Dulce de Leche Cheesecakes

This is awesome and to my surprise my hubby likes it so much despite he is not a sweet tooth and also not a cheesecake fan. However my two sons prefer the Chocolate Banana Toffee Pie that I made using Dulce de Leche earlier on and keep on reminding me to make that again. They also said the "failed" version of Dulce de Leche that I made from sweetened creamer is nicer than the one using condensed milk.... well, that's an opinion from those who cannot distinguished between the original & failed version but they like what they like...LOL.

(Makes 8" round)
CRUST:
1 cup Cream Crackers crumbs (or any unsweetened biscuits)
50g Butter - melted
  • Mix and press into base of spring form tin or pie tin. 
  • Chill until required.
 FILLING:
1/2 cup Dulce de Leche (see here & here) 
250g Cream Cheese
1/4 cup Sugar
1 Egg
1 tsp Vanilla Essence
  • Spread Dulce de Leche on crumb base.
  • Beat cream cheese & sugar until smooth.
  • Add in egg & vanilla essence & beat until combined.
  • Pour over crust and bake 160C for 40 min & leave in oven for 30 min.
  • Cool completely in room & chill overnight.
 GLAZE:
3 oz Chocolate
60g Unsalted Butter
2 tsp Glucose Syrup
  • Heat all until smooth.
  • Pour onto chilled cheesecake & chill 30 min.

    is it okay if i just use toffee sold in the supermarket?? hehe.. ;)
