This type of leaves is well known in Sarawak but not sure what it is called in other places. In Sarawak, Pucuk Buas is typically added to cooking as flavour and is one of the must ingredients in Bubur Pedas recipe. Tonight, I turned Pucuk Buas into something that is typical style in Peninsular.... i.e. kerabu, so Eastern herb + Western style. (Mind you Eastern refers to East Malaysia & similarly Western refers to West Malaysia not the West part of the globe....hehe).
Aaaaaaargh.... berselera makan nasi malam ni.....hehe

INGREDIENTS:
Some Pucuk Buas - boiled & sliced thinly
1 Young Turmeric Leaf*
Some Daun Kesum* (* sliced)
Shallots, Chilies, dried shrimps, lemongrass - pounded
Kerisik (pounded toasted coconut)
Lemon juice
Salt & Sugar
METHOD:
Mix all & ready.

Kerabu is when you mix the veg with sambal and yes it is not common in Sarawak. In Swk, they eat this herb boiled & served with sambal belacan or add to cooking for the aroma.

ReplyDeleteOrang Swak yg seorg ni suka sgt mkn kerabu. Sebnrnya byk kerabu blh kita buat klu kreatif spt kerabu pucuk paku, kacang botol, kacang panjang, taugeh, daun pegaga, jantung pisang, bunga kantan, bunga kunyit, kerabu kerang, sotong, udang,etc. Cuma mesti tau cara & campurannya.
Anyway, pucuk buas tu org kat Swak panggil pucuk singkel - bukan sesuatu yg baru pd saya.
