Cassava Cake (Kek Ubikayu) Again

 I didn't bake any fancy cake for our 24th wedding anniversary in the recent December as we were on holiday in Peninsular, backed in our hometown where we were married. As usual my hubby does not like any fancy decorated cake and everytime asked his preference will be Cassava or Tapioca Cake! He ate more than half of the cake himself (in two days)... the rest are finished off by Liana & the boys and I only ate a slice. The cup cakes were for my office mates and they all love it.

I shared the recipe several years ago in here, but paste it herewith again for refresh publication.

Size: 9" x 9" square
INGREDIENTS:
1½ cup Butter
1½ cup Caster Sugar
5 Eggs
1½ cup Plain Flour*
2 tsp Baking Powder* (*mix)
½ cup Condensed Milk
3 cup grated fresh Cassava / Tapioca - leave in sieve to drip excess juice
1 tbsp Vanilla Essence
Few drops Yellow coloring - optional 

METHOD:
1. Beat butter & sugar until fluffy.
Add in egg one by one while beating.
Add in flour gradually mix well.
Add in condensed milk, vanilla essence, yellow coloring & grated cassava, mix well each addition.
2. Bake 180C for 45-50 minutes until well cooked.

BAHASA MALAYSIA VERSION
 Ramai yg tak sangka ubikayu boleh di buat kek yang gebu.... kek ni rasa nya ala2 kek suji, amat lembut dan gebu. Kek ni kegemaran hubby Along tapi Along jarang2 buat. Kali ni buat atas permintaan hubby semperna ulang tahun perkahwinan kami yg ke 24. Hubby tak mau kek deco tapi nak kek kegemaran dia.... puas hati dia makan kek ni. Adunan ni banyak, dapat buat cupcake juga dan Along bawa ke opis kongsi dgn kekawan.

Resepi ni Along sudah kongsikan dulu di MR di sini dan juga di blog ni di sini. Ramai yg dah mencuba dan beri positive feedback. Siapa yg belum cuba, di galakkan mencuba ya.

Saiz tin: 9"x9" persegi atau bundt pan
BAHAN2: 
1½ cwn Butter 
1½ cwn Gula Kaster 
5 bj Telur
1½ cwn Tepung Gandum*
2 st Baking Powder* (*campur)
½ cwn Susu Pekat 
3 cwn Ubi Kayu Sagat - biarkan sebentar dlm tapis utk buang air 
1 sb Esen Vanilla
 Pewarna Kuning - optional 

CARA2:
1. Pukul mentega & gula sehingga kembang.

2. Masukkan telur satu demi satu dan pukul lagi sehingga sebati.
3. Masukkan tepung* sedikit demi sedikit sehingga sebati.

Masukkan susu pekat, esen, pewarna kuning, ubikayu sambil di gaul sebati setiap campuran.
4. Bakar 180C selama 45-50 minit sehingga masak.

  1. Assalam Along.. macam pernah dengar tapi baru ni nampak gambar cake. Gebu dah tu..lom rasa lagi. Satu hari nak cuba :-)
