This recipe is created based on my wild appetite and what available in the kitchen. I've been keeping the salted fish from my mum for quite sometime and it is time to dispose it into the cooking pot. I cannot find "Ikan Talang masin" (name of the salted fish) in Miri, so it is kind of precious stock & cook only when the craving is high.
INGREDIENTS:
4 boiled Eggs
½ Pineapple - peeled & sliced
1 Potato - peeled & cubed
Some Salted Fish (Ikan Talang is the best)
3 tbsp Curry Powder (I used curry powder for cooking beef instead of for fish)
3 Shallots - sliced
½ pot Coconut Milk
1 each Cinnamon stick*, Star Anise*, Cardamon* & few Cloves*
METHOD:
1. Place coconut milk & curry powder in a pot & boil.
Add in potato & cook until half cooked.
Add in pineapple, salted fish & cook for 5-10 minutes.
Adding salt may not be necessary but check to taste.
2. In a small pan, heat up 2 tbsp oil & fry sliced onion & spices* until onion is golden.
Pour the whole thing into the cooked curry.
3. Serve with rice.
