Source (adapted from Steamed Coconut Blossoms): Rima
(Recipe retyped for ease of reference)
Makes 90 pcs
INGREDIENTS:
3 Cold Egg
250g Sugar (HomeKreation: reduced to 200g)
10oz Softasilk/Superfine/Hong Kong Flour
250g Sugar (HomeKreation: reduced to 200g)
10oz Softasilk/Superfine/Hong Kong Flour
2½ tsp Baking Powder
1 tbsp Ovalette
160g Coconut Cream
160g Coconut Cream
1 tsp Pandan Paste
FILLING (by HomeKreation):
100g Grated Coconut
3 tbsp Palm Sugar
2 tbsp Sugar
3 tbsp Water
1 tsp Cornflour
- Stir all in a small pot until well mixed. Cool before used.
METHOD:
1. Beat all the ingredients together, with high speed, until thick and fluffy.
2. Pipe batter into paper cup, half full.

Top up with ½ tsp coconut filling and cover with batter until almost full.
3. Steam for 15 mins with medium fire (big fire will cause it to blossom & spoil the dots).
UPDATE - To answer question on how to make the dots:
To make dots, mix some batter with different color & fill into a piping bag.
Cut just a small hole at end of the piping bag & dot it on the base batter.
Tip: to ensure the dot is a nice circle shape, pipe it in a circle instead of on one spot.

- Kacau semua dlm periuk sehingga sebati. Sejukkan sebelum di gunakan.BAHAN2:
1. Pukul kesemua bahan2 sekali gus, dgn kuasa tinggi, sehingga pekat & kembang.
2. Paipkan adunan separuh penuh ke dlm kertas muffin.

Tutup dgn adunan sehingga hampir penuh.

UNTUK MENJAWAB PERTANYAAN - CARA2 BUAT DOT:
Untuk buat dot, ambil satu bahagian dan warnakan dgn warna pilihan.
Masukkan ke dlm bag paiping & potong lubang kecil di hujung nya.
Buat lah bentuk dot di atas apam2 tadi.
Tip: Untuk mendapatkan dot yg cantik bulat, buat dot dgn gerakan circle & jgn picit setempat ... (harap2 paham... maaf takda video)

Wsalam. Along tak pasti kenapa apam yg Ina buat tu mengecut. Ini kemungkinan sebab2:
- Adunan tak di pukul sehingga betul2 gebu & pekat (adunan patut nya jatuh berlipat2 apabila di angkat). Guna kuasa tinggi supaya adunan cepat kembang.
- Air kukusan tidak betul2 menggelegak sebelum di masukkan kuih
- Air kukusan menitis ke dlm adunan sebelum sempat masak (bungkus tudung utk mengelakkan masalah ni jika menggunakan periuk kukus biasa)
Ramai yg buat apam ni guna acuan lompang tu & takda masalah.
Along harap jawapan ni dapat membantu.

ReplyDeleteHi Roz, I tried this recipe of yours but mine was a big failure. The top has many holes unlike yours so smooth. My apam dot dot didn't raise like yours so rounded, mine was very flat. Moreover, the bottom is like 'rubbery kueh' texture and my batter is quite watery. Can you please advise what went wrong? Thanks. Regards, Melody.

DeleteI'm not sure I know the answer but sounds like not enough flour... make sure you measure accurately following the recipe. Holes probably due to baking powder not sifted and not evenly mixed. Also make sure you do not overmix the flour which will eliminate the airy texture. Make sure steamer's water already rapidly boiled before placing the kuih and avoid water from dripping on it.
