
Add in butter & condensed milk & continue beating until white & fluffy.
Add in egg one by one until well mixed.
Add in VE.
Add in flour gradually until well mixed.

2. Bake at 170C for 45minutes.
Cool on wire rack before decorating.

Birthday Gifts for Liana from Darwish

Tunang Liana (ehem ehem...), mama mertua (hikhik...) sekeluarga kat Jepun adiahkan kek bertingkat2, bunga & teddy bear.... eh ada lagi tau...1000 kuntum munga hantor pakai kapal lum sampai lagi....hehehe... Bertuah nya Liana ada tunang hensem & lomantik and mama mertua yg baik-hati & sporting.... Love you all and thank-you so much....!

Ni ler tunang Liana kalau anda nak tau...hehe... sherious nya... lama sangat dok kat taman tu tunggu Liana tak sampai2...

Liana's 1st Birthday

Today Liana is 1 year old.....! Happy Birthday Sayang mama..... Alhamdulillah, syukur.... mama doakan Liana cepat besar, sihat & be a good girl.

Below is her birthday cake that I made myself. Although it is ugly, I felt very happy and proud that I made one for her (made with full love). Hopefully when she grows up, she can look back for all her birthday cakes collections and feels proud of her mum too....
Below is Liana's posing for all aunties out there.... mmmmuah2 & hug2 untuk aunties.... The clothes were bought by mama specially for her birthday. I think she looks better in pants than in skirt.

Green Chili Chicken

Initially I wanted to cook rendang but it is time consuming so I ended up with this dish instead. I used thin coconut milk & let it boiled until the liquid is halved and the natural oil from the chicken added nice flavour to the thin gravy.

INGREDIENTS:
1/2 Chicken - cut to smaller pieces
5 Green Chilies*
10 Shallots*
1" Ginger*
2 Lemongrass* (* blended)
1 bowl Coconut Milk
1 tsp Turmeric Powder
Salt

METHOD:
1. Place all ingredients in a wok & cook until almost dried up.
Stir frequently.

2. Serve with white rice.

Laksa Taiping (Again)


I brought back two packets of Sago Laksa noodles from my recent trip to Taiping. Have been craving for this for quite some time, so made this for our breakfast this morning.... fuyoooo... can't describe how delicious it is as homemade Laksa gravy is so much richer with fish paste and adjusted to my preferred taste...! Sago laksa noodles is much better than rice flour laksa as it produces springy and tastier noodles. This time my Laksa went with simpler garnishes.

Coconut Scones

Simple kuih for our breakfast today. My hubby was rushing to send his car for service but I stopped him until the breakfast was ready. It took me only 5 minutes to mix & 5 minutes to cook few pieces for him.

Source (with compliments): AG's Food (original name of the kuih is Winko Babat & translated into English herewith)
Makes about 10 pieces
INGREDIENTS:
150g Glutinous Flour
300g Grated Coconut
150g Sugar (I'll reduce this if I make it again next time)
1tsp Vanilla Essence
1 Egg
1/2 tsp Salt
100ml Coconut Cream

METHOD:
1. Mix all ingredients.

2. Pour a big scoop onto non-stick griddle/pan (can also oil it a bit too).
(I used egg rigs to ensure even size & nice round shape)
 
The one below is one sample that I cooked without egg ring:
Flip frequently until cooked.

3. ....ready!

Dulce de Leche Cheesecakes

This is awesome and to my surprise my hubby likes it so much despite he is not a sweet tooth and also not a cheesecake fan. However my two sons prefer the Chocolate Banana Toffee Pie that I made using Dulce de Leche earlier on and keep on reminding me to make that again. They also said the "failed" version of Dulce de Leche that I made from sweetened creamer is nicer than the one using condensed milk.... well, that's an opinion from those who cannot distinguished between the original & failed version but they like what they like...LOL.

(Makes 8" round)
CRUST:
1 cup Cream Crackers crumbs (or any unsweetened biscuits)
50g Butter - melted
  • Mix and press into base of spring form tin or pie tin. 
  • Chill until required.
 FILLING:
1/2 cup Dulce de Leche (see here & here) 
250g Cream Cheese
1/4 cup Sugar
1 Egg
1 tsp Vanilla Essence
  • Spread Dulce de Leche on crumb base.
  • Beat cream cheese & sugar until smooth.
  • Add in egg & vanilla essence & beat until combined.
  • Pour over crust and bake 160C for 40 min & leave in oven for 30 min.
  • Cool completely in room & chill overnight.
 GLAZE:
3 oz Chocolate
60g Unsalted Butter
2 tsp Glucose Syrup
  • Heat all until smooth.
  • Pour onto chilled cheesecake & chill 30 min.

Moist Roast Chicken

I usually bake chicken on a rack so that the fat will drip off from the chicken to produce crispy result but this time I place them all in a casserole with some sauce added producing moisten and tasty chicken. My hubby & children love the gravy from the bottom of the casserole.

Recipe adopted from Tulip with compliments (renamed & translated into English herewith).
INGREDIENTS:
1/2 Chicken - cut into 6-8 pieces
4 cloves Garlic*
1" Ginger*
1 tbsp Coriander Seeds*
1 tbsp Fennel Seeds* (* blended)
1 tbsp Sweet Soy Sauce
1 tbsp Honey
2 tbs Oyster Sauce
2 tbsp Chili Sauce
1 tbsp Tomato Sauce
4 tbsp Water
Butter

METHOD:
1. Mix all of them.
Marinate for 30 min.
2. Place in a baking dish.
Place some butter on top.
3. Bake 190C for 60 min.
4. Top with brown sauce & serve with Chicken Rice or plain rice.
