Pulut Serikaya (Serimuka Hitam)

 This kuih is also known as Serimuka Hitam or Serimuka Merah in Northern Peninsular where I came from. I love the aroma of palm sugar which blends well with plain glutinous rice layer at the bottom. This recipe produces perfect taste and texture just the way I wanted it. My whole family like it too.

Makes 8" sq/round

BOTTOM LAYER:
2 cup Glutinous Rice - washed, soaked few hours & drained 
2-2½ cup Thin Coconut Milk
1/2 tsp Salt
TOP LAYER:
2 cup Thick Coconut Milk
½ cup Sugar
½ cup Powder Palm Sugar
½ cup Flour
2 tbsp Corn Flour
3 Eggs
1 tsp Salt

METHOD:
1. Place bottom layer ingredients in a tin & steam until cooked (stir & check it out regularly).
Pressed into a tin which is lined with aluminium foil or banana leaf.
Put aside while preparing for the top layer. 

2. Mix all bottom layer ingredients until smooth.
Sieve into a pot & stir above small fire just until warmed up.
Pour onto the first layer.

3. Steam for 30 minutes.
Cool the kuih completely before slicing.

Saiz 8" persegi/bulat
BAHAN2:
Lapisan Bawah

2 cwn pulut
2 cwn santan cair + sikit garam
Lapisan Atas
2 cwn santan pekat
½ cwn gula pasir
½ cwn gula merah
½ cwn tepung gandum
2 s/b tepung jagung
3 biji telur
1 s/t garam

CARA2:
Lapisan Bawah

1. Basuhkan pulut dan rendamkan beberapa jam sebelum dimasak.
2. Kukuskan sehingga masak.
3. Lapikkan pelastik dalam loyang bulat atau 4 segi berukuran 8 inic.(HomeKreation: guna aluminium foil sbb tak suka guna pelastik utk memasak)
4. Tekankan pulut yang telah masak tadi supaya mampat dan cantik.
5. Kukuskan semula dan tuangkan adunan bahagian atas.

Lapisan Atas
1. Masukkan semua bahan dalam mangkuk dan kacau rata. Tapiskan.
2. Masakkan sekejap sehingga naik wap.
3. Tuangkan perlahan-lahan atas pulut tadi.
4. Kukuskan lebih kurang 20 minit. (HomeKreation: 30 minit)
5. Sejukkan dahulu baru potong dengan pisau pelastik.
