Nasi Bukhari

 Sharing another menu that I prepared for Raya recently. Quite a preparation due to long a list of ingredients but I'm not complaining since it was for a special occasion and during a long weekend.
I'm posting the recipe only in BM since it is a long one and am having neck pain again at the moment. If anyone needs it in English, please shout & will find time later to do so.

BAHASA MALAYSIA VERSION
Sesuai di hidangkan pada hari2 tertentu seperti hari raya atau jamuan khas sebab rasa yang kaya dengan berbagai bahan.

Resepi telah di ubahsuai & menggunakan sukatan cwn/sudu (resepi asal menggunakan gram)
Saiz Hidangan: 5-6 orang
BAHAN2:
3 cwn Beras Bhasmati (guna cwn utk menyukat beras) 
3 cwn Air
1 cwn Susu Cair (Evaporated) 
1/4 cwn Tomato Puri
1 sudu mkn Serbuk Jintan Putih
1 sudu mkn Rempah Kari Daging
100g Gajus - tumbuk halus 
2 biji Tomato - belah 4 
1 biji Bwg Besar
Daun Pudina
1 helai Daun Pandan
1/4 cwn Minyak Sapi
Gajus Goreng & Bwg Goreng utk hiasan
BAHAN KISAR:
5 ulas Bwg Merah
2" Halia
1 sb Jintan Manis
1 sb Jintan Putih
1 keping Kulit Kayu Manis
5 biji Buah Pelaga

CARA2:
1. Basuh beras & tapis.
2. Panaskan minyak sapi & tumis bhn kisar sehingga wangi.
Masukkan tomato puri, bwg besar, serbuk jintan, rempah kari & kacau sehingga garing.
Masukkan gajus & masak seketika.
Masukkan air, susu, tomato & beras.
3. Masukkan ke dlm rice cooker & masak seperti biasa.
Taburkan daun pudina & daun pandan apabila mendidih.
Biarkan sehingga masak.
4. Tabur bawang & gajus goreng sewaktu menghidang.
Hidangkan dgn lauk dan sayur acar.

Acar Sayur (Pickled Vegetables)

 This was one of my recent Aidil Adha menu to serve along Bukhari Rice. This veg dish is typically served during Malay wedding and special occasion - very suitable for big serving because it can stay crispy for long - in fact the longer it is kept the crispier the vegetables become.

Serves 6-8 persons
INGREDIENTS:
1 Cucumber - centre part removed & slice 
1 Carrot
2 cloves Garlic
4 small Shallots
2" Ginger
2 Red Chilies
2 Green Chilies
4 tbsp Vinegar
1½ tbsp Sugar
½ tbsp Honey
Salt
5 tbsp Chili Paste*
1 Big Onion*
2 cloves Garlic*
1" Ginger*
½  tsp Turmeric Powder*
1 Candlenut* (* blend) 

METHOD:
1. Slice all vegetables.
2.Heat up 1/4 cup oil & stir fry blended ingredients* until fragrant.
Add in sugar & honey & stir until shiny.
Add in salt, vinegar & stir until thick.
Off fire.
3. Add in all the vegetables & let it stand for 1 hour before serving to allow them to be crispy.

Sayur acar rangup ni sesuai di padankan dengan nasi minyak atau nasi berempah yg sebagai nya. Along buat ni di hari raya haji baru2 ni di pdankan dgn Nasi Bukhari.

Hidangan 6-8 orang
BAHAN2:
1 btg Timun - centre part removed & slice 
1 btg Karot
2 ulas Bwg Putih
4 ulas Bwg Merah
2" Halia
2 bj Cili Merah
2 bj Cili Hijau
4 sb Cuka
1½ sb Gula
½ sb Madu
Garam
5 sb Cili Mesin*
1 bj Bwg Besar*
2 ulas Bwg putih*
1" Halia*
½ st Kunyit*
1 bj Buah Keras* (* blend) 

CARA2:
1. Hiris semua sayuran.
2. Panaskan 1/4 cwn minyak & tumiskan bhn2 blend* sehingga wangi.
Masukkan gula, madu & kacau sehingga berkilat.
Masukkan garam, cuka & kacau sehingga pekat.
Padamkan api.
3. Masukkan sayuran dan perap selama 1 jam sebelum di hidangkan supaya sayuran rangup.

Double Cheese Chocolate Tiramisu

 I dedicate this post to a colleague Anatasia whom I have just gotten to know.... we talked passionately about food and she was drooling when I told her about my own Tiramisu recipe creation. In order to share the recipe with Anatasia, I decided to make this for Raya Aidil Adha few days ago which was also due to popular demand from the two boyz as well as a couple of good friends (Captain Hamidon & Hatta).
To imitate the soft mascarpone cheese texture (or Zabaglione), I've added whipped cream to the cream cheese mixture and the texture is almost there although taste wise my two boys still prefer Tiramisu using mascarpone cheese. I think this recipe produces lovely soft texture just the way I wanted....

I replaced the typical sponge fingers with salt-cheese crackers because I don't really like the taste & texture of sponge fingers and that is how I came up with the name "Double Cheese". Another twist I made is adding chocolate spread between each layers for an extra kick as I find the standard Tiramisu is just boring plain cheesy taste. The overall outcome is really awesome....!!!

Makes 10"x6" or 8" sq
INGREDIENTS:
2 packs (16oz/500g) of Cream Cheese
½ cup Sugar
Salt-cheese Crackers
200ml Whipping Cream - whipped until stiff - see photo
1 tsp Vanilla Essence
3 tbsp Nescafe + 1 cup Hot Water
2 packet Salt-cheese Crackers (didn't use all) 
1 cup Chocolate Hazelnut Spread - I used homemade from here 
Cocoa Powder

METHOD:
1. Beat cream cheese & sugar until smooth.
Mix in whipped cream & mix well.
Add in VE.


2. Lightly grease a glass container.
a. Dip salt-cheese crackers in nescafe mixture, just for a second and arrange in the container base.
b. Spread Chocolate Hazelnut Spread to cover the biscuit layer.
c. Spread cream cheese mixture to cover the whole area.
d. Repeat layering with biscuits --> choc spread --> cream cheese mixture.
e. Lastly, sprinkle cocoa powder on the top surface (sprinkle more cocoa powder before serve).

3. Chill overnight before serve.

Resipi ni dah lama Along hasilkan & sangat popular kat rumah ni dgn anak2 Along. Kalau buat sekejap jer licin, juga kawan2 rapat Along yg selalu jer dapat merasa setiap kali Along buat ni. Resipi ni Along tujukan kepada kenalan baru Anatasia drpd jabatan tempat kerja. Juga Along tujukan kepada E-na@Lovely Kitchen, Nor@Secubit Garam dan Fiza Nordin yg usya2 Along kat facebook waktu Along tayang menu Hari Raya Haji beberapa hari lalu.

Resepi Tiramisu ni ada kelainan sebab Along tak guna sponge fingers (Along tak suka rasa & tekstur nya) tapi menggunakan biskut keju masin, menjadikan Tiramisu ni double cheese flavour! Juga ada lapisan chocolate supaya tidak jemu dgn hanya rasa cheese. Tekstur cream cheese nya pula Along lembutkan dgn mencampurkan whipped cream supaya lembut ala2 mascarpone cheese walaupun dari segi rasa mungkin tak sama dgn mascarpone cheese yg lebih di gemari oleh anak2 Along (they all ni pasal makan memang pandai komen...).

ok lah, meh semak resepi nya.

Saiz bekas 10"x6" atau 8"persegi
BAHAN2:
2 kotak (16oz/500g) Cream Cheese
½ cwn Gula
Salt-cheese Crackers
200ml Whipping Cream - pukul sehingga bertanduk spt gambar di bawah
1 st Esen Vanilla
3 sb Nescafe + 1 cwn Air Panas
2 bungkus Salt-cheese Crackers (tak habis semua)
1 cwn Chocolate Hazelnut Spread - Along guna homemade kat sini
Serbuk Koko

CARA2:
1. Pukul cream cheese & gula sehingga sebati.
Masukkan whipped cream yg telah di pukul bertanduk sehingga sebati.
Masukkan EV.

2. Sapu butter di dasar bekas.
a. Celup salt-cheese crackers ke dlm bancuhan nescafe selama 1 saat & susun di dasar bekas.
b. Sapu Chocolate Hazelnut Spread sehingga menutupi lapisan biskut.
c. Sapu cream cheese menutupi lapisan seterus nya.
d. Ulangi melapis biskut --> choc spread --> cream cheese.
e. Akhir sekali ayakkan serbuk koko di atas permukaan Tiramisu (boleh di tambah sewaktu menghidang).

3. Sejukkan semalaman sebelum di hidangkan.

Bandung Selasih & Kembang Semangkuk

 Just to show you how Kembang Semangkuk looks like below in case anyone has not seen/eaten it before. I don't know what is the dried fruit called in English. To prepare, soak the fruit in a bowl of water and it will be fully opened up after 10-15 minutes.

To prepare the Bandung, mix evaporated milk, rose syrup, ice, soaked basil seeds & Kembang Semangkuk..... very cooling! The Malay old folks said this drink can cool down overheated body.

Fried Fish in Mango Sauce (Ikan Belanak dgn Sos Mangga)

 This is a menu before Raya Aidil Adha but didn't manage to update then. Kids like sweet & sour dish but wanted to create something almost similar using mango in the sauce (I have plenty of mangoes from my backyard). Outcome was very tasty dish!

INGREDIENTS:
2 Whole Fish
1 tsp Turmeric Powder
1" Ginger*
4 cloves Garlic* (* pounded) 
2 tbsp Chili Paste
1/4 cup Thai Chili Sauce
1/3 cup Grated Mango - blended with some water 
1 Big Onion - sliced 
1/2 cup Frozen Mixed Veg
Salt & Sugar

METHOD:
1. Rub cleaned fish with salt & turmeric powder.
Deep fry until ooked.
Dish out onto a serving plate.

2. Heat up 3 tbsp oil & stir fry pounded ingredients until fragrant.
Add in chili paste & stir fry for a minute.
Add in Thai chili sauce, mango juice & cook until thicken.
Season with salt & sugar.
Add in big onion, mixed veg & cook for another minute.
Pour over the fish & serve right away with white rice.

BAHASA MALAYSIA VERSION
Anda boleh cuba masukkan mangga yg di kisar ke dalam masakan Sweet & Sour dan rasa nya sungguh enak... cuba lah. Kebetulan rumah ni banyak mangga drpd pokok di belakang rumah, itu lah Along dapat idea ni.

BAHAN2:
2 ekor Ikan Belanak
1 st Serbuk Kunyit
1" Halia*
4 ulas Bwg Putih* (* tumbuk) 
2 sb Cili Mesin
1/4 cwn Sos Cili Thai
1/3 cwn Mangga Parut - blend dgn sedikit air
1 bj Bwg Besar - hiris
1/2 cwn Sayur Campur Beku
Garam & Gula

CARA2:
1. Lumur ikan dgn garam & kunyit & goreng sehingga masak.
Angkat & letak dalam pinggan hidangan.

2. Panaskan 3 sb minyak & tumis bhn tumbuk sehingga wangi.
Masukkan cili kisar & kacau sehingga wangi.
Masukkan sos cili Thai, jus mangga, garam & gula - masak sehingga pekat.
Masukkan bwg besar & sayur campur - masak sekejap.
Tuangkan ke atas ikan tadi & hidangkan segera dgn nasi putih.
