Asam Sauce or known as Air Asam is a popoular Malay sauce for fish dip. Made this today to go with grilled Terubuk (Longtail Shad).

ReplyDeleteHello, recently I bought a tub of Asam Jawa Xtra Adabi. Since it's seedless, how do we gauge the amount required if a recipe requires an amount of Asam Jawa (with seeds) mixed with certain amount of water to achieve the required taste? How much to reduce if we use Asam Jawa Xtra Adabi?

ReplyDeleteI find the Asam Jawa Xtra Adabi is very concentrated that only little amount can be sufficient. Difficult to tell you exact measurement in comparison but would think 1 tsp AJ Adabi Xtra is equivalent to 1 tbsp of AJ with seeds. However, there are inconsistent content of pulps & seeds in differnet brand of AJ with seed. Malay dishes always require tasting & balancing, & measurements in recipe usually just a guide.
