Juicing for Health

Drink a glass of freshly squeezed vegetables and fruits for health and revitalisation. You can juice any vegetable, be it carrot, cucumber, celery, turnip, spinach, bitter gourd, bottle gourd, tomato, or beet. Just ensure to wash the vegetables thoroughly before juicing. Also, cut the vegetable into small pieces to easily extract the juice.

I like mixing whatever vegetables I have in the fridge... Avoid adding too much fruits as it contain sugar... therefore green apples are preferred over the red ones.

I'm using a coarse filter so that I could get some fibres in the drinks:

Buy juicing machine which squeezing instead of blending to avoid oxidisation. You don't have to buy expensive brand... mine is a local brand but equally good and most of all I still get good quality juice....! It is all pure juice without having to add water at all.

Bandung Selasih & Kembang Semangkuk

Just to show you how Kembang Semangkuk looks like below in case anyone has not seen/eaten it before. I don't know what is the dried fruit called in English. To prepare, soak the fruit in a bowl of water and it will be fully opened up after 10-15 minutes.

To prepare the Bandung, mix evaporated milk, rose syrup, ice, soaked basil seeds & Kembang Semangkuk..... very cooling! The Malay old folks said this drink can cool down overheated body.
A packet of dried Kembang Semangkuk on the right and on the left the soaked KS

Cucur Udang & Fresh Mango Juice

Hubby requested for Cucur Udang again today (I've made it few times already in this Ramadhan month). My whole family has higher preference for savoury kuih over sweet kuih and don't mind Cucur Udang every day which is the best kuih of all to them....LOL.

Whenever I made Cucur Udang, I will sure remember my big brothers , nephews & nieces. There was one time I made this from 2kg flour and all gone in one blink the moment the Cucur Udang lifted out from the wok. At the end when all done, there were still some people complaint didn't have chance to grab any. It is a sure hit whenever I made this in my or in-law kampung.... something I get remembered for and complimented as well...haha.
Ini versi photographing kelam-kabut, tak sempat nak tunjuk sos....hehe
My simple Cucur Udang.... no fancy additives to make it soft, just the way I mix it perhaps. My babysitter made it tens of times after she saw me making tens of times but still hers will be tough.... You can try my recipe if you like but use your judgement for success. I've posted a recipe here before but I like the simpler version as below.

By: Roz@HomeKreation
INGREDIENTS:
500g more/less Flour
300g Shrimps - shelled & chopped coarsely
1-2 tbsp Chilli Paste
3 Shallots - sliced/pounded
1/2 tsp Turmeric powder
Salt
Water sufficiently

METHOD:
1. Mix all ingredients with water until you achieve the consistency required.

2. Heat up a lot of oil in a wok.
Drop a tbsp of the mixture at a time & fry until cooked.
Make sure you flip the dumplings to ensure evenly cooked.
Once cooked, lift the dumplings into a bowl lined with kitchen paper.

3. Serve with chilli or peanut sauce.

BAHASA MALAYSIA VERSION
Cucur Udang simple versi Along tak letak macam2, lagi simple lagi sedap & tak jemu makan. My family boleh habis semangkuk besar sekali makan jer. Cucur tetap lembut walau pun dah sejuk tapi warning ya, memang susah nak jadi lembut sebab Along tak letak apa2 bahan pelembut tapi tangan ni dah biasa buat cucur ni dari Along kecil (sekolah rendah) so memang automatik jer... Patma kat rumah ni dah 10x buat pun tak mau jadi lembut walaupun dah 10x tunjuk.... Bancuhan kena cair sedikit baru cucur jadi lembut, malas lak nak sukat2 sebab kalau buat memang selalu main tuang jer air tu sambil di kacau2, so kalau sesiapa nak cuba pandai2 sendiri lah dulu ya...hehe.

BAHAN2:
+/-500g Tepung Gandum
300g Udang - buang kulit & cincang
1-2 sb Cili Mesin
3 bj Bwg Merah - hiris/tumbuk
1/2 st Serbuk Kunyit
Garam
Air secukupnya

CARA2:
1. Campurkan kesemua bahan dgn air secukup nya - agak2 supaya tidak terlalu pekat/cair.

2. Panaskan minyak yg banyak & sudukan adunan kedlm minyak.
Goreng & balik2kan selalu sehingga masak.
Angkat & toskan di atas kertas tisu, di dalam mangkuk.

3. Hidangkan dgn sos cili atau kuah kacang.

My mango trees are fruiting again and also received a bag of mangoes from kampung. We had mango juice for Iftar every other day and still have abundance of mangoes in the fridge and on trees. The above Mango Juice was very thick as I blend the pulps with ice cubes and not much water added... such a refreshing thirst quenchers and healthy too without preservative or coloring....!!

Homemade Cendul

This was my first attempt in making cendul.... not so difficult actually and wasn't time consuming. However, the cooking part is quite challenging when the batter start to thicken. The final step is to press through a perforated laddle and is quite an easy/fast job.

Homemade Soya Bean Juice

I cannot recall when was the last time I made my own soya bean juice and eversince (at least 3 years ago) the soya bean juice maker has been sitting in my cupboard untouched. It is time to put it backed to work for some good reasons.

  • Soak soya beans for about 5 hours.
  • Rub the skin off.
  • Place beans in the soya bean juice maker. Place water until the indicated level. Press start.
  • It will be ready after 18 minutes (the machine boils, grinds & strains).
  • Pour the juice into a jug and add sugar to taste.
  • Serve warm or cold.
  • Notes: I used 500g dry beans & it produced about 6liters of thick juice.

Milo Shake

My youngest boy, Radhi, was nagging me in the evening for something to munch the moment I walked in after returning from work.

There are plenty of fresh cream leftover in the fridge after making cupcakes the other day and also few tiers of half-ripe banana. So here what I came up with : Milo Shakes and Banana Fritters. Emmmm.... Radhi happily munching the hot crispy banana fritters and sipping cooled Milo Shakes but not forgetting to spare some for his brother & dad who have yet to return home.
Recipe? Oh, just topple the fresh cream on top of the cold milo... okay?

Ice Lemon Tea

Even though wheather has been cold & wet late weeks, my throat felt so dry & thirsty. Must be the left over effect from the recent sore throat.

I never like any citrus fruits, drink or any food with that content. My sore throat was prolonged for weeks despite two rounds of anti biotic prescribed by the clinic & the doctor advise me not to consume any dairies in order to reduce development of phlegm. That means I cannot drink my favourite Teh Tarek....! Then one day, when I was patronising one restaurant, the owner insist that I should drink his so claimed tasty hot lemon tea. Although hesitated I agreed to give it a try.... Gheee... I'm glad that I tried... it was nice indeed and also very soothing. Ever since, I drink hot lemon tea everyday as it not only helps with my sore throat but also contains vitamin C which my body needs at the moment.

So today, I made my very first Ice Lemon Tea....hahaha.... just a story to share.

INGREDIENTS:
A glass of sweeten Tea
Few slices of Lemon
Ice Cubes

Mix them all & serve...!

Ice Cendol

This tasty drink is Malaysian popular sweet dessert and can be served with added kidney beans and steamed glutinuous rice. I made mine in a simplest way from the leftover Cendol after making jelly the other day. This Ice Cendol will cool you off after hot day and emmmmhh what a lovely creamy taste and palm sugar complementing it so perfectly. Oh, look at the above photo of layered Ice Cendol that I created...!

The one below is Ice Cendol already stirred to mix:
Here is a quick way to prepare Ice Cendol:

INGREDIENTS:
A bowl Cendol
A bowl Coconut Cream - preferably freshly squeezed
A bowl Ice Cubes
1 cup Evaporated Milk
A jug Fresh Milk
A pinch Salt
1 cup Palm Sugar
Screwpine Leaf

METHOD:
1. Prepare palm sugar syrup.
Add palm sugar to 1 cup water & boil with screwpine leaf until melted.
Cool.

2. Blend coconut milk, milk, ice cubes & salt to produce shaved ice like.
You need a strong blender to do this to prevent your machine from getting spoilt.

3. Place few tbsp of palm sugar in a glass, topped with Cendol and blended iced.
Ready...! This is what shown in the first photo.

4. Alternatively, place all ingredients in a jug without having to blend the ice as shown in the second photo above.

Barley Juice

Barley has cooling effect to body and its internal being besides rich of nutrients. For me, I just love the taste and the homemade is the best which is additives free.

INGREDIENTS:
A packet of dry Barley
Water
Sugar (preferably Rock Sugar) - amount to tatse
1 Screwpine leaf

METHOD:
1. Wash barley & place in a pot with sufficient amount of water to cook the barley.
As a guide, the water should be double the depth of the barley in the pot.
It is not necessary to put a lot of water at this stage.
Boil until barley is tender which may take about 30 minutes or more, depending on method of cooking (I always cooked in a 5-ply stainless pot which ususally take only 30 minutes).

2. Once barley is tender, add more water to the volume required, screwpine leaf and sugar. Boil until sugar get dissolved.

3. Serve warm or cold.
