Kiwi Fruit Juice

Freshing up with Kiwi Fruit Juice..... home-made and freshly squeezed....

INGREDIENTS:
3 Kiwi Fruits
Water
Sugar Syrup
Ice cubes

METHOD:
1. Peel kiwi fruits, cut and place in blender with some water.
Blend until fine.
2. Mix kiwi puree with sufficient water and sugar syrup to taste.
Add in some ice cubes & serve!

3 biji Buah Kiwi
Air
Air Gula

CARA2:
1. Kopek kulit buah kiwi, potong2 & masukkan ke dlm blender.
Proses sehingga halus.
2. Tuangkan ke dlm jug & campurkan air, air gula & ais secukupnya.
Sedia utk di minum!

Sayur Lemak Umbut Kelapa Sawit

Palm shoot is very commonly sold in daily market in Miri, Sarawak especially served during local wedding occasions or other gatherings. I rarely cooked it myself but I like the simple and crunchy taste and usually the menu that I picked up when patronizing the local restaurants.

INGREDIENTS:
1 pack Palm Shoot (sold at RM2) 
1 Red Chili*
3 Shallots*
1 handful Ikan Bilis / Anchovies (* pounded) 
1 bowl of Coconut Milk
Salt

METHOD:
1. Boil sliced palm shoot until tender & drain.
2. Place in a pot with rest of ingredients and boil.
3. Serve with white rice.

1. Rebus hirisan umbut sawit sehingga empuk (ia nya tetap rangup) & tapis.
2. Masukkan ke dlm periuk bersama2 dgn bhn2 yg lain & masak sehingga mendidih.
3. Hidangkan dgn nasi putih.

Fragrant Fried Seabass (Siakap Goreng Bawang Harum)

 Simple fried fish but with such a simple touch will lure greater appetite.... Fragrant fried onion, chilies to spice it up and added curry and kaffir lime leaves aroma!

INGREDIENTS:
1 Whole Seabass
1 tsp Turmeric Powder
1 Big Onion
Vietnam Chili Padi
Curry Leaves
Kaffir Lime Leaves
1 tbsp Fish Sauce / Nampla
Salt

METHOD:
1. Rub fish with salt & turmeric powder.
Deep fry until crispy on the outside.
Lift & place in a plate.
2. Using another clean wok, heat few tbsp oil & stir-fry sliced onion, chilies, curry leaves & kaffir lime leaves until fragrant.
Sprinkle fish sauce & stir quickly.
Pour onto fried fish.
3. Serve immediately with white rice.

Ikan Siakap Goreng dgn bawang dan perisa2 nya yang harum amat menyelerakan walaupun hanya lauk goreng simple. Anak2 & hubby akan ratah2 sehingga habis bila Along masak camni.

1 bj Bwg Besar
Cili Padi Vietnam
Daun Kari
Daun Limau Purut
1 sb Sos Ikan / Nampla
Garam

CARA2:
1. Lumur ikan dgn garam & serbuk kunyit.
Goreng dgn minyak dalam sehingga garing.
Angkat & letakkan ke dlm pinggan hidangan.
2. Di dlm kuali lain, panaskan beberapa sudu minyak & goreng hirisan bawang, cili, daun kari & daun limau purut sehingga wangi.
Renjiskan sos ikan & kacau segera.
Taburkan ke atas ikan goreng tadi.
3. Hidangkan panas dgn nasi putih.

Buah Melaka III

 A must do menu for Ramadhan..... made it specially on request from an office mate LEL. This delicacy is an unforgettable bite.... such soft springy texture bursting melting palm sugar in mouth is really enjoyable that ones can gulp tens of them in one serve!

Yields about 50 pieces
INGREDIENTS:
250g Glutinous Flour
2-3 tbsp Coconut Milk Powder
1 tbsp Pandan Paste
Water
Malacca Palm Sugar
- chopped into small cubes

Freshly Grated Coconut + a pinch of salt - steam 1 minute in microwave

METHOD:
1. Mix glutinous flour, coconut milk powder, pandan paste, a pinch of salt and enough water to form soft firm dough.

Divide dough into small balls of a marble size.
 
2. Fill each ball with a piece of palm sugar & wrap it firmly.

3. Boil water, half full in a pot.
Drop Buah Melaka into the boiling water & let it float to the surface.
Lift out & roll onto desicated coconut.
4. Cool them slightly before serve.

Do not consume while they are hot because the melted sugar filling can burn your tongue.

Kuih yg wajib di bulan Ramadhan.... memang syok makan kuih ni selepas berbuka untuk menghilangkan pahit mulut.... kuih yg kenyal2 manja dan inti gula melaka yg cair memang mengasyikkan... berpuluh biji pun boleh ngap sorang2 kalau buat comel2 camni....hehehe.

Bilangan 50 biji
BAHAN2:
250g Tepung Pulut
2-3 sb Santan Serbuk

1 sb Pandan Paste
Air
Gula Melaka
- potong kecil2

Kelapa Parut + secubit garam - kukus 1 minute dlm microwave

CARA2:
1. Campurkan tepung pulut, santan serbuk, pandan paste, garam dan air secukup nya sehingga mendapat doh yg lembut.

Bahagikan doh kepada guli2 kecil spt gambarajah di bawah.
 
2. Isikan geguli tepung dgn gula melaka & bulatkan supaya kemas.

3. Panaskan 1/2 periuk air sehingga mendidih.
Masukkan Buah Melaka & rebus sehingga ia timbul ke permukaan.
Angakt & golekkan ke atas kelapa parut.
4. Biar sejuk sedikit sebelum di hidangkan kerana isi gula melaka yg panas boleh melebur lidah anda.

Bean Curd Sweet Sambal (Tahu Masak Sambal Sos)

 This is my emak's favourite dish... I thought it is such a simple one but seems not the case. When my emak fell sick few months ago, she craved for this dish but no one managed to cook it right until I came home and cooked it for her. It is also important to get the sweet and spicy taste balanced.

INGREDIENTS:
2 pcs Bean Curds - cut into smaller cubes 
1 tsp Turmeric Powder
1 Big Onion*
2 Red Chilies*
2 cloves Garlic*
1 slice Ginger* (* blend) 
3 tbsp Chili paste
3 tbsp Chili Sauce
1 tbsp Sugar
Salt

METHOD:
1. Rub bean curds with salt & turmeric powder.
Deep fry until slightly firm.
2. Heat up 1/4 cup oil & stir-fry blended ingredients* and chili paste until fragrant.
Add in chili sauce, sugar, salt & mix well.
Add in fried bean curds and stir until well coated.
3. Serve with white rice.

Masukkan sos cili gula, garam & kacau sebati.
Masukkan tahu goreng & gaul sebati.
3. Hidangkan dgn nasi putih.

Talam Sagu Gula Melaka

 This delicate categorised locally as "Kuih Talam" [Talam is literally translated as tray and kuih is Malay steamed cake i.e. the combined words means steamed Malay cake and typically made in two/more layers of different ingredients combined to produce succulent bites]. This particular one has fragrant Malacca palm sugar flavour with silky texture on top layer and matched with bottom layer of springy plain sago coconut layer.... I love every bite of it...!

The portion is halved from the original recipe
Yields 8" square
BOTTOM LAYER:
150g Sago - rinse & soak 30 minutes then drained 
30g SooHoon - soak in warm water 30 minutes then drained  & cut into short strips 
50g Freshly Grated Coconut
50ml Coconut Milk
150ml Water
1/2 tsp Salt
TOP LAYER:
100g Malacca Palm Sugar*
50g Malay Brown Sugar*
25g Sugar*
250ml Water*
1 Screwpine Leaf*
75g Flour
1/2 tbsp Cornflour
1 Egg
125ml Coconut Milk
1/4 tsp Salt

METHOD:
1. Combine all bottom ingredients and place in a lined tin.
Steam 30 minutes.
Press surface lightly to ensure even layer.
2.  Combine ingredients marked* and stir on fire until sugar is dissolved.
Cool slightly.
3. Combine all bottom layer ingredients and heat up slightly.
4. Pour onto the first layer and steam 30 minutes.
5. Cool kuih completely at room temperature before slicing

150g Sagu halus - bilas, rendam 30 minit & tapis
30g SooHoon - rendam dlm air suam 30 minit, tapis & potong pendek
50g Kelapa Parut
50ml Santan pekat
150ml Air
1/2 st Garam
LAPISAN ATAS:
100g Gula Melaka*
50g Gula Merah*
25g Gula*
250ml Air*
1 helai Daun Pandan*
75g Tpg Gandum
1/2 sb Tpg Jagung
1 bj Telur
125ml Santan
1/4 st Garam

CARA2:
1. Satukan kesemua bahan2 lapisan bawah & ratakan ke dlm tin yg di lapik.
Kukus 30 minit.
Tekan permukaan supaya rata.
2. Satukan bahan2 yg di tanda* & masak sehingga gula larut.
Sejukkan sebentar.
3. Campurkan kesemua bhn2 lapisan bawah & masak sehingga naik wap.
4. Tuangkan ke atas lapisan bawah tadi & kukus selama 30 minit.
5. Sejukkan kuih sebelum di potong.

Kek Batik Cheese (Batik Cake with Cheese Topping)




 Why not give special cheesy touch to Batik Cake.... such a lovely combination and well received by office colleague during breakfast treat just a day before Ramadhan last week.

Size: 8" square
INGREDIENTS:
50g Cocoa powder
100g Milo
100g Sugar
200ml Water
100g Butter
2 Eggs
400g Marie Biscuits - break them into smaller pieces

METHOD:
1. Place cocoa powder, milo, sugar & water in a wok.
Stir above medium fire until dissolved & smooth.
2. Add in butter until dissolved.
3. Reduce heat to low & add in egg & stir until thicken about 30 seconds and off the fire.
4. Add in biscuits & mix well until biscuits are evenly coated with chocolate batter.
5. Press into a lined tin. 

CHEESE TOPPING:
250g Cream Cheese
1 Egg
2 tbsp Caster Sugar (I used 1/4 cup)
- Beat all ingredients until smooth & pour onto the prepared Batik Cake.
- Bake 160C (top heat only) for 5 minutes.
- Chill before slicing.

400g Biskut Marie - patah2kan 

CARA2:
1. Campurkan koko, milo, gula & air ke dlm kuali.
Masak dgn api yg sederhana, kacau sehingga larut.
2. Masukkan mentega sehingga larut.
3. Kecilkan api, masukkan telur & kacau sehingga pekat dalam 30 saat & padamkan api.
4. Masukkan biskut dan gaul sehingga rata dan biskut di saluti sepenuhnya.
5. Padatkan ke dlm loyang yg di alas dgn kertas aluminium. 

LAPISAN CHEESE:
250g Cream Cheese
1 bj Telur GredA
2 sb Gula Halus (Along guna 1/4 cwn) 
- Putar kesemua bahan sehingga kembang & tuangkan ke atas kek batik tadi.
- Bakar 160C (api atas shj) selama 5 minit.
- Sejukkan di dlm petisejuk sebelum di potong/hidangkan.

Carrot Cake with Walnuts

 CF bought me a packet of walnuts during her holiday in New Zealand and asked me to make carrot cake. This carrot cake is my keeper for 9 years and in my opinion is the best of all carrot cake that I have tasted! If you like carrot cake with walnuts then this is the version to go for! The sweetness is moderate and the cake is moist!

I made the cake to treat my office mates a day before Ramadhan and received good feedback.

Yield 8" square
INGREDIENTS:
220g Caster Sugar
220ml Oil
4 Eggs
1 tsp Vanilla Essence
335g Flour*
1 tsp Bic Soda*
1 tsp Salt*
1 tsp Baking Powder*
40g Cornflakes Powder* (* combined) 
300g Grated Carrots
50g Raisins
300g Walnuts

METHOD:
1. Beat sugar & oil until well mixed.
Add eggs, one at a time.
Stir in VE.
Fold in mixed dry ingredients*.
Add in carrots, raisins & walnuts until well mixed.
2. Bake 160C for 50-60 minutes until cooked when tested with skewer.

220ml Minyak

1 st Esen Vanilla
335g Tepung Gandum*
1 st Bic Soda*
1 st Garam*
1 st Baking Powder*
40g Cornflakes yg di kisar halus* (* di satukan) 
300g Grated Carrots
50g Kismis
300g Walnuts

CARA2:
1. Pukul gula & minyak sehingga sebati.
Masukkan telur satu persatu sambil di pukul rata.
Masukkan VE.
Masukkan campuran tepung* sehingga rata.
Masukkan carrots, kismis, walnuts & gaul rata.

2. Bakar 160C selama 50-60 minit sehingga masak (test dgn lidi).

Banana Split

 Banana Split for dessert served on first day Iftar! The banana was Ramadhan gift from Chai.... thanks friend for your nice thought. What a 1Malaysia spirit.... a Ramadhan gift from a non-muslim friend!

Lay a split banana in a dessert plate. Scoop ice-cream on top. Drizzle chocolate sauce and sprinkle some colorful sweet rice.

Assalamualaikum and Salam Ramadhan buat semua saudara muslims. Alhamdulillah, harini sudah dua hari kita berpuasa. Bagi Along sekeluarga, sambutan Ramadhan hanya lah menu ala kadar.... maklumlah mama yg sibuk seharian di pejabat & pulang kerja barulah bergegas ke dapur.

Hari pertama kelmarin, Along cuma masak Nasi Putih, Kari Daging, Sayur Keladi, Ikan Masin Bulu Ayam (pemberian sahabat sis Marina yg very thoughtful & baik-hati), Cucur ikan Bilis dan Banana Split. Banana Split ni special sebab Pisang Berangan pemberian dari CKS, sahabat seperjabatan. Jauh dia beli pisang berangan ni dari Tukau. Kat Miri susah nak dapat pisang ni & kalau ada pun harga nya mahal belasan ringgit sesikat.

Menu hari kedua lagi sempoi dari hari pertama.... cuma buat Nasi Ayam Goreng dan Bubur Nasi Arab (orang Taiping panggil Kanji Arab). Nak amik gambo pun tak larat bulan pose ni.... kalau nak resipi boleh klik kat link tu. Kalau sesiapa nak dlm BM, kasitau nanti senang2 Along alih-bahasakan ya. 

Ini cara Along buat Banana Split.... kot2 lah ada yg nak tau....

Belah dua sebiji pisang berangan dan susun di atas piring.
Letak aiskrim di atas nya & picitkan sos coklat ke ats aiskrim.
Hiaskan dgn sweet rice berwarna-warni.

Coconut Pie (Pai Kelapa Muda)

 I made these mini size pies out of coconuts plucked from our own yard. The coconut flesh is not too matured and just nice to turn into dessert. The aroma and taste was good but not as I expected and not like what I saw in the website. The crust did not magically self-formed as claimed. I guess I made mistake somewhere because I saw few other people successfully achieved it.

 Anyway, I still share the recipe herewith because it tastes good.... may be you will have better luck than me.

Size: 9"/10" round pan (I made seven 5" tart pan)
INGREDIENTS:
1 cup flaked or shredded coconut
3/4 cup sugar
1/2 cup Bisquick mix
1/4 cup butter or margarine - softened 
2 cups milk
1 1/2 teaspoons vanilla
4 egg

METHOD: 
1. Heat oven to 350°F. Grease 9-inch pie plate with shortening or cooking spray.
2. In medium bowl, stir all ingredients until blended. Pour into pie plate.
3. Bake 50 to 55 minutes or until golden brown and knife inserted in the center comes out clean. Cover and refrigerate any remaining pie.


Homemade Bisquick:
Blend 2 cups flour, 1 tsp. baking powder, 1 tsp. sugar, 1/2 tsp. salt.
Cut in 1/2 cup butter in a food processor until blended.
Store it in a Ziploc bag in the freezer until you need some.
If you don’t have a food processor, you can do it by hand with a pastry cutter or whisk.

Along buat ni sebab ada kelapa yg hubby petik dari sebelah rumah. Isi kelapa tu sedap di buat kuih sebab belum tua betul. Jadi Along pun cuba lah resepi yg nampak mudah ni.... rasa nya sedap cuma Along punya takda crust kat bawah nya.... tak taulah kat mana silap. Walau bagaimana pun, Along kongsikan resepi nya di sini sebab rasa nya sedap.

CARA2: 
1. Panaskan oven 350°F. Grease pai tin 9-inchi.
2. Campurkan kesemua bahan sehingga sebati & tuangkan ke dlm tin pai.
3. Bakar 50-55 minit sehingga masak & permukaan garing.

Homemade Bisquick:
Blend 2 cwn tepung, 1 st baking powder, 1 st gula, 1/2 st garam.
Process 1/2 cwn butter ke dlm adunan sehingga peroi spt serbuk roti.
Simpan dlm freezer sehingga di kehendaki.
