Chicken Soup

This is Malay style Chicken Soup but less spicy with elimination of black pepper and chillies. Serve with hot soy sauce for hotter twist if needed. Mild soup are much enjoyed by the children and my hubby when they were not in a mood for rice.

INGREDIENTS:
½ Chicken - cut to pieces
1 Potato - diced
1 Carrot - diced
Some dry Mushroom & Fungus - soaked
3 Shallots*
2 cloves Garlic*
1" Ginger*
1 tbsp Soup Spice Powder* (*blended)
Mixed Spices
Water sufficiently
1 tbs Cornflour - add some water to form paste
Salt & MSG
Spring Onion & Celery - chopped
Fried Shallots

METHOD:
1. Heat up few tbsp oil & fry mixed spices and the blended ingredients.
Stir fry until fragrant & add water sufficiently.
Add in chicken, potato, carrot, mushroom & fungus.
Boil until chicken & vegetables are tender.
Add salt & MSG & thicken with cornflour.
Boil for shortwhile more.

2. Serve & sprinkle spring onion, celery & fried shallots.

Black Pepper Beef Liver

Dah lama sangat hati kerbau ni dok dalam freezer, so hari ni kita korban kan je lah...

BAHAN-BAHAN:
300-400g Hati Lembu/Kerbau
1 sb Lada Hitam*
1 sb Jintan Manis*
5 ulas Bawang Merah*
2 ulas Bawang Putih*
½ " Halia* (* blender)
1" Halia**
1 biji Bawang Besar**
1 biji Cili Hijau**
1 biji Capsicum Hijau**
1 biji Tomato** (** Hiris/belah)
Garam, gula & msg (kalau suka)

CARA-CARA:
Panaskan minyak & tumis bahan yg di blender sehingga wangi.
Masukkan hati & goreng sehingga lembut.
Masukkan garam, gula, msg & bahan2 yg di hiris/potong.
Kacau sebentar.
Siap untuk di hidang dgn nasi....!

Bubur Kacang (Mung Beans Dessert)

Kelmarin buat donat untuk hilangkan kempunan sendiri. Hari ni buat Bubur Kacang untuk hilangkan kempunan sang hb lak. Dah seminggu dok sebut2, hari ni baru sempat nak buat sebab kelapa susah lak nak dapat musim2 hujan ni.

Nak resipi ke? Isyk, senang bebeno nak buat ni.....

BAHAN-BAHAN:
1 cawan Kacang Hijau
1 mangkuk Santan Pekat
Gula Pasir & Gula Merah secukup rasa
½ st Garam
1 helai Daun Pandan

CARA-CARA:
Basuh & rebus kacang hijau sehingga betul2 kembang & lembut.
Masukkan santan, gula, garam & daun pandan yg di simpul.
Masak sehingga mendidih.
Siap....!

Ice Lemon Tea

Even though wheather has been cold & wet late weeks, my throat felt so dry & thirsty. Must be the left over effect from the recent sore throat.

I never like any citrus fruits, drink or any food with that content. My sore throat was prolonged for weeks despite two rounds of anti biotic prescribed by the clinic & the doctor advise me not to consume any dairies in order to reduce development of phlegm. That means I cannot drink my favourite Teh Tarek....! Then one day, when I was patronising one restaurant, the owner insist that I should drink his so claimed tasty hot lemon tea. Although hesitated I agreed to give it a try.... Gheee... I'm glad that I tried... it was nice indeed and also very soothing. Ever since, I drink hot lemon tea everyday as it not only helps with my sore throat but also contains vitamin C which my body needs at the moment.

So today, I made my very first Ice Lemon Tea....hahaha.... just a story to share.

INGREDIENTS:
A glass of sweeten Tea
Few slices of Lemon
Ice Cubes

Mix them all & serve...!

Doughnuts

Hari ni bangun pagi2 lagi dah nguli donat. Air liur kempunan dah meleleh-leleh berapa hari dah ni...pegi rumah ke rumah baru2 ni sume ada donat lak... Walau pun masak nasi lemak utk sarapan, buat juga lah donat ni utk lepas kempunan....huhuhu.

Along buat donat cuma bila balik kampung sebab demand memang tinggi. Selalu nya kalau buat tak pernah buat sikit, sekilo atau 2 kilo tepung, itu pun kekadang tak cukup you. Tak menang tangan nak menggoreng, angkat je terus kena serbu, hehehe.

Nak buat donat ni, sukatan tak perlu tepat, lebih kurang je pun jadi. Kat rumah sendiri tak pernah pun buat donat sebab "bahan2 asli" susah nak dapat kat Miri ni. Kat kampung, Along guna yis basah & hanya guna tepung gandum biasa tapi donut dia memang lembut sampai ke petang. Ini kes kempunan punya pasal, kita buat lah jugak tapi modify guna "bahan2 moden" seperti jenis tepung, yis segera & pelembut. Along buat tadi tu, Along agak2 je & lepas tu sukat supaya senang nak share resipi kat sini.

Lagi satu, bahan salut tu Along guna campuran gula & susu tepung supaya rasanya kurang manis tapi lemak2 gitu...

Here it goes.....

BAHAN-BAHAN:
300g Tepung Protin Tinggi* (cun2 byk ni je yg ada)
60g Tepung Hong Kong* (* kat kampung guna tpg gandum biasa je)
2 sb / 30g Gula Kastor
½ st Garam
6g Yis Segera (kat kampung guna yis basah)
½ st Bread Softener (tak letak pun takpe)
25g Susu Tepung
15g Shortening**
15g Butter** (**kalau kat kampung guna majerin je)
½ biji Telur
+/-175ml Air Suam

BAHAN SALUT:
4 sb Gula pasir* - mesin & ayak
4 sb Susu Tepung* (*campur)

CARA-CARA:
1. Gaul semua bahan2 kering dgn shortening & butter sehingga berderai.
Masukkan telur & air suam sehingga menjadi doh yg lembut.
Uli sehingga licin.
Perap selama 30-40 minit sehingga naik 2x ganda.
(Tadi cuaca sejuk sbb musim hujan, jd Along masukkan ke dlm oven 5ÂșC).

2. Uli semula doh & canaikan.
Terap dgn acuan donut.
Kalau takde acuan, bulat2kan & cocok di tengah2 dgn jari & bentukkan spt donat.

3. Biarkan selama 15-20 minit sehingga mengembang.
Goreng sehingga keperangan.
Salut dgn campuran gula & susu.
Boleh juga di salut dgn coklat & manik.
