Air Fryer Omelet ( Telur Dadar Air Fryer )

  You should try making omelet in air fryer... for many reasons! I talked a lot about air fryer in my previous post here. You can make thick omelet without having to worry about the typical problems of uncooked and yet burned omelet when cooked in a pan above a stove. I now can enjoy thick, fluffy and juicy omelet.

See the second photo how to place it in the air fryer. Use a pan smaller than the air fryer pot and cook about 10-15 minutes at 140C. Herewith, I'm using only 4 eggs + 1 tbsp oil + chopped bean curd + spring onions + tomato + salt + pepper. Test done-ness and add extra cooking time as necessary... after several attempt you will understand better your own air fryer.

   Memang berbaloi dan mudah kerja memasak dengan air fryer ni. Along ada citer pasal air fryer kat sini kalau minat nak beli air fryer tapi unsure, boleh lah baca pengalaman Along kat situ.

 Meh cuba buat telur dadar pulak kali ni. Along suka sebab cara begini dapat hasilkan telur dadar yang tebal dan gebu serta juicy. Kalau nak buat yg tebal dalam kuali agak susah sebab tengah nya lambat masak dan di luar mudah hangus.

  Cara nak masak nya mudah jer, letak bancuhan telur ke dlm bekas aluminium yg muat ke dlm air fryer dan bakar 140C selama lebih kurang 10 minit - bergantung kpd saiz yg anda buat. Di sini Along guna 4 biji telur + 1 sb minyak + sekeping tauhu + daun bawang + tomato + garam + serbuk lada. Selepas 10 minit, test masak ke tak dan tambah masa jika perlu.

Salted Eggs (Telur Masin)

 I was excited to find abundance of fresh duck eggs in the hypermarket. I stayed 25 years in Miri but never found any except salted ones. Making my own salted eggs really excites me.... There are two ways you can make them... wrap the eggs with salted clay or soak in salted water. The later is much easier unless in my hometown I can get clay easily from around my mother's house.

INGREDIENTS:
15 Duck Eggs - wash
1 liter Water
1 cup Hot Water
370g Salt

METHOD:
1. Mix salt and water until dissolved in a big glass jar.
2. Place eggs in the jar and let it soak for 4 weeks.
3. The eggs are ready when the egg yolk is oily when boiled - see photos below.
TIPS: Place a bag of water on top of the eggs to dip them under the water.

Seronok nya dapat buat telur masin sendiri. Tak sangka boleh dapat telur itik segar dgn mudah dari hypermarket kat KL ni dgn harga berpatutan. Nak buat telur masin amat mudah tapi perlukan kesabaran menunggu. Kalau tak cukup lama kuning telur nya tak cantik kemerahan atau tidak berkilat. Along buat rendam dgn air garam jer. Kalau nak buat bungkus dlm tanah liat pon senang gak tapi susah lak nak cari melainkan Along balik kampung memang banyak tanah liat keliling rumah emak.

BAHAN2:
15 bj Telur Masin - basuh bersih 
1 liter Air
1 cwn Air Panas
370g Garam

CARA2:
1. Campur garam dan air sehingga larut, di dalam balang kaca besar.
2. Masukkan telur dan biarkan selama 4 minggu.
3. Telur masin yg di rebus, kuning nya akan merah berkilat & berminyak apabila sudah cukup matang.
TIPS: 
 Tip dari Mymoone Esa, sahabat FB: letakkan sebungkus plastik yg berisi air di atas telur2 itu supaya elok tenggelem di dalam air dan tidak terapung.



After one week, the eggs are already salty but the egg yolks are not and the color was pale yellow. See my blur photo below - using handphone camera did not really work well under dim light. I purposely test it so that I can show you how it looks like compared to fully matured salted eggs:
Selepas seminggu - putih telur dah masin tapi kuning telur masih pucat dan tak masin

I tested again after two weeks.... part of the egg yolks were beautifully red and oily except small portion in the middle:
Selepas 2 minggu, kuning telur dah berminyak dan kemerahan cantik tapi ada sedikit di tengah yg masih kuning

After four weeks, the egg yolks were perfectly red and oily:
Selepas 4 minggu, kuning telur bertukar kemerahan sepenuh nya

Steamed Omelet (Telur Dadar Kukus)

 Here is something I've created from nowhere.... just wanted to clear some bean curd actually. Simple and can be ready in short time.  I should use smaller tin next time because my omelet is just too thin. I made this many days ago but was too busy to update the blog & hopefully I still remember all the ingredients precisely.

INGREDIENTS:
3 Eggs
1 Bean Curd - cut into small cubes
1 Sausage - chopped 
1 Red Chili - sliced 
1/2 Big Onion - chopped 
Some chopped Spring Onions & Chinese Celery
Salt & Pepper

METHOD:
1. Beat eggs slightly & mix with the rest of ingredients.
2. Pour into a greased tin.
3. Steam for 10-15 minutes until cooked.
4. Sprinkled with fried onions when served.

BAHASA MALAYSIA VERSION
Kali ni Along buat telur dadar kukus yg di campur dgn tahu & sosej. Silakan cuba kalau nak tahu rasa nya.... Resipi main campak2 ikut sempat jer...hehe

BAHAN2:
3 bj Telur
1 keping Tahu - potong kiub kecil
1 biji Sosej - cincang
1 biji Cili Merah - hiris nipis
1/2 bj Bwg Besar - cincang
Daun Bwg & Daun Sup - cincang
Garam & Serbuk Lada Hitam

CARA2:
1. Pukul sedikit  telur & campur kesemua bhn2 lain.
2.Tuangkan ke dlm tin yg telah di minyakkan.
3. Kukus 10-15 min sehingga masak.
4. Tabur bawang goreng sewaktu di hidangkan.

The omelet is ready to be steamed....

Smooth Loofah & Egg Soup (Sayur Labu Air & Telur)

 Something simple but we in the house like it......

INGREDIENTS:
1/2 Smooth Loofah - peel & cut 
1 Red Chili*
2 Shallots*
1 clove Garlic* (* sliced) 
6 Fish Balls - sliced 
3 Eggs
Salt & Pepper

METHOD:
1. Heat up 2 tbsp oil & stir fry sliced ingredients* & fish balls until fragrant.
Add 3/4 liter water, salt & pepper & let it boiled.
Add in loofah & cook until soften.
Break in eggs & do not stir until they are cooked.

2. Serve immediately with rice and preferably also Sambal Belachan.


BAHASA MALAYSIA VERSION
Sayur Labu Air & Telur
Masakan harian yg mudah tapi sedap. Best makan dgn nasi putih, boleh di hirup2.

BAHAN2:
1/2 biji Labu Air - kupas & potong kecil
1 biji Cili Merah*
2 ulas Bwg Merah*
1 ulas Bwg Putih* (* hiris) 
6 biji Fish Balls - hiris
3 biji Telur
Garam & Serbuk Lada Hitam

CARA2:
1. Panaskan 2 sb minyak & tumis bhn2 yg dihiris* & fish ball sehingga layu.Masukkan 3/4l air, garam & serbuk lada, biarkan menggelegak.
Masukkan sayur labu & masak sehingga agak lembut.
Pecahkan telur ke dlm masakan sayur & jangan kacau sehingga telur masak.

2. Hidangkan semsa masih panas dgn nasi. Enak jika ada Sambal Belacan.

Mini Vegetable Omelets

 I was not in a mood to cook vegetables for dinner and therefore added some vegetable into the omelet. I had some leftover coconut milk so experimenting it into the omelet and it turned out very tasty and soft - I'm very please with the outcome and sharing it herewith with all of you.

Makes two mini 4" diameter omelet
INGREDIENTS:
2 large Eggs
1/4 cup Coconut Milk
1/2 Potato*
1/4 Carrot* (* grate into matchstick shape) 
1/4 Big Onion**
1 Green Chili** (** sliced) 
Salt & Pepper

METHOD:
1. Beat eggs lightly & add the rest of the ingredients.
2. Heat a tbsp oil in a small 4" diameter pan.
Pour half of the batter & cook until one side is golden color.
Flip & cook the other side briefly. Dish out.
Repeat with the other half of the batter.
3. Slice & serve with rice along other dishes.

BAHASA MALAYSIA VERSION
Takda mood nak masak sayur jadi Along masukkan jer ke dlm telur dadar bersama lebihan santan dari masakan gulai. Sedap & lembut.

BAHAN2:
2 bj Telur
1/4 cwn Santan
1/2 bj Kentang*
1/4 btg Karot* (* sagat kasar spt mancis) 
1/4 bj Bwg Besar**
1 bj Cili Hijau** (** hiris) 
Garam & Lada Sulah

CARA2:
1. Pukul telur & campurkan kesemua bahan2.
2. Panaskan 1 sb minyak di dlm kuali kecil selebar 4".
Tuangkan separuh bancuhan telur & masak sehingga bhgn bwh masak.
Terbalikkan, masak sebentar & angkat.
Ulangi dgn adunan yg separuh lagi.
3. Potong & hidangkan dgn nasi & lauk sampingan yg lain.

Sambal Scrambled Eggs

 This is nice to go with rice as side dish or sandwich it between two pieces of bread or eat it with Roti Canai...
You can adjust the amount of chili to suit your liking.... mine is very mild as I used the type of dried chili that is less stinging hot.

INGREDIENTS:
2 Eggs
2 Shallots*
1 clove Garlic*
1/2cm Belachan*
1 tbsp Ikan Bilis* (* pounded)
3 tbsp Chili Paste
1/2 Big Onion - sliced
Salt

METHOD:
Heat up 4 tbsp oil & fry pounded ingredients, chili paste & salt until fragrant.
Add in big onion & continue to stir until it turns translucent.
Break in eggs & stir until it turns into scrambled.
Dish out!

Omelet with Olives


I have a big jar of olives, so this is one of the ways to consume it..... a nice combination & my children like it.

INGREDIENTS:
3 Eggs
1 Red Chili
1 Shallots
5 tbsp Fresh Milk
Olives - the more the tastier
Salt & Pepper

METHOD:
1. Beat eggs and add in the rest of ingredients.
2. Heat up 2-3 tbsp of oil in a flat pan.
3. Pour in the egg mixture & when the bottom is cooked, flip to cook both sides.....ready!

Gulai Lemak Telur Masin (Salted Egg in Green Coconut Broth)


 I had lunch at my  good friend's house few weeks ago whereby she invited her friend (Kak Nor) to cook this special dish. This dish typically using fresh duck eggs (and my mum's cook this deliciously) but you will never find duck eggs in Miri hence she substituted it with salted eggs and it turned out fabulous...! However, make sure the salted eggs are not too salty and the mild type will be great.

I tried making it again and managed to buy some salted eggs from the Pasar Malam (night market) which are imported from KL. It is more expensive (90cent each) but I was told that they are less salty which turned out to be true. My whole family enjoyed this dish very much.... My youngest son asked me why I called it salted egg because he said it is not salty at all. I guess the salt must be absorbed into the gravy. The big difference is the egg yolks which is a lot tastier than the fresh eggs...! For those who never tried this, it will be a new discovery for you....

INGREDIENTS:
4 Salted Eggs
4 Shallots*
Some Chili Padi*
1 Green Chili*
2" Fresh Turmeric* (* pounded)
1 bowl Thick Coconut Milk
1 Turmeric Leaf
1 Lemongrass - bruised 
1 Dried Tamarind
Salt


METHOD:
1. Place all ingredients, except eggs, in a pot/wok & let it boil while stirring most of the times to prevent the coconut milk from curdling.
2. Poached eggs in it & do not stir until the eggs are done to avoid from breaking.
3. Serve with white rice....ummmh!

Shabsuka

This dish can go well with roti, bread or rice....

INGREDIENTS:
500g minced beef
3 tbsp chili paste
3 tbsp minced garlics
2 tbsp ginger - minced
4 tbsp curry powder - HomeKreation: I used only 1 tbsp
1 big onion, diced
1 tomato, diced
1 cup, mix vegetables
1 can medium-size tomato puree
4 tbsp tomato sauce
1 / 2 -1 tbsp sugar
1-2 cups of water
Salt

TOPPING:
2 big onions, diced
2 Tomatoes, diced
some coriander leaves or chinese celery
1-2 red chilies, sliced
1-2 green chilies, sliced
2 tbsp fried shallots (optional)
4 Eggs

METHOD:
1. Mix minced beef garlics, ginger, and curry powder. Let it rest for at least 20 minutes.

2. Heat oil in wok and saute onions till soft.
Add in chili paste and cook till oil surfaced.
Add in marinated beef and stir well.
Add in 1-2 cups of water.
When beef has reached 3 / 4 cooked, add in tomato puree, tomato sauce, mixed vegetables and diced Tomatoes.
Stir well and add in salt & sugar to taste.
Let it simmer for a while & dish out.
The mixture shouldn't be too thick or too thin.

3. Put the beef in a baking dish and level it.
Sprinkle all the topping ingredients.
Make holes & break in eggs.
Bake at 180C degrees for 15 minutes or at least till the eggs are almost cooked.
Serve hot with white toasted soft bread or toasted french loaves.

Omelet with Mayonnaise

Tried this simple idea shared by Nor (Tganu).... fluffy & nice...

TELUR DADAR BERMAYONIS:
3 bj telur
2- 3 sudu besar mayonis
1 labu bawang besar ~ dipotong dadu
2 bj cili merah ~ dibelah dua dan hiris
daun saderi ~ dihiris
sedikit garam
sedikit minyak

Masukkan minyak ke dalam frying pan dan panaskan.
Pecahkan telur ke dalam sebuah mangkuk dan masukkan mayonis.
Pukul dgn garfu hingga sebati.
Masukkan kesemua bahan2 lain dan gaul lg hingga sebati.
Tuangkan adunan telur dan goreng hingga telur dadar masak.
Angkat dan hidangkan.

Translation & slight modification:
INGREDIENTS:
3 Eggs
2-3 tbsp Mayonnaise
1/2 Big Onion*
1 Red Chili* (* sliced thinly)
A pinch of Salt

METHOD:
1. Mix all ingredients & beat slightly with fork.
2. Heat up 1 tbsp oil in a flat pan.
Pour egg mixture & cook above small fire.
Flip one time to cook the other side.
3. Serve!

Egg Tofu in Oyster Sauce

This is a continuation from yesterday post on Homemade Fried Tofu. The story did not end there. I made this dish from the fried egg tofu.... nyummmmmmy!

INGREDIENTS:
1 portion Fried Egg Tofu (see here for homemade tofu) 
3 cloves Garlic - chopped 
1 each Red/Green Chili - sliced 
1/2 Capsicum - sliced 
2 tbsp Oyster Sauce*
1 tsp Cornflour* (* mix with water) 
Salt & Pepper

METHOD:
1. Heat up few tbsp oil & fry garlic.
Add in oyster sauce mixture.
Add in chilies & capcicum, salt & pepper.

2. Dish up & serve hot with white rice.

Homemade Egg Tofu

I made a lot of soya bean juice yesterday and hence also made the above homemade tofu for the very first time. I am very pleased with the outcome and my family like it too. It tastes much better than the Japanese egg tofu that are sold in supermarket. My compliments go to Wendy for inspiring me to take out my idle soya maker from the cupboard. What I like most about this is preservative free....!

Here how it looks like after been deep fried.

(Makes 8" round)
INGREDIENTS:
6 Egg
1/3 tsp salt
500ml Unsweetened Thick Soy Milk
1 tsp Corn Starch + 1 Tbsp Water

METHOD:
1. Break eggs and lightly beat with salt. 
Leave aside. Let the salt further break down the egg whites.
2. Put corn starch and water into a big bowl. Stir.
3. Bring thick soy milk to a boil and pour over cornstarch mixture. Stir. Let it cool down to warm.
4. When soy milk has become warm, combine with eggs. Lightly beat.
5.
Place a piece of cling wrap into your steaming tin.
For easier handling, wet the tin before putting in the cling wrap.
7. Pour into prepared steaming dish over a strainer/sieve. 
Discard egg white bits that are left in strainer.
8. Steam over low heat for 30 minutes.

Hard-boiled Egg Sambal

As shown earlier, this was cooked to accompany Nasi Lemak for our breakfast this morning.

INGREDIENTS:
4 Hard-boiled eggs - shelled & sliced the surface (not too deep)
4 Shallots*
1/2 small bowl Chili Paste*
1 cm Belacan* (* blend together)
1 tsp Tamarind paste - mix with some water
1/2 small bowl of Santan
1 Big Onion - sliced 
Salt & Sugar


METHOD:
Heat up some oil & add in blended ingredients.
Stir fry until fragrant.
Add in the tamarind juice, santan, big onion, salt & sugar.
Boil & add in egg.
Boil a while longer to ensure sambal absorbed by the egg.

Shaped Poached Eggs

We had simple breakfast in the recent weekend (late posting due to blog system problem). For those who like to try this, grease the mould & drop a tsp of butter in the middle of the mould before poaching egg into it. This way, you can unmould it easily once the egg is cooked.

Minced Beed Wrapped in Omelet

This is supposed to be an omelet parcel but my pan is not big enough. Hence I simply topped the miced beef with the omelet like the above picture.

INGREDIENTS:
4 Eggs
1 cup of Minced Beef
2 cloves Garlic*
1" Ginger* (*pounded)
1 small Big Onion - chopped
Some Chilli Padi & Red Chilli - sliced
1 Tomato - chopped
Some Mixed Veg
2 tbsp Oyster Sauce
Black Pepper powder
Salt
Water

METHOD:
1. Beat eggs with fork & season with salt & pepper.
Fry in a flat pan to make a thin omelet.

2.Heat up some oil & fry pounded ingredients.
Add in chopped onion & chillies and fry for a while.
Add in the rest of ingredients.
Add some water to make it juicy.

2. Wrap cooked minced beef in a omelet like a parcel or just top the omelet like I did above.
Serve hot with rice.

Egg, Pineapple, Potato & Salted Fish Curry

This recipe is created based on my wild appetite and what available in the kitchen. I've been keeping the salted fish from my mum for quite sometime and it is time to dispose it into the cooking pot. I cannot find "Ikan Talang masin" (name of the salted fish) in Miri, so it is kind of precious stock & cook only when the craving is high.

INGREDIENTS:
4 boiled Eggs
½ Pineapple - peeled & sliced
1 Potato - peeled & cubed
Some Salted Fish (Ikan Talang is the best)
3 tbsp Curry Powder (I used curry powder for cooking beef instead of for fish)
3 Shallots - sliced
½ pot Coconut Milk
1 each Cinnamon stick*, Star Anise*, Cardamon* & few Cloves*

METHOD:
1. Place coconut milk & curry powder in a pot & boil.
Add in potato & cook until half cooked.
Add in pineapple, salted fish & cook for 5-10 minutes.
Adding salt may not be necessary but check to taste.

2. In a small pan, heat up 2 tbsp oil & fry sliced onion & spices* until onion is golden.
Pour the whole thing into the cooked curry.

3. Serve with rice.
