Rendang Pucuk Ubi

 Hello there.... sorry for missing in action for the last couple of weeks. End of year is always inevitably busy with so many activities - weddings, company games, parties, extra-ordinary workload in office, etcs. I miss my blog and all of you... so here is a humble presentation of a dish served for lunch today.

INGREDIENTS:
20 Bird-eye Chilies*
2 Green Chilies*
6-8 Shallots*
1 clove Garlic*
1/2" Ginger*
1 Lemongrass* (* blend) 
1 Lemongrass - bruised 
2 Young Turmeric Leaves - sliced finely 
1 cup Anchovies - lightly pound to split 
1 bowl Thick Coconut Milk
2 tbsp Roasted Coconut Paste / Kerisik
1 bunch Young Tapioca Leaves
1 tsp Sugar
Salt

METHOD:
1. Heat up 1/2 cup oil & stir-fry blended ingredients* and bruised lemongrass  until fragrant.
Add in turmeric leaves & anchovies & stir until dried.
2. Pour in coconut milk, add sugar & salt - cook until thicken and oil surfaced.
Add in kerisik and Tapioca leaves.
Stir often and cook until dried.
3. Serve with white rice.

Assalamualaikum kekawan & para pembaca yg di sayangi.... maaf ya tuan rumah menyepi sebentar - terlalu banyak hal yg perlu di uruskan terutama di hujung tahun sibuk dgn khenduri kahwin adik Along baru2 ni, jemputan sana-sini, kerja pejabat yg berlambak2 & setentu nya kerja rumah yg tak pandai habis2.....

Hari ni berpeluang buat photo-shoot walaupun hanya lauk sempoi - sumber dari majalah Rasa tapi Along ada juga nampak KakAnim pun ada promote lauk ni sebelum ni kat sini. Sedap rupa nya lauk ni, daun ubikayu harum bila di rendang. Along buat tak kering sampai rangup seperti KakAnim sebab Along mahukan lembab2 sedikit utk makan dgn nasi.

BAHAN2:
20 biji Cili Padi*
2 biji Cili Hijau*
6-8 ulas Bwg Merah*1 ulas Bwg Putih*
1/2" Halia*
1 btg Serai* (* blend) 
1 btg Serai - di ketuk 
2 helai Daun Kunyit Muda - hiris halus 
1 cwn Ikan Bilis - tumbuk sedikit supaya pecah2 
1 mangkuk Santan Pekat
2 sb Kerisik
1 ikat Daun Pucuk Ubikayu
Garam, Gula

CARA2:
1. Panaskan 1/2 cwn minyak & tumis bahan2 blend* & serai ketuk sehingga wangi.
Masukkan daun kunyit & ikan bilis, kacau sehingga kering.
2. Masukkan santan & masak sehingga pecah minyak.
Masukkan kerisik, daun pucuk ubikayu, garam & gula.
Kacau selalu & masak sehingga kering.
3. Hidangkan dengan nasi putih.
