Apple Bread Pudding

I've got some stale hot dog buns and an apple in my fridge and since lunch is a simple one today, dessert will be nice to come along.

No specific measurements are necessary but here as guideline:

INGREDIENTS:
2 big Hot-dog Buns - sliced
Butter
Brown Sugar
1 cup Fresh Milk*
2 Eggs* (* beat together with fork)
1 Apple - peeled & chopped
Raisins
Cornflakes

METHOD:
1. Buttered sliced buns on both sides & arrange in a greased heat-proof casserole.
Sprinkle brown sugar & pour in half of egg & milk mixture.
Sprinkle half of chopped apple & raisins.
Repeat with another layer of bread, sugar, milk mixture, apple & raisins.
Lastly sprinkle cornflakes on top.

2. Bake at 180C for 45 minutes.

3. Serve warm with custard sauce.
(To make custard, mix 1½c Milk + 2 tbsp Custard + 1 egg yolk + 2 tbsp Sugar + ½ tsp Vanilla. Microwave for 5 min & stir every 1 min)

NOTE: Consume this dessert right away and not encouraged to keep long as cornflakes can turn soft easily.

Lunch Menu

Lunch today more towards children's favourite as they wanted something other than rice & dishes.

Menu : Instant sausage Pizzas, Grilled Honey Chicken and French Fries.
Dessert: Apple Bread Pudding (see next post).
What's missing? Planned for mushroom soup but discarded after I checked the expiry date. Salad? Well, nobody cares.... haha

Crepes


Crepes or thin pancakes are called Lempeng in Malay. Since I have leftover fish curry from last night dinner, I thought crepes will be nice and healthier than Roti Canai. It is also a lot simpler & quicker to make anyway. It is soft in texture and you will love it!

Here it goes....

INGREDIENTS:
1 cup Plain Flour
2 Eggs
1/2 cup milk
1/2 cup water
1/4 tsp salt

METHOD:
1. Place all ingredients in a blender & process until smooth.

2. Heat up a griddle & wipe surface with oil.
Pour a scoop of batter & spread thinly.
Cook until the edge curled up a bit & flip.
Cook the other side for 1 minute.
Repeat until all batter used up.

3. Serve with savoury or sweet filling of your choice.
I dipped my crepes with curry ....emmmh delicious!

Cheesecake Brownie


Made this yesterday for my colleague, Peter who had last day in the office today. I know he loves cakes and desserts so tried out the recipe from Gert (My Kitchen Snippets). Somehow, it did not really turn out as expected - the brownie part is a bit dry (could be overbaked...?). Overall taste is good and Peter was not complaining at all....hehehe. My two boys were complimenting anyway as they love chocolate & cheese...

Herewith the recipe:

(Makes 8" square)
INGREDIENTS (Brownie):
1/2 cup Butter
4 oz Unsweetened Chocolate
1 cup Sugar
2 eggs
1 cup Flour
1 tsp Vanilla Essence
1/2 tsp Baking Powder
1/4 tsp Salt

INGREDIENTS (Cheesecake):
8 oz Low Fat Cream Cheese (I used full fat cream cheese)
1 egg
1/3 cup of sugar

METHOD:
1. Heat oven to 350°F. Grease bottom only of 8 x 8 inch square baking pan. Set aside.

2. Melt butter and chocolate in a saucepan over low heat, stirring occasionally, until smooth (4 to 7 minutes). Remove from heat.
Stir in sugar and vanilla.
Add eggs, one at a time, mixing well after each addition.
Add flour, baking powder and salt; mix just until all ingredients are moistened and brownie mixture is smooth.
Spread brownie mixture into prepared baking pan.

3. For the topping beat the cheese, egg and sugar until smooth. Dollop the cream cheese mixture on top of the brownie batter. Swirl together using a knife or skewer.

4. Bake for 25 to 33 minutes or until brownies just begin to pull away from sides of pan. Cool completely and then cut into bars and serve.

Next Day Comment: There were few small slices left from yesterday & surprisingly the brownie turned moist this morning...walaaa...

Fried Kurma Chicken

Tekak ku rasa nya kepingin nak makan something kelainan, tak nak kuah2 tapi ada flavour yg sedap gitu.... isyk ikut je selera ni... taraaa... ini lah jadi nya... sedap you...!

INGREDIENTS:
8 pieces Chicken
1-2 Potato - cut wedges
1 Tomato - diced
4 tbsp Kurma powder - mix with some water
1 tbsp Kerisik
3 Shallots*
2 cloves Garlic*
1" Ginger*
1 Green Chilli* (*blender)
1 Big Onion - sliced thinly
1 Kasturi Lime
Salt & MSG

METHOD:
1. Rub chicken with salt & turmeric powder & deep fry.
Deep fry potato wedges until cooked.

2. Heat up oil & fry sliced onions until golden & dish up.
Stir fry the blended ingredients until fragrant.
Add in Kurma paste & stir until fragrant.
Add in Kerisk, chicken, potato, tomato & fried onions.
Stir until well mixed.

3. Dish up & serve with rice.

Tapai Pulut (Sweet Fermented Glutinous Rice)

My Tapai is now ready after 2 days fermentation. Alhamdulillah, it turned out to be very sweet & juicy. This sometimes based on luck I guess as the old folks have many "pantang" (prohibition in behaviour, etc) while making this as they believe it can influence the result. Although I don't quite believe in those, I just simply obey.... My mum must be proud of me as I inherit the skill from her...hehehe.
This is the photo of Tapai yeast bought from my home town a couple of months back. Actually my dearest bro-in-law bought it for me as he knows who sell the best quality in the town. (TQ Syuk, my adik yg pandai bodek ni....)

INGREDIENTS:
1 kg Glutinous Rice
1 pc Ragi / Tapai Yeast - ground
4-5 tbs Sugar
1 cup Water

METHOD:
1. Soak glutinous rice for 4-5 hours.
Steam until soft.
Cool completely.
2. Mix the glutinous rice with sugar & yeast.
Sprinkle with water to prevent lumps and sticky.
Shape into small balls & place in a container.
3. Wrap & keep in a dark place for 48 hours.
It is ready when it becomes watery.

Talam Yam


The surface wrinkled like 80 year old granny....kahkahkah... however texture & taste are both very nice...

Recipe from MyR by NisaMPB. Copy paste here (anyone needs translation, please shout).

BOTTOM LAYER:
300 ml santan
Garam secukup rasa
65 gm tepung beras
1 tsp tepung gandum biasa
100 gm keladi (yam), potong dadu & kukus separuh masak & lenyek2kan sedikit
55 gm gula pasir - Iused 200g Yam

TOP LAYER:
100 ml santan
Garam secukup rasa
80 gm gula pasir
2 tbsp tepung beras
20 gm tepung jagung
1 biji telor, dipukul sedikit
Sedikit pewarna unggu (purple or violet)

METHOD:
1. Campurkan semua adunan untuk lapisan bawah.
Panaskan kukusan pada api sederhana hingga air mendidih lalu letak loyang berukuran 8" bulat ber-griskan sedikit minyak.
Tuang adunan untuk lapisan bawah pada loyang tadi & kukus selama 10-15 min.

2. Di mangkuk lain, campurkan santan, garam & gula hingga sebati.
Masukkan tepung beras & bahan2 lainnya. Gaul hingga sebati & tidak berbentil2; tapiskan. Tuang adunan ini keatas lapisan bawah.
Tutup semula kukusan tadi & kukus lagi selama 10-15 min atau hingga masak.

3. Alihkan untuk disejukkan & potong.
Gunakan pisau plastik & sapu sedikit minyak untuk memotong supaya tidak melekat.

Keladi Masak Asam Pedas (Yam Stalks in Sweet Sour Soup)

There was leftofer yam stalks from the other day, so I cook this quick & easy kampung dish. Went well with fried fish & Sambal Belacan...!

INGREDIENTS:
Some Yam Stalks - peeled & cut
1 Red Chilli*
2 Shallots*
1 clove Garlic* (*pounded)
1/2 tsp Turmeric powder
2 pieces Dried Tamarind
Sufficient water, salt & sugar

METHOD:
1. Boil yam stalks until soft & drain.

2. Place all ingredients in a pot & boil.
Balance the salt, sugar & tamarind.

3. Serve with rice.

Broiled Cod with Paprika

My husband bought a piece of frozen Cod and I thought broil it in a pan will be suitable.

INGREDIENTS:
1 piece Cod
2 tbsp Butter
2 tsp Paprika
1/2 tsp Chilli Powder
1/2 Big Onion - chopped
2 cloves Garlic - chopped
1 tbsp Lemon/Lime Juice
Salt

METHOD:
1. Melt butter in a non-stick pan.
Saute Onion & Garlic until soft.
Add in paprika & chilli powder.
Add in salt & lemon juice.

2. Brush fish with paprika mixture & broil each side for 4-5 minutes until it flakes easily.
Alternatively, cook in a non-stick pan above small medium fire which gives the same result.

Sweet Potato Fritters

Senang je nak buat ni, macam buat Goreng Pisang gak. Resipi kat sini.

Bubur Ca-Ca

A packet of dried Bubur Ca Ca bits that I bought from my hometown have been sitting in my storage cabinet for a couple of months already. It is time to put it to disposal since I found some sweet potato & yam in the market.

INGREDIENTS:
1 packet of Bubur Ca-Ca bits
1 Sweet Potato*
1/2 Yam* (* diced small)
1/2 pot of Coconut Milk
Some White Sugar
1 Screwpine Leaf
1/2 tsp Salt

METHOD:
1. Boil Bubur Ca Ca bits until soft & drain.
2. Boil sweet potato & yam, separately, until soft & drain.
3. Place all ingredients in a pot & boil.
4. Serve warm.

Gulai Lemak Keladi (Yam Stalk in Coconut Broth)

I rarely cook Gulai Lemak (spicy coconut milk broth) as my husband is not a great fan of it. However, I was craving for Yam Stalk cooked in Chili Padi Lemak (Gulai Lemak is very common dish in Perak).

Come and join me....

INGREDIENTS:
Yam Stalks - peeled & cut (you can buy ready cut in Miri market)
1/2 pot Coconut Milk
1 tsp Turmeric Powder
3 Shallots*
1 Green Chilli*
4-5 big Chilli Padi* (*pounded) 
1 Lemongrass - bruised
1 Turmeric leaf - shreded
Some Shrimps
Salt & MSG

METHOD:
1. Boil yam stalk until soft & drain.

2. Place all in a pot & cook until boiled.
Stirring all the time to prevent coconut milk from curdling.

3. Serve with rice.

Jackfruit & Chicken Curry

Young jackfruit & chicken cooked in curry broth - another kampung dish from northern Semenanjung.

INGREDIENTS:
1/2 Chicken - cut to parts
A packet of Young Jackfruit - boiled until soften & drained
1 tbsp Curry Powder
1/2 pot of Coconut Milk
3 Shallots*
2 cloves Garlic* (*sliced & fry)
Salt & MSG

METHOD:
1. Place all ingredients in a pot except fried shallots & garlic.
Boil until chicken is cooked.
Add in fried shallots & garlic.

2. Serve with white rice.

Longan Drink

This is my favourite drink....

METHOD:
Boil some dried Longan under slow heat until the fruits are soften.
Add some white/palm sugar.
Serve warm or cold.

Chocolate Marble Bread

Mula2 nampak kat umah Hana, pas tu tengok2 kat MR, ramai dah yg mencuba resipi Onigiri ni. Along pun tak sabo2 petang td start le projek.... tapi roti tu terlebih kembang sampai merekah lah pulak... tapi rasa nya memang sedap.

Resepi copy paste dari MR je lah, tapi gambo step-by-step ni original dari HomeKreation...

BAHAN2 / INGREDIENTS:
200 gram tepung roti 200g Bread Flour
50 gram tepung gandum 50g Plain Flour
1 sudu besar butter atau marjerin 1 tbsp Butter/Margarine
140 ml susu segar 140ml Fresh Milk
1 sudu kecil yis 1 tsp Yeast
2 sudu besar gula 2 tbsp Sugar
1/2 sudu kecil garam 1/2 tsp Salt
1 sudu kecil bread improver 1 tsp Bread Improver
1 sudu besar serbuk koko dibancuh dengan sedikit air 1 tbsp Cocoa Powder - mixed with water


CARA2:
1. masukkan semua bahan kecuali serbuk koko, uli sampai tak melekat pada jari. kalau ade BM tekan On je. Mix all ingredients together & knead until smooth.

2. Perap doh selama 40minit. Rest for 40 min.
Kemudian tumbuk-tumbukkan doh tadi, keluarkan angin. Punch & knead the dough.

3. Bahagi doh pada tiga bahagian. Divide into 3 parts.
Satu bahagian masukkan bacuhan koko tadi, kalau telembik buleh tambah sedikit tepung dan uli macam biasa. Add one part with cocoa paste until well mixed.
Pastikan adunan betul betul sebati & warna sekata untuk doh coklat tu.

4. Satukan doh yang baki tadi dan terap memanjang.
Letakkan doh coklat di tengah-tengah.
Tutupkan keseluruhan adunan tadi
Roll the plain dough & the chocolate dough. Place the cocoa dough on top like picture 1 below.

5. Potong tiga adunan dan anyam bentuk tocang. Shape as shown in the pictures.
6. Letak dlm sandwich loaf & biarkan naik dua kali ganda. Place in a tin & rest til doubled.
Bakar pada suhu 160C selama 25 minit atau hingga permukaan nya perang. Bake at 160C for 25 min.
Sejukkan atas redai. Cool it on a rack.

Squid in Soya Sauce

I never cooked squids this way before but I was curious how it would taste to cook squid in soya sauce. It turned out to be quite good actually...

INGREDIENTS:
300g Squids
2 Shallots*
1 clove Garlic*
1 slice Ginger* (*pounded)
1 tbsp Chillie Paste
1/2 Big Onion - Sliced into rings
Soya Sauce

METHOD:
1. Hest up few tbsp oil & fry pounded ingredients*.
Add in chilli paste & fry till fragrant.
Add in squid, onion rings & soya sauce.
Stir for a while just until squids are cooked.
Do not overcook otherwise the squids get tough.

2. Dish up & serve with rice.

Custard Apple Pie (Again)

Made this yesterday as Cap Goh Mei gift to my friend SH. Hope she has an enjoyable CGM dinner tonite with her relatives. Recipe was posted earlier here.

The one below is a mini version for my kids......

Oat Bread


There is nothing like home-made bread... fresh and free from preservatives. The aroma from the oven/bread machine lingering whole house enough to lure anyone in the house for the irresistable butter-melting hot piece.... does the sound of it enough to make you drooling...? hehehe....

Here showing off my bread machine.... By the way, the bread machine has been serving me & family since 2006 (should give it some award for hardworking kitchen equipment....hehe). If you ask for my advice, I say it worths every single cent! Here is a healthy recipe extracted from the free recipe book supplied along the bread machine . If you don't tell others, they would think this is wholemeal bread as hard to tell the difference.

INGREDIENTS:
8-9 flow oz Milk
2 cups (270g) Bread Flour
1 cup (90g) Uncooked Oatmeal (not instant)
2 tbsp Brown Sugar
1½ tsp Salt
2 tbsp Butter
1½ tsp Instant Yeast

METHOD:
1. Place all ingredients in a bread maker.
2. Set for basic bread & let it process until cooked.
3. Serve with your favourite sweet/savoury spread.

Fish Head Masak Asam

I bought whole big fish from the market & reserved the head for Masak Asam (translated as sweet sour stew).... loved this dish....mmmmmh delicious.....!
Recipe was posted earlier here.

Fried Egg Noodles

This was for breakfast today....

INGREDIENTS:
6 pieces Mi Sanggul (Dried Egg Noodles)
3 Red Chillies*
2 Chilli Padi (the big type)*
3 Shallots*
2 cloves Garlic* (*pounded)
2 sausages - sliced
Some chopped Chicken bits
Frozen Mixed Vegetables
2 tbsp Soya sauce
1 tbsp Chilli sauce
1 tbsp Tomato sauce
1 tbsp Oyster sauce
1 Egg
Salt & MSG
Fried Shallots - for garnish

METHOD:
1. Heat up few tbsp oil & fry pounded ingredients until fragrant.
Add in sausages & chicken & stir for a while.
Add in all the sauces, salt, MSG & mixed veg.
Break in the egg & stir for few minutes.
Add in noodles & stir until well mixed & cooked.

2. Serve with fried shallots, sliced chillies & lemon.
