Durian Ice Cream (Aiskrim Durian)

  This may be the last series of durian menu from me this season... Actually I have more durian menu in mind but hubby already given me a strict instruction to rest - he said I've been working too hard in office and at home and must take some time to relax, no more unnecessary baking until end of the year... what a lovely hubby who cares... so I will try to obey....
  I created this ice cream from leftover durian crepe filling that I made earlier and to my surprise it is so delicious! No durian ice cream from the supermarket can beat this rich durian filled ice cream! My hubby was so impressed too!

INGREDIENTS:
250ml Milk
1½ tbsp Custard Flour
2 tbsp Sugar
¼ tsp Salt
1 Egg Yolk
200g Durian Flesh
200ml Non-dairy Whipping Cream


 METHOD:
1. Combine all ingredients, except whipping cream, until smooth.
Cook above small fire until thickened. Cool.
2. Whip the cream until stiff.

Add into the durian custard & mix well.
Place into a container and freeze for a day.
3.  Place ice-cream into a food processor & blend until smooth.
Place into a container & freeze again for another day.
4. Scoop out & serve!

Amacam... teringin tak Aiskrim Durian yang Along buat ni....? CikManggis dah dua kali tanya bila Along nak publish Aiskrim Durian ni. Along buat dah seminggu tapi belum sempat nak hidangkan, lagipun masih banyak entri2 sebelum nya yg beratur untuk di tayangkan - al-maklum tuan rumah ni cuma sempat buat satu entri untuk satu hari di sebabkan kesuntukan masa - cuma sedikit masa jer yg luang waktu malam.

Sebenar nya aiskrim ni Along hasilkan dari lebihan krim inti durian crepe hari tu. Banyak lebih, sayang nya jadi Along modify buat asikrim.... tak sangka sedap sesangat! Buat sendiri boleh lah tarok durian banyak2, tak macam yg di jual di kedai kan... uuuuuiiiiiiiiiihhhh.... sedap tau!

250ml Susu Cair
1½ sb Tepung Kastad
2 sb Gula Pasir
¼ st Garam
1 biji Kuning Telur
200g Isi Durian
200ml Non-dairy Whip Cream

 
CARA2:
1. Satukan kesemua bahan, kecuali whip cream, sehingga sebati.
Masak sehingga kental dgn api kecil.
Sejukkan.
2. Pukul whip cream sehingga bertanduk.
Satukan dgn kastad tadi sehingga sebati.

Masukkan ke dalam bekas & bekukan sehari.
3. Masukkan aiskrim ke dalam food processor & blend sehingga gebu.
Masukkan ke dalam bekas & bekukan sehari lagi.
Sedia untuk di hidangkan!

TIPS:
Untuk dapatkan aiskrim yg cantik bulat licin, pastikan yg aiskrim betul2 beku dan celupkan scoop ke dalam air sebelum ceduk aiskrim.

Bingka Durian

 Durian... durian.... durian... yes and more to come! I am enjoying the durian season as much as I can. This was made coupled with the Durian Cream Puffs that I posted yesterday for sharing in the office. Very good feedback received from many including of course my loyal supporter... my hubby!

The kuih has smooth texture, moderate sweetness and lovely durian aroma + flavour!

Makes: 9" sq
INGREDIENTS:
4 Eggs
350g Sugar
350g Flour
350g Durian Flesh
2 tbsp Rice Flour
400ml Coconut Milk (from packet)
300ml Water
2 tbsp Melted Butter
½ st Salt
Yellow Coloring

METHOD:
1. Place all ingredients in a food processor/blender until smooth.
2. Pour into a tin lined with greased aluminium foiled.
3. Bake 180C for 1 hour or until fully cooked.
4. Cool the kuih before slicing.

Lagi menu durian.... masih syok sendiri dengan kenikmatan durian.... macam2 lagi rasa nya nak buat dengan durian cuma masa tak mengizinkan. Kuih bingka ni Along bubuh durian banyak2 & rasa nya mmmmmmmm.... memang lemak berkrim dengan rasa durian asli, kuih nya pula licin lembut dan sedap tekak menelan nya....hehehe. Buat ni sewaktu dengan krim puff yg Along siarkan kelmarin daripada durian pemberian David. Kuih ni memang best.....!

Saiz: 9" persegi
BAHAN2:
4 biji Telur
350g Gula Pasir
350g Tepung Gandum
350g Isi Durian 
2 sb Tepung Beras
400ml Santan Kotak
300ml Air
2 sb Mentega Cair
½ st Garam
Pewarna Kuning

CARA2:
1. Masukkan kesemua bahan2 ke dalam food processor / blender sehingga sebati.
2. Tuangkan ke dlm tin yg di lapik kertas aluminium & di minyakkan.
3. Bakar 180C selama 1 jam atau sehingga masak & garing permukaan nya.
4. Sejukkan sebelum di potong.

Durian Cream Puffs

 My dear good friend, David delivered a box full of durian fresh from his FIL's farm, straight to my house the moment they arrived from Kuching. It was such a good quality of durian with very small seed and creamy flesh. He has been craving for my durian cream puffs since the last time I served during Liana's bithday party. This time he can sure giggle to satisfaction as I delivered a box of durian cream puffs in return.... good to know the whole family & his friend enjoyed it so much. Apart from that, our office mates were delighted to have some share too.

Makes >30pcs
INGREDIENTS:
250ml Water
½ tsp Sugar
100g Butter
125g Self-raising Flour or Plain Flour+ 2tsp Baking Powder
3 Eggs

METHOD:
1.Place water, sugar & butter in a pan and boil.
Off fire, add in flour until well mixed.
Cool it and beat in egg one by one until well mixed.
2. Pipe onto baking tray.
3. Bake 220C for 30 minutes until well puffed-up and golden color.
4. Cool on rack and inject with durian cream.

DURIAN CREAM (by Roz@HomeKreation):
Whisk 200ml cream until stiff.
Pureed about 8-10 durian pulps & mix well into the whisked cream.
Ready to be used.

Sedap tak terkata.... anak2 & hubby memang fevret sangat & dah banyak kali suruh Along buatkan lagi. Last sekali buat waktu birthday Liana bulam Mei lepas. Memang habis licin seketul pun tak tinggal, laku betul waktu parti Liana tu. Kali ni, member office kasi sekotak durian sebab dia teringin sangat nak makan lagi sebab tak puas makan waktu parti tu. Along pun buatkan lah & kali ni buat dua bancuhan, memang puas semua kekawan, hubby & anak2 makan kali ni.

BAHAN2:
250ml Air
½ st Gula
100g Butter
125g Tepung Naik Sendiri / Tepung Gandum+Baking Powder
3 bj Telur

CARA2:
1. Masukkan air, gula & butter ke dalam periuk & didihkan.
Tutup api, masukkan tepung & kacau sehingga sebati.
Sejukkan & masukkan telur satu-persatu sambil di pukul sebati.
2. paipkan ke ats dulang pembakar.
3. Bakar 220C selama 30 minit sehingga kembang & berwarna perang.
4. Sejukkan puffs & kemudian inject durian krim.

DURIAN KRIM (by AlongRoz):
Pukul 200ml krim sehingga kental.
Blend 8-10 ulas isi durian & campurkan ke dalam krim.
Sedia untuk di gunakan.

Bubur Ca-Ca Durian

 I am still enjoying the durian season.... there are so many types of delicious food that can be created from durian. Here is Bubur Ca-Ca with durian touch... such a lovely dessert to be enjoyed in the afternoon tea with cup of coffee. Just gotten the Ca-Ca bits from lovely sis Marina recently, thanks so much... love ya! My hubby & two boys love this dessert so much.

INGREDIENTS:
½ packet Bubur Ca-Ca bits
10 Durian Pulp with Seeds
½ pot of Coconut Milk 
White Sugar
1 tbsp Palm Sugar
1 Screwpine Leaf
½ tsp Salt

METHOD:
1. Boil Bubur Ca Ca bits until soft & drain.
2. Place all remaining ingredients in a pot & boil.
Add in the cooked Ca-Ca bits & cook for further 5 minutes.
4. Serve warm.

Musim2 durian ni semua makanan kalau boleh nak letak durian.... memang syok kalau dah hantu durian. Durian pula dah turun harga, berlambak2 sekarang ni. Ada pula bubur CaCa kering pemberian sahabat, so apa lagi.... jadilah Bubur Ca-Ca Durian! Sedap nya......

BAHAN2:
½ bungkus Bubur Ca-Ca kering
10 ulas Isi Durian dgn biji
½ periuk Santan
Gula secukup manis
1 sb Gula Kabung
1 helai Daun Pandan
½ st Garam

CARA2:
1. Rebus Ca-Ca sehingga lembut & tapis.
2. Masukkan kesemua bahan2 lain ke dlm periuk & masak sehingga mendidih.
Masukkan Ca-ca yg telah di rebus tadi & masak 5 minit lagi.
4. Hidangkan suam.


Stir Fried Mushroom (Cendawan Goreng Daun Selasih)

 Not sure what the name of the mushroom.... it was a gift from sis Marina when she visited Miri last week. It kept well in fridge - just wrap with newspaper - leaving in a plastic bag will make it soggy. I stir fried it with garlic and basil leaves and it was crispy and delicious! Thanks so much sis Marina for your kind thought!

INGREDIENTS:
1 bunch Mushroom (like the above photo) 
3 cloves Garlic - chopped 
1 Red Chili - sliced 
1 tsp Nampla / Fish Sauce
Basil Leaves
Salt

METHOD:
1. Heat up few tbsp oil & stir-fry garlic & sliced chili until fragrant.
Add in rest of ingredients, few tbsp water and stir until mushroom is cooked.
2. Serve immediately with rice and other dishes.... nyummy!

Tak tau pula apa nama cendawan halus ni... sedap nya Along masak goreng simple macam ni, diharumkan dgn daun selasih & bwg putih, rangup lah cendawan ni. TQ so much sis Marina yg hadiahkan pada Along waktu dia datang ke Miri minggu lepas.

1 ikat Cendawan halus spt gambar di atas
3 ulas Bwg putih - cincang 
1 bj Cili Merah - hiris 
1 st Nampla / Sos Ikan
Daun Selasih
Garam

CARA2:
1. Panasakan sedikit minyak & tumis bwg putih & cili sehingga garing.
Masukkan kesemua bahan2 yg lain, sedikit air & kacau sehingga cendawan masak.
2. Hidangkan segera dgn nasi putih & lauk lain.
