This is our regular breakfast lately.... especially so in order to clear the big packet of rolled oats and to fully utilize my new cute jars! For recipe, please refer to earlier post here. This time I placed honey, dates, figs and ginger biscuits as topping.

Overnight Oats - Three Delicious Ways
Simply delicious breakfast and healthy too! No sweat and ready anytime you need it in the morning! You can create any flavor you like according to your taste and creativity. A small jar is filling enough and ensures low calorie intake... I took it every other day and in one week I lost 1 kg weight easily! In this posting, I made three different flavors and they are all awesome!

BASE RECIPE FOR ONE SERVING
1/3 cup Rolled Oats
1 tbsp Chia Seeds
1/4 cup Milk
1/4 cup Greek Yoghurt (I tried other yoghurt and not as nice as Greek Yoghurt)
METHOD:
1. Place above ingredients in a jar in the order of the list.
2. Place chosen topping on top and cover jar with lid.
3. Chill the jar in fridge overnight and ready anytime in the morning.
A. CARROT TOPPING:
Place in order: 1 tbsp maple syrup / honey, cinnamon powder, shredded carrot, walnuts /other nuts
B. BLUEBERRIES TOPPING:
Place in order: 1 tbsp blueberry jam, fresh/dried blueberries, walnuts / other nuts.
C. STRAWBERRIES TOPPING:
Place in order: 1 tbsp honey, 2 tbsp chocolate ganache, fresh strawberries, 1/2 tsp cocoa powder, walnuts / other nuts.

Sarapan yang sebegini tak berapa sinonim dengan selera orang Melayu Malaysia sebab tekak kita kan lebih gemarkan yang pedas2 dan kalau sarapan mesti kena penuh sepinggan baru kenyang.... (ini Along lah yang camni.... heheeee.... tapi rasa nya ramai yang cam Along gak kan....). Tapi kan... bila Along cuba resepi ni.... bukan Along jer yang kata sedap.... hubby & anak2 pun suka. Along ada juga buat untuk tetamu yang bertandang dari Miri dan mereka semua pun kata sedap.
Walaupun nampak sedikit tapi perut rasa penuh dan kenyang, tak makan yang lain pun ok. Yang best nya, bila tengahari dapatlah makan tepat waktu tanpa lengahkan.... selalu tu sengaja lewat2kan lunch atau skip terus sebab masih kenyang. Along buat ni selang-sehari selama seminggu dan dapat lihat hasil nya... berat badan turun sekilo dan perut pun kempis slim....heheee.
Along buat tiga perisa kali ni.... ada gak Along dah cuba perisa lain tapi takda lak amik gambo.... nanti lenkali bila ada mood nak snap gambo lagi leh lah tunjuk k.
Nak kasi tips:
1. Guna yoghurt Greek sahaja... kalau guna yg lain rasa nya amat kurang sedap (Along dah test). Yoghurt Greek ni tekstur nya lebih pekat dan rasa cam cheesecake pun ada dan amat kena dengan gabungan oats.
2. Guna rolled oats atau porridge oat... jangan ganti dengan instant oat sebab nanti rasa nya lembik... tu yang buat tak lalu nak makan oat tu nanti... Tengok gambo oat yg Along sudukan tu... masih berekeping2 cantik tapi lembut.

RESIPI ASAS UNTUK SATU BOTOL/SEORANG:
1/3 cwn Rolled Oats
1 sb Chia Seeds
1/4 cwn Susu
1/4 cwn Greek Yoghurt (jangan tukar yoghurt lain nanti tak sama rasa nya)
CARA2:
1. Masukkan bahan2 ke dalam bekas kaca mengikut aturan senarai di atas.
2. Masukkan topping kegemaran anda (lihat tiga cadangan di bawah).
3. Tutup bekas kaca dan simpan semalaman di dalam petisejuk.
4. Sedia untuk di nikmati pada waktu pagi nya
A. TOPPING KAROT:
Letak mengikut aturan: 1 sb maple syrup / madu, serbuk kayu manis, karot sagat, kekacang walnut.
B. TOPPING BLUEBERRIES:
Letak mengikut aturan: 1 sb jem blueberi, buah blueberi segar/kering, kekacang walnuts.
C. TOPPING STRAWBERRIES:
Letak mengikut aturan: 1sb madu, 2 sb coklat ganache, buah strawberries, 1/2 st serbuk koko, kekacang walnuts.

Homemade Breadcrumbs
I'm using stale French loaves to make breadcrumbs. It is so easy and no baking is necessary. French loaves will turn crispy inside out when left at room temperature wrapped in paper bag. Then just break them and zap in food processor!
I use breadcrumbs when making meat/chicken balls, topping for baked pasta or fried chicken/any fritter coating.
I bought this French loaves for only RM1 each so it is worth it or else use leftover bread slices but it needs baking which is time consuming.

Cara yang paling senang nak buat breadcrumbs ialah menggunakan roti perancis. Tak payah susah2 nak masukkan ke dlm oven, cuma balut dgn kertas dan biarkan ia di suhu bilik selama dua hari. Selepas tu anda akan dapati ia keras rangup luar dalam. Patah2kan dan hancurkan dgn food processor. Sedia di gunakan samada sebagai penambah adunan bebola daging/ayam, taburan atas pasta bakar atau pun salutan gorengan.
Masalah nya roti perancis agak mahal dan tak berbaloi nak beli semata2 nak buat breadcrumbs. Tapi anda boleh beli di Tesco harga nya cuma RM1 sebatang.

Fresh Pistachios
How many of you in this region have seen fresh pistachios, hands up! For me, this is my very first time...! My kind and thoughtful friend sent some to his wife all the way from Iran and she shared some with me.... I felt very touched by their thought although I have always been busy and not making much contact with some friends... Thanks so much for the kind thought!
I couldn't guess what that is initially until I peel off the soft outer skin which is pink layer like flower bud.... then it reveals the hard shell of pistachios that we typically seen. However, the hard shell is not as hard as those roasted. The nut inside tastes raw but I like it very much. My friend suggests that I roast it first but I just like it as is.... tastes so fresh and creamy. Since it is so rare, I shared a pinch each with some close friends in the office.

Pertama kali merasa kacang pistachios yang fresh, masih berkulit dan mentah.... segar dari Iran, kiriman dari sahabat yang baik hati. Teruja sangat bila dapat ni sebab tak pernah seumur hidup jumpa pistachios yg segar. Kulit luar nya berwarna pink dan lembut seperti kuntuman bunga. Bila di kopek kulit lembut tu baru lah terserlah kulit pistachios yg keras seperti selalu di jual tetapi kulit keras tu tidak sekeras kayu seperti yg dijual kering, mudah aja nak kopek untuk keluarkan isinya yang lemak. Kawan Along sarankan Along panggang tapi Along suka makan yang mentah ni, lemak2 & segar. Along share dgn beberapa kawan rapat di pejabat dapatlah seorang sejemput.... sharing is caring....hehe!

Jamu Rapat
Kali ni kita main masak-masak jamu lak.... ni khas untuk wanita sahaja... ehem2.... paham2 je lah... Jamu ni baik untuk kesihatan luaran dan dalaman. Tambahan bagi wanita yg penat bekerja seperti Along ni, memang perlukan khasiat semula-jadi. Alhamdulillah, ada lah sorang sahabat tu yang sedekahkan segala macam herba dan tumbuhan segar untuk di buat jamu.... siap pos dari Semenanjung sekotak besar.... ada manjakani, temu kunci dan lain2. Sedap berangin dan yang penting badan rasa segar dan panas, tak lah Along selalu terketar2 sejuk dalam aircond. Lepas seminggu ni boleh lah test kebersanan nya....hahaha.
Buat sahabat yang amat baik-hati dan penyayang, Along ucapkan berbanyak terima-kasih. Semuga Allah membalas jasa mu dengan segala keberkatan di dunia & akhirat.... amin! Along juga berharap persahabatan kita akan kekal selama nya seperti saudara kandung.
Tak perlu masak lama, cukup sehingga menggelegak. Rasa nya pure macam jamu.... memang asli!

Netherland Edam Cheese
This morning breakfast was spiral pasta served along toasts and Edam cheese. Our family's favourite pasta is cooked in olive oil and herbs sprinkled with parmesan cheese powder. The Edam cheese was a gift from a Dutch colleague who just joined our team a month ago. He had too much rice since he arrived and lucky enough to return to Holand last week to attend a course and came back with some cheese.... hopefully enough to survive him until the next trip..... LOL (just a teaser....!). The cheese is semi-matured and very tasty... I enjoyed it so much! Thanks Peter! This certainly can save me breakfast preparation for this coming week... hope my eyes will not turn blue....LOL!
I did a mini quiz in facebook and asked my FB friends to guess.... instantly the responses were burger, bread, chocolate and cheese. To win, they have to also guess the type and origin.
Halfway, I gave the full picture of the wrapper as clue.... obviously you can tell it is from Holand - the windmill picture and the language on it speak loudly. If you check Google translator, Kaas means cheese! Now the tricky part is only to guess the type of cheese....
Boeren Kaas means farmers' cheese... but not quite the answer I was looking for.
At the end I announced two winners:
Tuyot Saftuyah was the only one who guess the cheese type correctly i.e. Edam cheese but did not name the origin.
Delima Zamrud was the most persistent participant who named all types of cheese in the world except Edam but guessed the origin correctly i.e. Belanda (Malay's translation of Holand).
They both were awarded below medal. The game was fun... we all learn something at the end..... including laughter and jokes.
I did a mini quiz in facebook and asked my FB friends to guess.... instantly the responses were burger, bread, chocolate and cheese. To win, they have to also guess the type and origin.

Durian Isu / Isau from Sarawak
I'm sure many of you have not seen these types of durian unless you are from the Borneo. There are few types of the untypical durian that I've found. The above red durian is a very rare species and the photo above is shared by a friend from Limbang, I hope she will bring some for me this coming week-end. The one below is deep bright orangy color known as Isu and some call it Isau. The taste is quite distinct from the typical durian but equally stench.
Another type of durian which has orangy vivid color is Ukak but the taste is not similar to either Isu or typical durian. You can see Ukak that I've posted last time here.
See the color difference compared to the ordinary durian - such a deep vivid orange color. Wait for my next post to see what I create from Isu apart from eating them raw.....! Many thanks to Q for the two packs of durian below!

Play Dough for Liana
I had some expired flour which I misplaced and forgotten about. Idea came through to make play dough to give Liana some excitement in the weekend. Indeed it was an exciting activities for the whole family with the two brothers and daddy joining the moulding activities to show their creativity.
Liana and us had a lot of laugh every time something created especially the ones made by daddy.... (kind of hard to guess and Liana burst to laughter once she was told what that was!). Liana can guess 90% correctly what was created and the 10% mostly the ones from daddy..... Guess what daddy came up with..... one of them was i-pad (Liana's favourite toy)! Her eyes were wide opened and blinked a lot as she cannot guess but burst to excitement to know it was her favourite thing... LOL.
She also requested a lot of things and gave a challenge to the brothers to create for her.... dinosaur, monkey, snake, crocodiles, fish, birthday cake (this one was her favourite and she sang birthday song repeatedly for herself & pretend to blow the candles), buttons, apple, orange, elephants, flowers, many more.
Come and make play dough and give a lot of fun to your small kids whilst develop their creativity at the same time!

INGREDIENTS:
1 cup Flour
1/4 cup Salt
1 tsp Oil
Hot Water
METHOD:
1. Mix in water slowly into the rest of ingredients until just enough to form a dough.
Knead until smooth dough is formed.
2. Colour as you like & knead to mix well.

Seronok nya Liana first time bermain dgn play doh, tambahan pula kesemua ahli keluarga bermain bersama2 & gelak-ketawa setiap kali sesuatu di hasilkan mengikut kretiviti masing2.
Kalau ada tepung yg dah expired tu jangan di buang. Meh buat play doh untuk anak2 kecil anda.Pasti mereka akan riang gembira dapat bermain bersama2 anda.
BAHAN2:
1 cwn Tepung
1/4 cwn Garam
1 st Minyak
Air Panas
CARA2:
1. Tuangkan air panas ke dalam kesemua bhn2 lain perlahan2 sambil di gaul sehingga doh terbentuk.
2. Warnakan & uli sehingga sebati.

Batter Dispenser
Showing off my new toy.... I've been eying this tool for so long - saw it at the kaya ball kiosk but have not found it sold until few days ago at the bakery shop. I was so lucky as only one unit available & straight away grabbed it without thinking. The price was RM85 but I paid only RM80.
It is very useful to dispense batter for making cup cakes, kaya ball or anything and therefore eliminate messy table top from spoon drips or having to use piping bag. Highly recommended and I think it worth the price considering how it helps a more efficient work and cleaner table top.

Along nak share toy baru Along ni sebab dah lama Along cari baru ni terjumpa. Senang betul nak tuang adunan ke dlm acuan2 kecil tanpa comot2 tumpah. Tak payah lah nak guna sudu atau piping lagi selepas ni. Siap ada kaki utk letak, jadi takda lah kelam-kabut cam selalu tu.

Jeruk Buah Pala & Salak
Hari ni tak main masak2..... Meh join Along makan jeruk.... macam2 jeruk ada ni..... spesel kiriman dari Semenanjung.... cap, cap, cap... bunyi makan (arwah Abah Along kata makan bunyi macam landak....hehehe)..... sedap weeeih..... suka nya hati dapat kiriman dari sahabat blogger, maceh tak terkata! Dah lah susah-payah tolong Along carikan Bunga Telang, lepas tu siap kasi buah tangan pula. Dah berapa tahun tak menjamah jeruk2 ni, sebab kat sini takda. Caaaayanaaag..... mmmmuah2, maceh sekali lagi!

Homemade Chocolate Hazelnut Spread (Sapuan Coklat & Hazelnut)
I had few boxes of high quality Belgium chocolate which had melted and came up with an idea to convert them into chocolate spread. I also happened to have some hazelnut and it was just a perfect combination.
Recipe taken from my Hamlyn book collections:

(Makes 500g)
INGREDIENTS:
375g Milk Chocolate - melt
125g Hazelnuts
2 tbsp Veg Oil
2 tbsp Light Brown Sugar
1 tbsp Cocoa Powder
½ tbsp Vanilla Essence
METHOD:
1. Sterilize a jar & dry out.
2. Grind hazelnuts into a paste in a food processor.
Add in oil, sugar, cocoa powder, VE & whiz to combine.
Add in melted choc & blend until smooth.
3. Pour into sterilized jar & cover.
Leave to cool & thicken slightly before using.
4. It will keep for up to 1 month at room temperature.

Idea nak buat ni sbb nak habiskan coklat Belgium yg dah mencair. Resepi drpd buku koleksi Hamlyn. Hasil nya sungguh sedap sekali sebab coklat Belgium yg sememang nya bermutu tinggi.

BAHAN2:
375g Coklat (coklat makan yg bemutu tinggi) - cairkan
125g Hazelnuts
2 sb Minyak
2 sb Gula Perang Halus
1 sb Serbuk Koko
½ sb Esen Vanilla
BAHAN2:
1. Bilas botol kaca dgn air panas utk menyahkan kuman & keringkan.
2. Masukkan hazelnuts ke dlm food processor & kisar halus.
Masukkan minyak, koko, EV & blend.
Masukkan coklat yg sudah di cairkan & blend sehingga sebati & halus.
3. Masukkan ke dlm botol kaca tadi & di tutup.
Biarkan sejuk pd suhu bilik & pekat sebelum di gunakan.
4. Campuran ini boleh tahan selama sebulan pd suhu bilik.

Steamers & Steaming Tips (Periuk Pengukus & Tip)

Everytime I posted steamed cakes/kuih, I received the same repeated questions about steaming equipment, handling and method. Therefore I'm hoping this entry will help to answer those questions.Di sini Along nak kongsi beberapa tip/maklumat pengukus dan cara2 menggunakan nya sebab banyak soalan yang berkenaan yang Along terima. Di harap n3 ini dapat menjawab soalan2 tersebut.
QUESTIONS & ANSWERS / SOALAN2 & JAWAPAN2:
1. Type of steamer that I used /Jenis periuk kukus yang Along guna?
--> Steamer #1: 8" diameter and the bottom pot is 8" high. Suitable for cakes, apam, talam, glutinous rice, etcs. Cake batter is poured directly into the upper steamer pot. Particularly useful for long hours of steaming (>4 hours) without water replenishment. All my Sarawak steamed cakes used Steamer 1. It has high dom shape cover preventing water from dripping onto the cake. My cakes turned out fluffy & not soaked. Drawback: fixed and small size and cakes can only be round not square shape.
Pengukus #1: lebar ukur pusat 8" and ketinggian periuk air 8". Sesuai untuk kek, apam, talam, pulut, kuih, dll. Adunan kek di tuang terus ke dlm periuk lapisan atas. Kelebihan nya ialah tak payah menambah air untuk kukusan yang lama (>4 jam). Memudahkan kerja apabila Along buat kek Sarawak yg sememang nya mengambil masa mengukus yg sangat lama. Tudung yg berbentuk dom tinggi mengelakkan air menitik ke atas kuih/kek. Kek masak dgn gebu dan tidak basah. Kelemahan: saiz kek kecil dan hanya bentuk bulat.
--> Steamer #2: 14" diameter. Suitable for cakes, apam, talam, pao, etcs. For cakes, pour into a round/square tin & cover with aluminium foil before placing into the steamer to prevent from soaked by dripping water. Due to wide diameter but low height, water get dried easily and can only last up to 2 hours. Particularly useful for small cakes/kuih like apam cups, paos due to its big size. Also useful for my square tin and big size round cake.
Pengukus #2: lebar ukur pusat 14". Sesuai untuk kek, apam, talam, kuih pau, dll. Untuk kek, setelah adunan di tuangkan ke dlm tin, hendaklah di tutup dgn kertas aluminium utk mengelakkan air menitik ke atas kuih. Bentuk periuk yg lebar & rendah menyebabkan air mudah kering dan hanya cukup utk 2 jam. Kelebihan: bersaiz besar berguna utk kuih pau, kuih2 kecil seperti apam cawan sbb boleh kukus dgn banyak sekali gus. Juga mudah pelbagaikan saiz tin dan bentuk samada bulat / persegi.
Steamer #3 (Pengukus #3)
--> Steamer #3: 24cm/9" diameter. The upper steamer has small holes which is suitable for steaming glutinous rice, vegetables, chicken, etcs. Not suitable for cakes/kuih unless you are making a small batch. I tried making chicken rice with steamed chicken in the top pot and simulataneously rice at the bottom pot - turned out lovely.Pengukus #3: lebar ukur pusat 24cm/9". Sesuai utk mengukus pulut/beras/ayam/ubi dll. Tidak sesuai utk mengukus kek sebab saiz yg kecil. Along cuba kukus ayam di atas dan masak nasi di bawah dgn serentak.... sedap.
Pengukus #4: Guna apa2 jenis kuali. Cara nya, letak jaring besi di dalam 1-2" air. Letakkan tin kek/kuih/sepinggan ikan di atasnya. Sesuai untuk mengukus masa pendek atau memanaskan makanan.

2. How to prevent water from dripping onto the cake / Bagaimana nak mengelakkan air dari menitik ke atas kuih?
--> Steamer #1 by design will solve this problem. For other types of steamer, cover cake tin with aluminium foil. Alternatively wipe the cover occasionally (may not be suitable for some recipes).
--> Pengukus #1 di reka bentuk supaya air tidak menitik ke atas kuih. Jika anda menggunakan jenis periuk yg lain, hendaklah di tutup tin kuih dgn kertas aluminium. Cara lain untuk mengelakkan air menitik ialah dgn mengelap tudung sekali-sekala (mungkin tak sesuai untuk sesetengah resepi).
3. Is it ok to open the steamer cover in the middle of steaming in order to replenish water / Bagaimana nak menggantikan air yang kering sewaktu masa mengukus?
--> For long steaming hours like Sarawak steamed cake, you need to replenish the water when it dried up. Just lift the upper pot containing the cake without opening the cover. Quickly pour in boiling water into the bottom pot and place back the top pot. Do not use cold water as that will stop the cooking process. Suggest to ensure enough water for at least the first an hour or more before lifting the upper pot to replenish water in order to avoid cake from shrinking.
--> Kek yg mengambil masa yg sangat lama utk mengukus seperti kek Sarawak, air kukusan perlu di tambah apabila kering. Cara untuk menambah air, angkat periuk bahagian atas & tuang air menggelegak ke dalam periuk secepat nya dan letak semula periuk tadi. Jangan buka tudung periuk bahagian atas. Jangan tambah air yg sejuk kerana ia akan menyebabkan proses memasak terhenti. Pastikan air mencukupi untuk mengukus sekurang2 nya 1+ jam supaya kek tak terbantut.
4. How big is fire for steaming / Nak guna api besar mana untuk mengukus?
--> I used medium fire for all my cakes but ensure that water has been rapidly boiled before start steaming. Big fire will cause the cakes to crack on surface. For cupcakes/apam use big fire if you want it to blossom. Small fire is not recommended for steaming cakes as that will cause the cake texture to become compact and not fluffy. I used medium-low fire for steaming all my talam kuih.
--> Along guna api sederhana untuk semua jenis kek tapi pastikan air betul2 menggelegak sebelum meletakkan kek ke dlm pengukus. Api yg kuat akan menyebabkan kek merekah, kecuali apabila mengukus kek cawan yang sememang nya maukan ia merekah/mekar. Api yg terlalu perlahan akan membantatkan kek. Untuk kuih talam, along guna api yg sederhana kecil.
