Pandan Bread Pudding (Bingka Roti Pandan Bakar)

 I had more than a loaf of stale bread leftover from the week.... bread pudding is always a solution to it! This time I made it with pandan flavour.... wow.... really nice aroma!

Yield 8" square
INGREDIENTS:
1 cup Sugar
1 cup Coconut Milk
2¼ cup Pandan Juice (blend 8 leaves with water & sieve) 
2 tbsp Butter
3 Eggs
1/2 tsp Salt
1 tbsp Pandan Paste
14 slices (520g) Bread - cubed 

METHOD:
1. Blend all ingredients, except bread, until well mixed.
Pour onto bread & soak for 5 minutes.
2. Pour 1 tbsp oil into tin & pre-heat in oven.
Rub the mixture with fingers & pour into tin.
3. Sprinkle sesame seeds & bake 180C for 1 hour.

 Assalamualaikum kekawan..... meh buat binga roti pandan ni.... sedap nya.... sangat harum dan rasa nya lemak2 sederhana manis, sesuai untuk sarapan atau minum petang.

Ada lebihan roti... entah camna teringin nak makan perisa pandan... dapat idea nak convert Kuih Bakar pandan Joayee jadi bingka roti... so Along gantikan tepung gandum tu dgn roti dan modify sedikit sebanyak resepi nya. Thanks Joayee sebab resepi Kuih Bakar tu mmg Along dah buat byk kali.

Saiz: 8" persegi
BAHAN2:
1 cwn Gula
1 cwn Santan
cwn Air Daun Pandan Juice (blend 8 helai dgn air & tapis) 
2 sb Butter
3 bj Telur
1/2 st Garam
1 sb Pes Pandan
14 keping (520g) Roti -potong kecil

CARA2:
1. Blend kesemua bahan, kecuali roti, sehingga sebati.
Tuangkan ke atas roti & rendam sebentar selama 5 minit.
2. Tuangkan 1 sb minyak ke dlm tin & panaskan di dlm oven.
Ramas adunan tadi & tuangkan ke dlm tin.
3. Tabur biji bijan & bakar 180C selama 1 jam.

Checkerboard Cake for Birthday

 June is a very special month for my family because three members of the family were borned in June plus Father's Day is in June as well. This year I decided to bake a birthday cake for all three of us.... AlongRiz bought a checkerboard cake pans from USA for me a year ago which had not been used and therefore gave me an immediate solution without having to think too much of what choice of cake.

Yields 9" round
INGREDIENTS:
5oz Semi-sweet Chocolate - melt & cool slightly (original recipe only 3oz) 
1 cup (227g) Butter
2 cup Sugar
4 Eggs
1 tbsp Vanilla Essence
4 cup Flour*
3 tsp Baking Powder*
1/2 tsp Salt* (* combined) 
1 1/3 cup Milk

METHOD:
1. Cream butter & sugar until white.
Add eggs one at a time, beating after each addition.
Add vanilla essence.
2. Add flour mixture* and milk alternately until well mixed.
3. Divide batter into two equal portions.
Mix chocolate into one portion (I purposely let the chocolate chunks instead of smooth mix).
4. Pour into three checkerboard pans following the box instructions (see step by step illustrations below).
5. Bake at 160C for 25 minutes and cool.
Stack up cake with chocolate ganache in between.
Coat cake all over with topping and decorate per your preference.

CHOCOLATE TOPPING

250g Cooking Chocolate
1 tin (170g) Nestle cream
1 tbsp Butter
- Cook until melted & smooth.
- Use immediately.

Tahun ni teringin nak buat kek birthday sendiri walaupun dalam keadaan yg amat kesibukan... Alhamdulillah tercapai juga hasrat walaupun comot jer kek yg Along buat ni. Kek ni semperrna harijadi Along, hubby dan AngaRuz yg lahir dlm bulan Jun. Sedih nya AngahRuz takda di Miri untuk sama2 potong kek tu sebab dia belajar di KL, Along cuma poskan gambar kek untuk nya pada tarikh lahir nya.

 Acuan Kek Checkerboard ni AlongRiz beli dari USA dah setahun lalu dan baru sekarang Along berkesempatan nak gunakan nya. Senang je nak buat nya, boleh tengok step-by-step yg Along tunjukkan di gambar2 bawah ni.

CARA2:
1. Pukul butter & gula sehingga putih.
Masukkan telur sebiji2 sambil di pukul rata.
Masukkan vanilla essence.
2. Masukkan campuran tepung & susu berselang-seli sehingga sebati.
3. Bahagi adunan kepada dua bahagian.
Campurkan coklat kepada satu bahagian (Along sengaja biar coklat berketul2 sikit).
4. Paipkan ke dalam acuan checkerboard seperti arahan di kotak (lihat gambar step-by-step kat bawah).
5. Bakar 160C selama 25 minit dan sejukkan.
Lapiskan ketiga2 biji kek selang-seli warna dgn topping coklat.
Sapu topping coklat ke serata kek & hias.

CHOCOLATE TOPPING

250g Cooking Chocolate
1 tin (170g) Nestle cream
1 sb Butter
- Masak sehingga cair. Sapukan ke atas kek dgn segera.

1. Prepare batter & pan.
Sediakan adunan dan acuan

2. Pipe two batters alternately as shown.
Paipkan adunan selang-seli warna spt di tunjukkan

3. Carefully remove the divider.
Perlahan2 angkat divider.

4. Pour batter into 3 tins in above alternate colors.
Buat 3 tin dengan selangi warna spt rajah

5. 3 cakes baked & unmouded.
3 biji kek yg sudah siap di bakar

6. Stack the 3 cakes with choc ganache in between
Lapiskan ketiga2 biji kek dgn coklat topping

7. Coat cake all over with choc ganache.
Sapukan coklat topping ke serata kek

TQ for Wishing Me on My Birthday

To all relatives, friends and readers..... thank-you so much for all well wishes on my birthday sent through sms, facebooks, messages and emails! It was such a wonderful day and feel so blessed with your presence in my life!

Assalamualaikum wmh..... Syukur alhamdulillah atas kurniaan Allah dapat bernafas sehingga ke hari ini dengan nikmat kesihatan, rezeki dan kebahagiaan.... Terima-kasih tidak terhingga kepada sedara-mara dan kekawan yg menghantar ucapan dan doa melalui FB, SMS, emails & PMs.... Alhamdulillah tahun ini Along menyambut hari jadi dengan amat gembira dan ceria nya....!

Di sini Along abadikan kenangan Harijadi 2013.....

Kek Harijadi tahun ni Along buat sendiri.... khas untuk kami bertiga... Mama, Abah & Angah... all borned in Jun! Hubby gave us dinner treat at restaurant but didn't snap photo.... :(

Kat opis pula, my team surprised me with Secret Recipe Macadamia Cake which is my favourite! I was having a discussion with one team member when suddenly I was interrupted by Ramon saying there is something urgent... all sudden the whole team ambushed me with a cake, birthday song and well wishes! Was really happy with such appreciation by the team.... thanks so much!

On the very day.... Along terima parcel hadiah buku resipi dari seorang sahabat lama. Suka nya dapat hadiah buku resipi.... ada lebih 400 pelbagai jenis makanan.... insyaallah akan Along kongsikan bila mencuba nya nanti! TQ so much my lovely friend for your thought!


A bouquet of red roses was delivered by florist on the day..... came from my best lovely friend, Audrey from KL. thanks so much dear who never failed to send me flowers every year! Such a sweet thought!

Tomato Rice (Nasi Tomato)

 I was thinking for rich and flavorful rice and this was what I cooked last week for breaking off fast.... The Tomato Rice was served with Veg Dhal, Spicy Fried Rice and Cucumber Salad dressed with dates vinegar (a gift from a lovely friend).

Serves 3-4 persons
INGREDIENTS:
2 cups Basmati Rice - wash & drain
2 tbsp Butter / Margarine
Mixed Spices (Cinnamon, Star Anise, Cardamon, Cloves)
4 Shallots*
1 cloves Garlic* (*chopped) 
2" Ginger - bruised 
3-4 tbsp Tomato Puree
1 cup Evaporated Milk
2 cup Water
1 stalk Mint Leaves - chopped 
1 Pandan Leaf - knotted 
1 tsp Sugar, 1 tsp Salt

METHOD:
1. Heat up butter & stir-fry mixed spices & chopped shallots & garlic until fragrant.
Add in ginger, tomato puree & rice - stir few minutes until well mixed.
Pour into a rice cooker together with remaining ingredients.
Cook automatically until rice is done.
2. Serve with your choice of dishes.
I served mine with cucumber pickles, spicy fried chicken and vegetable dhal.

BAHAN2:
2 cwn Beras Basmati - basuh & tapis
2 sb Butter / Majerin
Rempah Tumis (Kulit Kayu Manis, Cengkih, Bg Lwg, Buah Pelaga)
4 ulas Bwg Merah*
1 ulas Bwg Putih* (*cincang) 
2" Halia - di ketuk
3-4 sb Puri Tomato
1 cwn Susu Cair Evaporated
2 cwn Air
1 tangkai Daun Pudina - cincang
1 helai Daun Pandan - simpul
1 st Gula, 1 st Garam

CARA2:
1. Panaskan butter & tumis rempah tumis, bwg* sehingga wangi.
Masukkan halia, puri tomato & beras - gaul sebati.
Masukkan ke dlm rice cooker bersama bhn2 yg lain.
Biarkan sehingga nasi masak sempurna.
2. Hidangkan dgn lauk pilihan anda.
Along hidangkan dgn acar timun mentah, ayam goreng berempah dan sayur dalca.

Best Ever Banana Muffins (Again)

 Liana's birthday celebration in schools were postponed until today when the schools were reopened. She had another two celebrations today... one in her morning session school and the other was in her afternoon nursery session. I prefer to give away homemade bakes for party packs to kids instead of sweets and unhealthy snacks. So that is the reason for making these muffins yesterday. I made 6 dozens altogether and give away together with drinks and balloons to kids which also served as breakfast for all Liana's classmates and teachers.

 My hubby just chopped a big bunch of bananas from our side-yard and they were all ripened.... lovely opportunity to turn them into party packs.... I made 6 dozens altogether, enough to serve two schools, gave away to some friends and our own consumption!

The recipe was posted here earlier on and pasted herewith again for ease of reference as well as the BM translation. This recipe has been my keeper for almost 10 years and definitely the best!

Makes One dozen
INGREDIENTS:
170g Mashed Ripe Bananas
3/4 cup Sugar
1 Egg - slightly beaten 
1/3 cup Melted Butter
1 tsp Baking Powder*
1 tsp Bic Soda*
1/2 tsp Salt*
1 1/2 cup Flour* (* sift together) 

METHOD:
1. Place bananas & sugar in a bowl & mix until combined.
Add in egg & butter gradually while mixing.
Fold in dry ingredients gradually until well mixed.
2. Spoon into muffin cups/tin.
Bake 20 minutes at 180C.

Note: This time I added some chocolate chips on top.

Ini resipi kesukaan Along yg hampir 10 tahun lama nya.... muffin ni lembut, lembab & gebu. Along ada kongsikan resipi ni di sini dulu tapi dalam BI. Kali ni, Along terjemahkan ke BM bagi sesiapa yg ingin mencuba. Senang sangat nak buat nya.

Along buat 6 bancuhan & dapat lah 6 dozen semua nya.... buat banyak sebab Along beri pada kawan2 Liana di sekolah semperna sambutan belated birthday Liana hari ini. Postpone sambutan di sekolah sebab Liana demam sebelum sekolah bercuti... jadi terpaksa tunggu sehingga sekolah buka semula hari ni. Along rasa lebih baik kasi homemade kuih kpd budak2 daripada beli gula2 & keropok, bukan shj lebih sihat, malah mengenyangkan juga.

Bilangan: 1 dozen
BAHAN2:
170g Pisang Masak Ranum - lecek 
3/4 cwn Gula
1 bj Telur - pukul sedikit 
1/3 cwn Mentega - cairkan 
1 st Baking Powder*
1 st Bic Soda*
1/2 st Garam*
1 1/2 cwn Tepung Gandum* (* ayak) 

CARA2:
1. Campurkan pisang lecek & gula sehingga sebati.
Masukkan telur, mentega sambil di kacau sehingga sebati.
Akhir sekali, masukkan campuran tepung* & gaul balik sehingga rata.
2. Sudukan ke dalam cawan muffins.
Bakar 180C selama 20-25 minit sehingga masak.

Nota: Along taburkan sedikit coklat cip atas nya.

Kuih Som Som II

This is my favourite Malay traditional pudding which is plainly made of rice flour and coconut milk, served with either black or rose syrup. I chose rose syrup this time just the way my Emak and my 2nd brother like it. It was dessert for my breaking off fast two days ago.... so all long gone! LOL...

Translated into English by HomeKreation and with slight modification
Makes: 9 pcs
INGREDIENTS:
50g Rice Flour
50g Corn Flour
800ml Coconut Milk
1 Pandan Leaf
1/2 tsp Salt

METHOD:
1. Mix all ingredinets into a pot & stir until thickened and shiny.
2. Pour into small moulds and cool.
3. Chill and serve with syrup.

SYRUP 
150g Sugar
100ml Water
1 Pandan Leaf
3 tbsp Rose Syrup
- Boil until sugar is dissolved. Chill before served.



BAHASA MALAYSIA VERSION
Ni kuih tradisi lama yang tetap jadi kegemaran ramai.... walau pun bahan2 nya simple tapi tak kurang dari segi rasa.... resepi yg baik akan menghasilkan kuih yang lembut seperti puding.... Kali ni Along cuba resipi Nana dan tidak menghampakan..... amat puas hati dan hilang mengidam berpuasa..... Terima-kasih Along ucapkan kepada Nana. Along memang suka sirap rose tapi sirap gula merah pun Along suka gak (ada buat ni dulu).

50g Tepung Beras
50g Tepung Jagung
800ml Santan
1 helai Daun Pandan
1/2 st Garam

CARA2:
1. Campur sebati kesemua bahan2 dan masak sehingga pekat & berkilat.
2. Tuangkan ke dlm acuan2 kecil & sejukkan dlm petisejuk.
3.  Hidangkan dengan sirap.

SIRAP 
150g Gula
100ml Air
1 helai Daun Pandan
3 sb Sirap Ros
- Didihkan sehingga gula hancur. Sejukkan dlm petisejuk sebelum di hidangkan.

Pulut Panggang (Grilled Glutinous Rice Roll) (Again)

 There was some leftover steamed glutinous rice from the gathering the other day and I rolled it into this delicious rolls filled with Shrimp Serunding.... the aroma from the grilled banana leaves is really seducing!

BAHASA MALAYSIA VERSION
Kalau anda ada lebihan pulut kukus, boleh lah buat pulut panggang. Senang jer nak buat ni sebab semua bahan dah ada sedia.... daun pisang amik kat pokok belakang rumah, inti Serunding Udang pun dah siap ada... apa lagi gulung2 & bakar jer dah siap! Ni adalah antara kuih kegemaran Along & hubby pun sama. Kenyang gak sarapan dengan kuih ni dan Along simpan seketul untuk sahur pada malam nya kerana nak puasa qado keesukan hari nya.

Timun Dayak & Ikan Salai Masak Asam Rebus

 A typical kampung dish..... local melon and smoked fish cooked in spicy sour broth.

BAHASA MALAYSIA VERSION
Alhamdulillah dan terima-kasih kepada sahabat yang selalu mengingati Along dan berkongsi rezeki dari kebun kecil nya. Along pun pertama kali mencuba sayur Timun Dayak ni, adalah lebih-kurang macam Timun Sayur Air kat semenanjung tapi beza nya kulit yg ini agak nipis dan lembut. Sedap di masak rebus asam ala masakan kampung. Lain kali Along nak cuba masak lemak cili api campur ikan kembung pula, tentu sedap! Ada pula Sambal Tempuyak dan ulam Mangga Muda (petik dari pokok belakang rumah)... walaaa... selera nya makan nasi!

BAHAN2:
1 biji Timun Dayak - kupas kulit & hiris
Seketul Ikan Duri Salai
2 biji Cili Merah
Cili Padi
3 ulas Bwg Merah
1 btg Serai - di ketuk
2 Asam Keping
Garam

CARA2: 
1. Masukkan kesemua bahan2 ke dlm periuk bersama air secukup nya.
Rebus sehingga menggelegak & timun empuk.
2. Hidangkan dgn nasi putih.
