Shepherd's Pie - my style

 Typically Sheppherd's Pie uses pre-cooked minced meat but I like mine with chunky beef.... I used raw meat and let it simmer in the oven with the rest... It produces delicious moist bottom filling with slight gravy just the way I like it.... The meat is tender and the vegetables complement it very well. This recipe is also the simplest Shepherd's Pie to make and definitely the most delicious for me.... I've been using this recipe that I've created for almost 30 years and still the best!


The recipe I made recently is just a small portion, you can double it if you like. This is no fuss recipe so you can add other vegetables of choice and your preferred herbs & seasonings.

Produces: 5" x 8" casserole (serves 3-4 persons)
INGREDIENTS:
200g Beef - cut into ~1cm cubes
Assorted Vegetables cut into chunks - I used Big Onion, Carrot, Pumpkin & Peas - other choices can be Potatoes, Mushrooms, Cauliflower, Leek, Turnips, etc
1/4 to 1/2 cup Water
1 tbsp Butter
1 tbsp Flour
1/4 cup Milk
1/4 tsp Maggee Chicken Stock
Seasoning - Salt, Pepper, Chili Flakes, Mixed Herbs
Few drops of Browning (optional) - to give nice brown color effect
TOPPING:
Mash potato - u can use homemade or instant - I prefer instant as it produces very smooth texture, see the sample that I used below
Grated Cheddar Cheese

METHOD:
1. Melt butter and add in flour stirring until the color change slightly.
Add in milk and stir until smooth.
2. Mix all ingredients, except the mashed potato, and pour into a buttered casserole.
3. Prepare the mashed potato topping per packet instruction and spread on top of the beef filling.
To make your own topping, mash boiled potato and add few tbsp of milk at a time until it produces the required consistency. Add a tbsp of butter and season with black pepper and mixed herbs.
4. Sprinkle grated cheese on top.
5. Bake at 180C for 45 minutes.

BAHASA MALAYSIA VERSION
Sheperd's Pie yg Along buat ni lain dari yg selalu kita lihat... Kebiasaan nya lapisan bawah tu ialah daging cincang yg telah di masak sebelum di bakar... tapi Along lebih suka menggunakan ketulan daging yg belum di masak (ia pasti akan masak dgn lembut, jangan risau) dan Along lebih suka lapisan bawah tu lembab atau berkuah sedikit seperti stew, barulah cair jer dlm mulut bila makan dgn lapisan kentang lecek tu....heheee. Along reka resepi ni sudah hampir 30 tahun lalu dan masih resepi yg paling Along sukai... Sila lah cuba dan semuga anda juga menyukai nya.

Cara seperti ni juga amat mudah dan cepat di sediakan. Resepi ni tidak cerewet dan bahan2 nya boleh di ubahsuai ikut apa yg ada di dapur anda. Along buat bekas kecil jer kali ni, anda boleh gandakan untuk hidangan yg lebih ramai.

Saiz bekas: 5" x 8" casserole (hidangan 3-4 org)
BAHAN2:
200g DAging Lembu - potong kiub ~1cm
Sayuran di potong kiub - kali ni Along guna Bawang Besar, Karot, Labu & Kacang Peas - cadangan utk pilihan yg lain ialah kentang, cendawan, cauliflower, leek, sengkuang, dll
1/4 - 1/2 cwn Air
1 sb Butter
1 sb Flour
1/4 cwn Susu Fresh
1/4 st Maggee Chicken Stock
Perisa - Garam, Lada Hitam, Cili Flakes, Mixed Herbs
Beberapa titik Browning (optional) - supaya cantik warna
TOPPING:
Kentang Lecek - boleh guna homemade atau instant - Along suka instant sbb tekstur nya lebih halus dan lembut - boleh lihat contoh peket yg Along guna kat gambar atas
Parutan Cheddar Cheese

CARA2:
1. Cairkan butter dan masukkan tepung, dikacau sehingga sedikit keperangan.
Masukkan susu dan kacau sehingga rata.
2. Campurkan kesemua bahan2 dan tuang ke dlm bekas tahan panas yg telah di sapu butter.
3. Sediakan kentang lecek, ikut arahan spt tertera di bungkusan dan ratakan ke atas inti daging tadi.
Jika nak buat homemade topping, lecek kentang rebus, campurkan susu sedikit2 sehingga lembut. Campurkan 1 sb butter, serbuk lada & herba.
4. Tabur parutan cheese dan bakar 180C selama 45 minit.
