In Perak, typically bamboo shoots are cooked in Lemak Chili Padi but in Sarawak most commonly stirred fried as above. It is suitable for stir fry because bamboo shoots are sold fresh in Miri and not pickled (which is sour & sometimes stink). The one I bought were sweet and crunchy....
Let's see how I cooked mine:
INGREDIENTS:
1 packet of fresh & readily sliced Bamboo Shoots (cost RM2)
1 Red Chili*
3 Shallots*
1 clove Garlic*
Some Ikan Bilis* (* tumbuk)
Salt
METHOD:
1.Wash & boil bamboo shoots until tender.
Drain.
2. Heat up some oil & stir fry pounded ingredients until fragrant.
Add in boiled bamboo shoots & salt.
Stir until well mixed.
Dish up.

ReplyDeletebagusnya kat sana ada bamboo shoot yang fresh. kat sini, saya penah nampak yg fresh, tapi susah dapat. yg banyak yg dijeruk tu la. saya alah skit ngan benda jeruk, tapi bila org masak lemak tu, sedap plak dimakan. hihihi.
Fresh bamboo shoots are delicious. Tak sangka boleh stir fry saja. Next time boleh cuba your recipe.

ReplyDeleteDekat miri ni pulak takda yg jeruk. Kekadang tingin pulak yg jeruk utk maak lemak sedap. Yg fresh pulak bukan selalu nya manis, kekadang dapat yg pahit. Nasib kali ni manis, boleh ler buat goreng camtu.

I think you can get fresh bamboo shoots in china town overthere especially this CNY season. I used to get a lot of asean's supply from a store not far from where I lived in London.
