Makes 8" square
INGREDIENTS:
1½ cup Plain Flour*
2 tsp Baking Powder* (* sifted)
1 cup Roasted Sugee
½ cup Caster Sugar
200g Butter
2 Eggs
2 tsp VE
Your preferred Jam (I used blueberry)
METHOD:
1. Preheat oven 170C.
2. Mix the first 4 ingredients.
Rub in butter, eggs & VE until well mixed.
3. Spread 1/2 portion into a greased tin.
Spread jam & top with the remaining batter.
4. Bake 20-25 min.

i must share with u a near 'disaster' when i made the sugee squares- i tried the recipe with my mum-in-laws home-made mulberry jam. Everything went well until i took it out of a 'push-up'square tin.The hot side of the tin touched my wrist as i pushed it out and i automatically dropped the squares!Good thing the main part remained on the push-out tray!My son loves it!But i think with my oven it would be better for me to bake at 180C. Thanks again!
