Pandan White Butter Cake

I came home late again tonight so cooked something simple for dinner after reached home... poor kids they were so hungry when dinner was served. Nothing fancy to share as I only cooked Chicken Soy Sauce and  vegetables.

This cake I'm sharing herewith is something I made few weeks ago but I was too busy that I forgot to post. I made it to clear some egg whites and created a fabulous cake out of it! I was very happy with the outcome -  the cake has moist texture in the inside and crispy in the outer.... Pandan flavour for egg white cake is really a good combination as it eliminates the egg smell and instead produces nice aroma!

Mee Rebus II

Hello everybody. Sorry for not appearing as frequent as I like.... sorting out many personal and family matters and also need some rest for myself. Here sharing the breakfast that I prepared this morning. Very nice and not too hot - you can add sliced chili to spice up more if you like.

My mother and family love chuck beef despite it is commonly unpopular (sold cheap as it is considered tough due to the great amount of connective tissues). Actually if you know how to cook it, it is the best part of all with more flavour. The muscles between the meat claimed to be tough but if you cook it long enough it will turn soft and lovely texture. I used slow cooker this time - dumped it at night and ready first thing in the morning.
This is my second version of Mee Rebus.

By: Roz@HomeKreation
Serve 5-6 persons
INGREDIENTS:
500g Chuck Beef - cut into small chunks
8 Shallots*
2 cloves Garlic*
1/2" Ginger* (* blended with a bit of water)
5 tbsp Chili Paste
1 tbsp Soup Spice Powder
3 tbsp Tomato Sauce

2 cups blended Boiled Sweet Potato
2 tbsp Cornflour - mix with few tbsp water
1 kg Fresh Yellow Noodles
1 bunch Mustard Leaves - blanched
Bean Sprout - blanched
1 Bean Curd - deep fried & sliced
Garnish - Spring Onion, Chinese Celery, Chilies, Boiled Eggs, Lime, Fried Shallots
Salt, Sugar

METHOD:
1.  Boil beef with 1½ liter water until tender - usually will take > 1hour but I cooked overnight in slow cooker.

2. Heat up few tbsp oil & stir-fry chili paste until fragrant.
Add in pounded ingredients & stir few more minutes.
Add in soup spice powder, tomato sauce & stir few more minutes.
Add in beef, the stock, blended sweet potato, cornflour paste, salt & sugar.
Cook until all well mixed and balanced taste.

3. Wash noodles to get rid of excess oil & blanch in hot water.
Serve with the vegetables, gravy & garnishes.

Beef Balls in Black Pepper Sauce (Bebola Daging Masak Sos Lada Hitam)

My kids love Black Pepper Beef but this time I minced the meat and turned it into balls. The beef balls were then deep fried until crispy and they love it s much - soft in the inside and crispy in the outside.

I always made my own minced meat instead of buying ready minced - that way you can be sure of good quality. More importantly I don't have to wash the minced meat and therefore the meat balls will not break while frying but remain solid. Wash the meat & drain well before mincing.

1 tsp Black Pepper*

1 Egg white
1 Big Onion**
3 cloves Garlic**

METHOD:

2. Heat up few tbsp of oil & stir fry sliced ingredients** until soften.

Multigrain Rice Porridge (Bubur Organik)

Hi there..... am still very busy and taking little bit of time to relax in the week-end after a whole week of hard work in the office - worked throughout lunch time and till late night.... and will be traveling and another busy coming week, so you will not be hearing much from me for another week or so.

Sharing a recipe herewith which is a good solution for busy working women to prepare healthy meal for the family. My Dutch colleague, Ramon gave me a packet of Organic Multigrain Rice which he highly recommended after I told him I dislike brown rice. He assured me this one is very tasty and I should cook it like white rice and serve with meat & veg dishes. However, I wanted to try something else - something similar to Bubur Asyura that my friend, CT gave me last time here, which she mixed her own grain and cooked using a slow cooker. I can still recall how delicious it was.
I just bought the slow cooker yesterday. Just dump all the ingredients in it at night & when you wake up first thing in the morning your breakfast is ready! That way I spent less time in the kitchen and have more time to relax and play with my little princess. More importantly, cooking in slow cooker will preserve the nutrients because foods do not evaporate - no loss of moisture and therefore healthy meal......!
I was kind of embarrassed when I learn from the label that it is product of Malaysia but introduced to me by a foreigner. The porridge was very delicious and will try to create something more from this product later when I'm less busy.

Salt
1 Screwpine Leaf
1 cup / 250ml Coconut Milk (optional)

Set at "Low" and leave it to cook overnight.
The porridge is ready first thing in the morning.

Pucuk Salang Masak Lemak Putih

This is the first time I found Pucuk Salang in Sarawak after been living here more than 20 years. Whenever I visited my Emak in Perak, I surely requested for this veg (except the last visit which was too short and hectic). I was so surprise to find it in the Tamu & quickly grabbed it as soon as I saw it. There are several dishes that I like to cook this veg but settled with this one.
Just an ordinary recipe perhaps but I would like to add it to my blog in the vegetable dish index as it is not something common in Sarawak and for reminder to myself & children not to forget our local veg.

Steamed Yellow Rice (Nasi Kuning Kukus)

Hi everyone.... sorry been missing for almost a week. Life has been very hectic at office and home. Even week-end gave no chance to do anything fancy in the kitchen but attended a couple of invites from friends and worst was to return to office to complete urgent & important stuffs. I foresee this trend to continue for another at least two weeks including travel plan.

Normally, making steamed rice is very time consuming but not anymore with this recipe. Despite very busy, I managed to make this for dinner tonight. The difference between steamed rice and those cooked in rice cooker: steamed rice has non-sticky grains. This rice has very nice fragrant too & I love it.

ok lah, hari ni Along nak kongsi satu resepi istimewa. Selalu nya bukan mudah nak buat nasi kukus, beras nak kena rendam semalaman baru kukus. Tapi resepi ni amat lah mudah, dalam kesibukan pun sempat Along buat ni tadi. Rasa nya amat sedap, lemak dan wangi. Nasi kukus ni yg best nya peroi tak melekit2 macam masak dlm rice cooker. Meh intai resepi nya.
