Kerabu Paku & Taugeh II (Fern & Bean Sprout Salad II)

 Utilising my home-made dried shrimps to flavour the salad.... delicious appetizer!

INGREDIENTS:
1 bundle Fresh Ferns - wash, cut & blanche
Some Bean Sprout - blanche briefly
1 Tomato - sliced
2 Red Chillies*
2-5 Chilli Padi*
½ Big Onion - sliced*
1cm Belacan*
3 tbsp Dried Shrimps* (*pounded coarsely)
1 tbsp Kerisik (roasted coconut paste)
1-2 Kasturi Lime - squeeze juice
1 Galingal Flower - sliced thinly 
Salt & sugar

METHOD.
1. Mix all ingredients well. Seasoned to taste.
2. Serve immediately with rice and other dishes.

 Meh buat kerabu yang sedap ni.... Kali ni Along letak Udang Geragau kering yang Along buat sendiri hari tu.... sedap bubuh banyak2 pun sebab Along buat tak masin.

CARA2:
1. Gaul kesemua bahan & imbangkan rasa garam, gula & masam.
2. Hidangkan segera dengan nasi dan lain2 lauk sampingan.

Steamed Double Layer Banana Cake (Kek Pisang Kukus Dua Lapis)

 Fabulous taste and texture.... Perfect combination of the two layers of different flavours.... Moist and rich of banana flavour at the bottom, matched with delicate and plain top sponge layer.... Moderate sweetness just perfect to my liking....!

Recipe is simplified & retyped
Size: 8" round
BOTTOM LAYER:
200g Mashed Banana
1 tsp Baking Soda
1 pinch Salt

3 Eggs
100g Brown Sugar

100g Flour*
1 tsp Baking Powder*
(* sift)

65g Vegetable Cooking Oil
TOP LAYER:
2 Eggs
60g Sugar
25g Milk
65g Superfine Flour


METHOD: 
1. Mix mashed banana, baking soda & salt until combine.
2. In a separate bowl, beat eggs and sugar until thick with ribbon trail.
Add in flour mixture* and stir well.
Add in bananas mixture, oil and stir until combine.
3. Pour batter into lined/greased tin.
Steam for 15-20 minutes until cooked.
4. Prepare the top sponge layer while the bottom layer is being steamed.
Whisk eggs and sugar until thick and doubled in volume.
Add in milk, flour and mix well after each addition.
5. Pour over the cooked bottom layer and steam for another 20 minutes
until cooked.

Rezeki pisang tak putus2 dari halaman rumah.... dah dua tandan hubby tebang baru2 ni dan ada lagi 3 tandan kat pokok yang belum ranum. Alhamdulillah, murah rezeki dan dapat juga di panjang2kan kepada kawan2... Insyaalallah kasi kat teman2 yang lain pula bila Along tebang lagi k... Along biarkan buah ranum di pokok dan tidak di tebang terlalu awal supaya buah nya manis.

Kali ni Along tertarik nak mencuba kek pisang kukus ni pula... gembira sangat dengan hasil nya... Lapisan bawah nya kaya dengan rasa pisang dan lembab2.... amat sesuai di gandingkan dgn lapisan kek sponge. Liana yang cerewet dan tak suka makan kek pun makan banyak ketul.... alhamdulillah. Terima-kasih pada tuan empunya resipi dan yang sudi memanjangkan kepada kawan2.

CARA2: 
1. Gaul sebati pisang lecek, baking soda & garam.
2. Dalam mangkuk yg berasingan, pukul telur & gula sehingga pekat & bertali.
Masukkan campuran tepung* & gaul sebati.
Masukkan adunan pisang, minyak & gaul sebati setiap campuran.
3. Tuang adunan ke dalam tin yg dilapik & di gris.
Kukus 15-20 minit sehingga masak.
4. Sediakan lapisan atas sementara lapisan bawah di kukus.
Pukul telur & gula sehingga pekat bertali.
Masukkan susu, tepung & gaul sebati setiap campuran.
5. Tuang adunan ke atas lapisan bawah yang telah masak & kukus lagi selama 20 minit atau sehingga masak.

BAHAN2:
500g Daging Lembu - hiris kecil 
2 bj Bwg Besar  - 1 bj di hiris & 1 biji di blend* 
1" Halia*
2 ulas Bwg Putih* (* blend) 
5 sb Cili Mesin
5 sb Sos Tomato
2 sb Rempah Kabsa
1 st Gula
Garam

CARA2:
1. Tumis bwg besar yg di hiris sehingga garing.
Masukkan bhn2 yg di blend* & cili mesin, kacau sehingga wangi.
Masukkan rempah kabsa & sos tomato & kacau sebati.
Masukkan gula, garam & daging - masak sehingga daging empuk.
Masukkan sedikit air jika terlalu kering.
2. Hidangkan dengan nasi putih atau Nasi Arab.

Ayam Panggang Kabsa

 This roasted chicken is truely rich and tasty..... I love the aroma of the Arabic spices... mild and not too overpowering.... A perfect match to the Arabic Rice that I made several days ago!

INGREDIENTS:
2 Chicken Thigh - sliced 
4 tbsp Yoghurt
1 tbsp Kabsa Spice
Olive Oil
Salt

METHOD:
1. Marinate chicken with all ingredients for an hour.
2. Bake until done.
3. Serve with Arabic rice

Nasi Arab & Lauk Arab

 I wanted to have Nasi Arab when I was in KL recently but the flight arrived quite late night.... so I made it in the recent week end to satisfy my own crave.... of course I would say it was delicious because I made it to my taste.... LOL!

BAHAN2 NASI ARAB:
3 cwn Beras Bhasmati (1cwn=170ml) - basuh & tapis 
4½ cwn Air
2 sb Minyak Zaitun
4 sb Yoghurt
1 Kiub Ayam
1 sb Rempah Kabsa
1" Halia - di ketuk 
1 helai Daun Pandan
2 helai Daun Salam
2-3 tangkai Daun Pudina
1 tsp Saffron - rendam dlm air panas 

CARA2:
1. Letakkan beras dan kesemua bahan2, kecuali saffron, kedalam rice cooker.
2. Biarkan masak & renjiskan saffron; tutup periuk sehingga waktu menghidang.
3. Hidangkan dengan Salad Arab, Ayam Panggang Rempah Kabsa, Sos Cili, Daging Masak Merah Kabsa...
Resipi ayam & daging akan di siarkan dalam entri seterus nya.... tunggu ya.

Gaulkan timun, tomato yg di potong kiub dengan yoghurt, daun pudina.

Banana Cake III (Kek Pisang III)

 Came across this recipe and clearing bunch of bananas that hubby just chopped from the tree in our yard.... The cake is light, spongy and moderate sweetness.

INGREDIENTS:
~150g Banana - mashed
200g Flour*1 tsp Bikarbonat Soda*
1
tsp Baking Powder* (* sift together) 
3 Eggs
160g Caster Sugar
120ml Oil
1 tbsp Ovalet (optional)
1 tsp Vanilla Essence

METHOD:
1. Whisk egg, sugar & ovalet until fluffy.
Add in banana, VE & mix well.
Add in flour gradually while mixing.
Add in oil & mix well.
2. Bake at 170˚C for 40-45 minutes until cooked.

Hubby baru jer tebang pokok pisang kat laman dan elok dah masak ranum.... Kebetulan nampak Ijah tayang kek pisang yang gebusy.... Along pun tanpa lengah2 terus jer buat ni tapi dah seminggu lepas masuk perut cuma kesibukan tak sempat nak update kat blog ni.

Meh tengok resipi kek yang ringan gebu ni.....

Along taip semula resipi untuk mudah rujuk sendiri
BAHAN2:
~150g Pisang (3 biji) - lecek
 200g Tepung Gandum*1 sk Soda Bikarbonat*
1
sk Baking Powder*
(* ayak) 

3 biji Telur 
160g Gula Kastor
120ml Minyak
1 sb Ovalet (optional)
1 sk Esen Vanilla

CARA2:
1.  Putar gula, telur, ovalet sehingga kembang.
Masukkan pisang, esen vanila dan putar sekejap sehingga sebati.
Masukkan tepung sedikit demi sedikit, putar sekata.

Masukkan minyak, gaul sekata.
2. Tuang ke dalam acuan & bakar 170˚C selama 40-45 minit atau sehingga masak.

Dried Shrimps (Udang Geragau Kering)

 The shrimps season is still on.... this is one of the longest shrimp season I've seen since the last 20 years in Miri. The price is getting cheaper and only RM10 for 5kg compared to RM8/kg a month ago. Hubby came home with a surprise bag of shrimps after his jogging trip in the last weekend and am glad that he helped me to set up the dryer area. We gotten two full trays of dried shrimps which will be exported to MIL in kampung.

Beehive Bread (Roti Sarang Lebah) Again

 Few days after the first trial, I made it again and doubled the portion on request of a friend. The best bread recipe I've made so far....! Recipe was posted earlier in here.

Buat lagi roti yang sedap ni untuk memenuhi permintaan seorang sahabat untuk jamuan budak2 qasidah. Kali ni Along buat dua bancuhan sekali gus. Alhamdulillah, feedback yang budak2 tu enjoyed it!

Buttermilk Chicken

 Wanna prepare at home this famous dish? Try my version.... I like it spicy hot but you can adjust the amount of chilies to your liking.

INGREDIENTS:
1 Chicken Breast - cut to bite size 
1 Egg White
1/2 cup Kentucky Flour
2 tbsp Butter
1 clove Garlic - chopped 
2 sprigs Curry Leaves
3 Chili Padi
1/2 cup Evaporated Milk (adjust amount to get preferred consistency) 
Salt & Pepper

METHOD:
1. Marinate chicken pieces in salt, pepper & egg white for 5-10 minutes.
Roll in Kentucky flour & deep fry until cooked & crispy on the outside.
2. Melt butter & stir-fry garlic, curry leaves & cili padi until fragrant.
Gradually add in milk while stirring, seasoned with salt & pepper and stir until thickened.
3. Pour onto fried chicken and serve with white rice.

Yang served kat hotel sedap juga lah dan ada juga Along cuba kat beberapa restoran tapi cam tak sempurna je... isyk, baik buat sendiri.... meh tengok resipi Along ni & cuba lah, kot2 sesuai dgn selera anda juga.

BAHAN2:
1 ketul Dada Ayam - potong kiub kecil
1 bj Putih Telur
1/2 cwn Tepung Kentucky
2 sb Butter
1 ulas Bwg Putih - cincang
2 tangkai Daun Kari
3 bj Cili Padi
1/2 cwn Susu Cair Evaporated (kurangkan/tambah mengikut kepekatan yg di kehendakki) 
Garam & Serbuk Lada

CARA2:
1. Perap ayam dgn garam, serbuk lada & putih telur selama 5-10 minit.
Golekkan ke dlm tepung Kentucky & goreng sehingga masak & garing.
2. Cairkan butter & tumis bwg putih, daun kari & cili padi sehingga wangi.
Masukkan susu sedikit demi sedikit, tambah garam & lada, kacau sehingga pekat.
3. Tuangkan ke atas ayam goreng & hidangkan segera dgn nasi putih.

Beehive Bread (Roti Sarang Lebah)

 This is seriously delicious! I drooled when I first saw it and made it right away in the following day. See the above photo.... one quarter was straight away chomped by me before anyone else....LOL! The buns were so soft & the butterscotch topping is so delicious... I almost lost control of myself and had to skip dinner that night.

INGREDIENTS:
2 cup Flour* (I made 1 cup plain flour + 1 cup high-protein flour)
½ tsp Instant Yeast* (orig guna dry yeast)
¼ tsp Salt*
½
tsp Baking Powder*
1 tbsp Sugar*

¼ cup Plain Yoghurt (suhu bilik)
½ cup Warm Water
¼ cup Veg Oil
Almond Flakes / Pumpkin Seeds

METHOD:
1.  Place all ingredients marked * into a bread maker or a mixer.
Mix in yoghurt & water, mix until blended.
Pour in oil & knead until dough is soft & pliable.
Leave in BM until ready or if manual method, leave to rise until doubled up and punch down.
2. Divide dough into small balls (I made mine 32 pieces).
3. Arranged in a greased tin & sprinkle almond flakes / pumpkin seeds. 
Cover with plastic & let it rise & doubled up.
4. Bake 180C-200C, 10 minutes with bottom heat and next 5-10 minutes with bottom & top heat.
5. Pour butterscotch sauce on the hot bread & serve warm.


BUTTERSCOTCH SAUCE 
½ cup Brown Sugar
½ cup Ideal Evaporated Milk
A pinch of salt
1/2 tsp Vanilla Essence
25g Butter

- Melt butter in a saucepan.
- Add in sugar & stir until dissolved & bubbling.
- Pour in milk slowly while stirring.
- Add in EV & put aside to warm until needed.
- Spoon onto the hot bread.
 
See how soft the bun is!

Resepi telah di ubah-suai cara Along & di taip semula untuk mudah-rujuk 
BAHAN2: 
2 cwn Tepung Gandum* (Along tukar 1 cwn Tpg Gandum + 1 cwn Tpg Tinggi Protein)
½ st Instant Yeast* (orig guna dry yeast)
¼ st Garam*
½ st Baking Powder*
1 sb Gula*

¼ cwn Plain Yogurt (suhu bilik)
½ cwn Air Suam 
¼ cwn Minyak Sayur
Almond Flakes / Pumpkin Seeds

CARA2:
1.  Masukkan bahan2 bertanda* ke dalam bread maker atau mixer.
Masukkan yoghurt & airsuam, process sebentar.
Masukkan minyak & uli sehingga sebati & lembut.
Jika menggunakan BM, proses sehingga doh siap sedia.
Jika menggunkan mixer atau tangan, perap sehingga naik 2x ganda & uli semula.
2. Bahagikan doh kepada bebola2 kecil sebesar buah langsat (Along buat 32 ketul).
3. Susun ke dalam loyang yg telah di minyakkan.
Tabur almond flakes / pumpkin seeds.
Tutup dgn plastik & biarkan naik 2x ganda.
4. Bakar 180C-200C, 10 minit api bawah, 5-10 minit api atas & bawah.
5. Tuangkan sos butterscotch ke atas roti yg panas.
Tunggu suam sebelum di hidangkan.

SOS BUTTERSCOTCH 
½ cwn Gula Perang 
½ cwn Susu Ideal
Secubit Garam

½ st Esen Vanilla
25g Butter
- Cairkan butter dalam periuk kecil.
- Masukkan gula & kacau sehingga larut & berbuih.
- Tuangkan susu perlahan2 sambil mengacaunya.
- Masukkan EV dan angkat dari api dan suamkan sedikit.
- Sudukan ke atas roti yg panas.

Six Layers Oreo Trifle

 I received a call at almost 10am for a lunch invite to get together with a friend's MIL before she returned to Kuching. I quickly jumped out to check what available in the pantry for dessert.... found whipping cream and some fruits and straight away Trifle came to mind.... found few other ingredients and got to make do and became exceptional & unusual Trifle.... no sponge cake so used Oreo's biscuits and the pink whipped cream because I used Liana's strawberry milk....LOL! The outcome was surprisingly & exceptionally delicious! The combination of the different layers was awesome!

Layer #1: Oreo cookies
- Oreo cookies dipped in milk
Layer #2: Chocolate
- Chocolate ganache: 25g Cocoa Powder + 30g Butter + 1/2c Condensed Milk
- Stir above small heat until smooth.
Layer #3: Jelly
- Strawberry & Apple Jelly: 2g Jelly powder + 250ml Water + 200g Strawberry Jam + 2 tbsp Sugar + 1 chopped Apple
- Cook & pour onto layer #2.
Layer #4: Custard
- Custard: 25g Custard Powder + 400ml Milk + 3 tbsp Sugar + 1 tsp EV
- Cook until thickened.
Layer #5: Fruit
- Three Kiwi fruit - sliced
Layer #6: Whipped Cream
- Strawberry flavoured whipped cream, sprinkled with colorful bids & one Kiwi fruit

- Celup biskut Oreo dalam susu & susun dalam bekas kaca.
Layer #2: Coklat
- Chocolate ganache: 25g Serbuk Koko + 30g Butter + 1/2c Susu Pekat
- Kacau dgn api kecil sehingga sebati.
Layer #3: Jelly
- Jelly Strawberry & Epal: 2g Serbuk Jelly + 250ml Air + 200g Jem Strawberry + 2 sb Gula + 1 bj Epal dicincang
- Masak sehingga sebati.
Layer #4: Kastad
- 25g Tepung Kastad + 400ml Susu + 3 sb Gula + 1 st VE
- Masak sehingga pekat
Layer #5: Buah
- 3 biji Buah Kiwi - di hiris
Layer #6: Cream
- Whipped cream perisa strawberry, tabur manik warna-warni & hirisan sebiji buah Kiwi.
