Menu Aidil Adha 2011

SALAM AIDIL ADHA to all muslim readers....! May Allah bless you on this holy celebration!

We chose to have a quiet Raya celebration this year.... went for Raya prayer early morning and had breakfast followed by lunch and then whole family had a nap in the afternoon (weather was cool & about to rain with strong wind, just nice for relaxing)! Tomorrow will be the day of our Qurban and as usual, my hubby will be going to the mosque to watch the Qurban activities.

Our Raya menu this year is very simple....
Above photo: Pandan Kelupis, Black Chicken Rendang, Satay, Chicken Peanut Gravy, Tiramisu, Mango Dadih and some leftover layered cakes from the last Aidil Fitri.
Middle photo: Nasi Bukhari served with Black Chicken Rendang, Fried Lemongrass Lamb and Spicy Pickled Vegetables.
Bottom Photo: Bandung Selasih and Kembang Semangkuk.

Menu Hari Raya Aidil Adha tahun ni simple jer....
Gambar Teratas: Kelupis Pandan, Rendang Hitam Ayam, Sate, Kuah Kacang Ayam, Tiramisu, Dadih Mangga dan kek2 lapis (lebih Raya Aidil Fitri hari tu).
Gambar Tengah: Nasi Bukhari dengan lauk  Rendang Hitam Ayam, Daging Kambing Goreng Serai dan Acar Sayur.
Gambar Terbawah: Bandung Selasih dan Kembang Semangkuk.

Tadi tengok baby Syakirah pakai tudung baru teringat Liana pun ada gambar Raya pakai tudung pagi raya tadi tapi Along lupa nak suruh Liana interprem. Liana & Syakirah jumpa waktu umur berapa bulan dulu, kalau jumpa sekarang tentu seronok sebab kedua-dua nya dah petah bercakap kan Mamasya!

Stir-Fried Baby Kailan with Crispy Garlic

Simple dish but am sure many of you like it.... even my two boyz who do not like green will lick this to the end...hehe

INGREDIENTS:
Baby kailan
1 Red Chili
6 cloves Garlic - chopped
2 tbsp Oyster Sauce
Oil

METHOD:
1. Heat up few tbs oil & stir fry chopped garlic until crispy.
Dish out.
2. Throw in sliced chili into the leftover oil & stir for a minute.
Add in baby kailan & oyster sauce.
Cook just for a while so that veg remains green & fresh.
Dish out & sprinkle crispy garlic on top.

Resepi sayur kegemaran yang sangat mudah untuk di sediakan....

Sayur Baby Kailan dgn Bwg Putih Rangup

BAHAN2:
Sayur Baby kailan
1 bj Cili Merah - hiris 
6 ulas Bwg Putih - cincang halus
2 sb Sos Tiram
Minyak

CARA2:
1. Panasakan sedikit minyak & goreng bwg putih sehingga garing.
Angkat & ketepikan
2. Tumis cili merah dlm minyak selebih nya tadi selama seminit.
Masukkan sayur kailan & sos tiram.
Kacau sekejap sahaja, jangan sampai sayur terlebih layu.
Hidangkan & tabur bawang putih rangup.

Tapioca Kuih II ( Bingka Ubikayu II ) Again

 Made this kuih yesterday on request from a friend Cik Maria, before she leaves to Oman for her honeymoon trip. Other friends in the office also had their share and I received good feedback. Cik Maria wanted the top of the kuih burned like the one she used to buy in the olden days - somehow the top of my kuih this time was not as dark as the one I made before but quite crusty.... I made the same recipe that I posted earlier here which my hubby and I like so much.

Ini siri ulang tayang sebab member minta Along buatkan bingka yang sedap & hangus kata nya. Oleh kerana Along suka sangat resipi yg sebelum nya, maka Along pun guna ja lah resepi yg sama. Malas nak copy paste, kalau nak resepi sila rujuk kat sini ya.

Homemade Chocolate Hazelnut Spread (Sapuan Coklat & Hazelnut)

 I had few boxes of high quality Belgium chocolate which had melted and came up with an idea to convert them into chocolate spread. I also happened to have some hazelnut and it was just a perfect combination.
Recipe taken from my Hamlyn book collections:

(Makes 500g)
INGREDIENTS:
375g Milk Chocolate - melt 
125g Hazelnuts
2 tbsp Veg Oil
2 tbsp Light Brown Sugar
1 tbsp Cocoa Powder
½ tbsp Vanilla Essence

METHOD:
1. Sterilize a jar & dry out.
2. Grind hazelnuts into a paste in a food processor.
Add in oil, sugar, cocoa powder, VE & whiz to combine. 
Add in melted choc & blend until smooth.
3. Pour into sterilized jar & cover.
Leave to cool & thicken slightly before using.
4. It will keep for up to 1 month at room temperature.

BAHASA MALAYSIA VERSION
Idea nak buat ni sbb nak habiskan coklat Belgium yg dah mencair. Resepi drpd buku koleksi Hamlyn. Hasil nya sungguh sedap sekali sebab coklat Belgium yg sememang nya bermutu tinggi.

Sapuan Coklat & Hazelnut

(Hasil 500g)
BAHAN2:
375g Coklat (coklat makan yg bemutu tinggi) - cairkan
125g Hazelnuts
2 sb Minyak
2 sb Gula Perang Halus
1 sb Serbuk Koko
½ sb Esen Vanilla

BAHAN2:
1. Bilas botol kaca dgn air panas utk menyahkan kuman & keringkan.
2. Masukkan hazelnuts ke dlm food processor & kisar halus.
Masukkan minyak, koko, EV & blend.
Masukkan coklat yg sudah di cairkan & blend sehingga sebati & halus.
3. Masukkan ke dlm botol kaca tadi & di tutup.
Biarkan sejuk pd suhu bilik & pekat sebelum di gunakan.
4. Campuran ini boleh tahan selama sebulan pd suhu bilik.

Baked Chicken and Tomato Bread for Lunch

 This was our lunch in the last weekend when there was less appetite for rice.... My two boyz get thrilled for light lunch like this.

It is so simple to prepare:
1. Wash potatoes & cut four. Prick with fork & place in a covered microwave safe glass container. 
Sprinkle with paprika, parsley, ground black pepper & onion salt. 
Microwave at High for 5 minutes.
2. Rub chicken pieces with salt & place in oven safe casserole.
Place carrots & onion on top.
Sprinkle with paprika, parsley, ground black pepper, onion salt & butter dollops.
Bake at 200C for 30 minutes.
Place the microwaved potato & continue baking for another 30 minutes.
3. Serve with Tomato Bread slices and mayonnaise sauce.

BAHASA MALAYSIA VERSION
Di kala hujung minggu, kita org suka makan yg ringan2 sahaja waktu lunch, tak payah makan nasi. My two boys paling happy bila hidangkan menu macam ni.
Cara untuk menyediakan:
1. Basuh kentang & potong 4 tanpa di kupas kulit nya.
Cucuk2 dgn garfu & letak dlm mangkuk tahan panas.
Taburkan  paprika, parsley, sebuk lada hitam & onion salt.
2. Gaul ayam dgn garam & letakkan dlm bekas tahan panas.
Letakkan potongan karot & bwg besar.
Taburkan paprika, parsley, sebuk lada hitam, onion salt & butter.
Bakar pada suhu 200C selama 30 min.
Masukkan kentang tadi & bakar 30 min lagi.
3. Hidangkan dgn roti tomato & sos mayo.
