Coconut Scones

Simple kuih for our breakfast today. My hubby was rushing to send his car for service but I stopped him until the breakfast was ready. It took me only 5 minutes to mix & 5 minutes to cook few pieces for him.

Source (with compliments): AG's Food (original name of the kuih is Winko Babat & translated into English herewith)
Makes about 10 pieces
150g Glutinous Flour
300g Grated Coconut
150g Sugar (I'll reduce this if I make it again next time)
1tsp Vanilla Essence
1 Egg
1/2 tsp Salt
100ml Coconut Cream

1. Mix all ingredients.

2. Pour a big scoop onto non-stick griddle/pan (can also oil it a bit too).
(I used egg rigs to ensure even size & nice round shape)
The one below is one sample that I cooked without egg ring:
Flip frequently until cooked.

3. ....ready!

    I'm too lazy for breakfast, even to eat.

    I will never categorise you into a lazy group.... Anyway, this is super fast to make - mix, bake & eat right away. On contrary I'm in eating mood every morning but not lunch.

    Gulp! coconut scone..guna tepung pulut? teringat satu kuih ni, nama apa dah lupa, tapi sedap,manis2 gitu.

    Wsalam. Saja Along modenkan nama dia. Org Melayu panggil lempeng kelapa ler...hehe.

    Sama lah cam lempeng cuma tambah bahan & tebalkan sikit...

    Wsalam. Tak sama langsung cam scone bun tp English muffin ada yg masak atas griddle, sbb tu Along panggil yg ini scone.
