Kek Lapis Mud Oreo (Layered Oreo Mud Cake)

My second cake for Idh this year.... I wanted something dark and rich in taste and imagined Oreo cake.... Modified my standard recipe and it turned out beautiful but I feel it is not sweet enough... my hubby said is good as he is not a sweet tooth like me. I will modify the recipe slightly different next time to improve it.


The internet is slow... I need to get ready to work soon... I will update the English version later. Updating the BM version first due to so many request.

BAHASA MALAYSIA VERSION
Dah terbayang lama nak buat Kek Lapis Oreo yang hitam menawan..... Along ubahsuai resipi yg Along selalu buat tapi rasa nya kurang manis pada lidah Along lah walau pun hubby kata ok. Pada makcik2 & pakcik2 yg suka bitter sweet taste, kek ni sesuai sebab kurang manis gitew.  Kek ni lembut dan lembab, harum dgn macam2 bahan2 nya.

Kek ni rupa nya seperti Kek Idola, kek yg amat popular di Sarawak tapi beda nya Along guna biskut Oreo. Kalau nak tengok Kek Idola (Along beri nama Mud Cake sbb tekstur nya yg lembab & kaya dgn rasa coklat), Along ada post kat sini dulu.

Saiz: 8.5"/9" persegi
BAHAN2 A: 
10 bj Telur 
16oz Mentega
1 gelas Gula Kastor (I'll add more next time) 
1/2 gelas (60g) Tepung Hongkong#1 
1 cwn Susu Pekat
1 cwn Sekaya
200g Horlicks
1 sb Ovalet
BAHAN B:
1/2 gelas (60g) Tepung Hongkong#2
BAHAN2 C: 
1 gelas Tepung Biskut Oreo (ketepikan krim, blend biskut sehingga halus & sukat)
50g Cocoa Powder
100g Coklat
- cairkan 


CARA2:
1. Putar kesemua bahan2 A, kecuali mentega, dgn kelajuan tinggi sehingga kembang 2x ganda.
Masukkan mentega & putar lagi sehingga sebati.
2. Asingkan 6 cwn kecil, campurkan bahan B sehingga sebati.
Bahagikan kepada dua bahagian.
2. Adunan selebihnya di campur dgn bahan2 C sehingga sebati.
3. Ratakan 1 cwn kecil bahagian tidak berwarna & grill dgn api atas sahaja sehingga perang.
Lakukan sehingga tiga lapisan.
4. Ratakan 1 cwn kecil adunan Oreo & grill dgn api atas sahaja sehingga masak.
Ulangi sehingga habis kesemua adunan Oreo.
5. Ratakan 1 cwn kecil bahagian tidak berwarna & grill dgn api atas sahaja sehingga perang.
Lakukan sehingga tiga lapisan.
Nota: Setiap lapisan hendak lah di tekan dgn penekan kek lapis sebelum meratakan lapisan yg seterus nya supaya lapisan nya rata.

Pengat Pisang (Banana Sweet Dessert)

 This is my late father's favourite.... my mother cooked this dessert almost everyday for Iftar when he was alive... I love this dessert too but may not want it everyday as it is quite sweet. The way my mother cook the sweet gravy makes it taste like butterscotch sauce.... I love the aroma of the golden syrup mixed with thick creamy coconut milk.... truely authentic! My mother knows I love this dessert and she cooked it everytime I return home during holidays.

The bananas that I used in this dessert are not too sweet and slightly sourish, making it perfect combination with the sweet creamy gravy.

INGREDIENTS:
3 Bananas - sliced 
3 tbsp Sugar
1 cup Thick Coconut Milk
A pinch Salt
1 Screwpine Leaf - tear longside & knot 

METHOD:
1. Place sugar in a sauce pan and let it melt and golden in color.
2. Carefully, pour in coconut milk, stir quickly to dissolved the caramelised sugar.
3. Add in bananas, salt & screwpine leaf.
4. Cook until boiled & serve warm.


BAHASA MALAYSIA VERSION
Dah lama tak makan pengat pisang.... teringin pula nak makan sebab teringat kat arwah abah yang gemar sangat makan ni.... Emak masak Pengat Pisang hampir setiap hari untuk abah sewaktu beliau masih ada dulu... Along pun suk juga makan ni & emak akan masakkan untuk Along setiap kali Along balik bercuti. Walau pun Along dah berumur dan pandai buat sendiri.... air tangan ibu tetap paling istimewa di hati....

Pengat Emak amat istimewa.... campuran gula hangus & santan membuatkan kuah pengat ni amat harum dan lazat sekali.... semangkuk pun Along boleh habiskan seorang walaupun hubby kata pengat ni manis... Kalau tak manis, buka pengat lah nama nya kan. Along guna pisang Abu yg masak ranum, pisang ni manis dan masam2 sikit... amat sesuai imbangkan kuah pengat yg manis tu. Mmmmmuah..... sedap nya... puas hati dapat makan ni.

1 mangkuk Santan
Secubit Garam
Sehelai Daun Pandan - koyak & simpul 

CARA2:
1. Hanguskan gula pasir & tuang santan dgn hati2.
2. Masukkan pisang, garam & daun pandan.
3. Masak hingga mendidih & hidangkan suam.

Chocolate Upside-Down Pineapple Cake (Kek Coklat Nenas)

 Delicious tweak of chocolate cake with pineapple... the two compliment each other very well. I created the chocolate cake using egg whites and the outcome was very good.... rich and moist with slight aired chocolate cake...

Yileds: 9" round
INGREDIENTS:
1/3 cup (75g) Butter
1/4 cup packed Brown Sugar
6 slices of Pineapple Rings
1 cup Flour*
1/2 cup Cocoa Powder*
1 tsp Baking Powder*
1 tsp Baking Soda* (* mixed) 
1/2 cup Oil
3/4 cup Sugar
150g Egg Whites 
1/4 cup Milk
1 tsp Vanilla Essence
1/4 cup Hot Water + 1 tsp Nescafe
 
METHOD:
1. Melt butter & pour into a baking tin.
Sprinkle brown sugar.
Arrange pineapple slices.
2. Hand whisk oil, sugar & egg whites until well mixed.
Add in milk & VE.
Add in flour mixture* gradually until combined.
Add in hot water.
3. Pour onto pineapple slices in the tin.
4. Bake 170C for 40-45 minutes.
5. Let cake stand until slightly cool and all moisture is absorbed before removing the cake from the tin.

Gandingan kek coklat dan nenas amat sesuai sekali dan lebih nikmat dari kek coklat kosong. Along rekakan kek coklat ni menggunakan lebihan telur putih... hasil nya kek yg amat lembab, kaya dgn rasa coklat dan yg special nya menggunakan telur putih kek berongga sedikit amat sesuai untuk meresap jus nenas dan sos butterscoth.

1 st Esen Vanilla
1/4 cwn Air Panas + 1 st Nescafe
 
CARA2:
1. Cairkan mentega & tuangkan ke dalam tin.
Tabur rata dengan gula perang.
Susun kepingan nenas.
2. Dengan whisk tangan, pukul minyak, gula & putih telur sehingga sebati.
Masukkan susu & EV.
Masukkan tepung* sedikit2 & di gaul sebati.
Masukkan air panas & gaul sebati.
3. Tuang adunan ke atas kepingan nenas tadi.
4. Bakar 170C selama 40-45 minit sehingga masak.
5. Sejukkan sebentar sebelum keluarkan kek dari tin.

Oreo Cheese Cups

 Sweet dessert that I created to complete the whole course after heavy main meals..... Made it in very small portion as it is very rich and high calories.... It is also quite sweet but suits the sweet tooth like me...hehe....

Yileds:
INGREDIENTS:
250g Cream Cheese
3 tbsp Condensed Milk
1 can (170g) Nestle Cream
3 tbsp Horlicks
3 tbsp Fresh Milk
1 packet Oreo Biscuits
Nestum & Pecan Nuts - for sprinkling 
25g Cocoa Powder
30g Butter
1/2 cup Condensed Milk

METHOD:
1. Place the last three ingredients in a sauce pan and cook above small fire until smooth to produce chocolate ganache.
2. Beat cream cheese, condensed milk, cream, horlicks & milk until smooth.
3. Place one piece of oreo biscuits in each of the container.
Spoon cream cheese batter 1/2 cup full.
Top with chocolate ganache and sprinkle nestum & nuts.
4. Chill overnight.


BAHASA MALAYSIA VERSION
Pemanis mulut untuk melengkapi hidangan berbuka puasa.... Along rekakan ni khas buat peminat cheese dessert tapi amaran ya.... kandungan kalori yang tinggi.... jadi sebab tu Along buatkan dalam bekas2 yg kecil. Dessert ni agak manis tapi Along suka  - gandingan biskut oreo, chocolate ganache & glazed pecans memang cukup manis walaupun tiada tambahan gula.

BAHAN2:

Nestum & Kacang Pecan - utk tabur 
25g Serbuk Koko
30g Butter
1/2 cwn Susu Pekat

CARA2:
1. Untuk membuat chocolate ganache:
Masukkan tiga bahan2 yg terakhir di atas ke dlm periuk & masak dgn api kecil sehingga larut.
2. Pukul cream cheese, susu pekat, cream, horlicks & susu sehingga sebati.
3. Masukkan seketul biskut oreo ke dalam setiap bekas cawan plastik.
Sudukan adunan cream cheese ke atas biskut sehingga separuh penuh.
Sudukan pula chocolate ganache, taburan nestum & kacang pecan.
4. Sejukkan semalaman.

Beef Spring Rolls (Popiah Daging, Kentang & Pis)

 This is late entry which I prepared on the first day Iftar.... Made quite a big batch and froze big portion of it for later consumption. I love this type of filling... chewy tiny bits of beef combined with big chunky potatoes and peas; blended with aromatic spices... wrapped with spring roll skin and deep fried to perfect crispiness.... then while still hot, dipped in Thai chili sauce.... mmmmmm.... nyummmmmm!!!

INGREDIENTS:
Spring Roll Skin 7.5" sq
200g Beef - sliced into tiny bits 
4 Shallots*
1 cloves Garlic*
1 tsp Cumin*
1 tsp Fennel Seeds*
1 tsp Black Pepper* (* pounded) 
1 Big Onion - diced 
1 tbp Curry Powder
4-5 Potatoes - peeled & cubed & boiled 
1 small can Peas
Chinese Celery
Salt

METHOD:
1. Heat up some oil & fry the pounded ingredients until fragrant.
Add in curry powder, big onion & salt.
Add in beef & stir until cooked.
Add in Potato & peas & cook for few minutes.
Cool.
2. Place a spoon of filling into a piece of spring roll skin & roll.
Seal the edge with flour paste.
3. Deep fry until crispy.
Serve with chili sauce.
Chunky potatoes with beef, peas and all the goodness of spices

BAHASA MALAYSIA VERSION
Popiah inti daging, kentang & kacang peas adalah kegemaran Along sejak dari zaman remaja lagi... Along suka kentang yg di potong kiub besar, daging yg di hiris halus supaya terasa apabila digigit dan keenakan kacang peas di dalam aroma rempah2 nya.... Along buat ni hari pertama Iftar lagi dan suka buat lebih dan di bekukan supaya sedia ada bila2 masa bila terasa nak makan. Bila nak makan, cicah dgn sos Thai... waduhhhh.... 10 bj pun boleh di bedal tapi perut jer yg tak muat....hehehe...

BAHAN2:
Kulit Popiah 7.5" sq
200g Daging - hiris kecil2
4 ulas Bwg Merah*
1 ulas Bwg Putih*
1 st Jintan Manis*
1 st Jintan Putih*
1 st lada Hitam* (* tumbuk) 
1 bj Bwg Besar - cincang
1 sb Serbuk Kari
4-5 bj Ubi Kentang - kupas, potong kiub besar & rebus empuk
1 tin Kacang Peas
Daun Sup
Garam

CARA2:
1. Panaskan minyak & tumis bhn2 tumbuk* sehingga wangi.
Masukkan serbuk kari, bwg besar & garam.
Masukkan daging & kacau sehingga daging masak empuk.
Masukkan kentang & kacang peas, masak sebentar.
Sejukkan.
2. Sudukan inti daging ke atas sekeping kulit popiah & gulung rapi.
Lekatkan hujung nya dgn bancuhan tepung.
3. Goreng dgn minyak dalam sehingga rangup.
Hidangkan dgn cili sos Thai.

Tartlet Filling IV - Pineapple Tartlets (Tartlet Nenas)

 This is definitely fabulous combination of crispy tartlet pastry and  delicious home-made pineapple jam, topped with crispy bisquick.... with tartlet pastry ready in hand, this can be prepared in 10 minutes to serve unexpected guests. I've created this accidentally since I happened to have all ingredients ready in hands... my hubby loves it so much with thumbs up!

INGREDIENTS:
Ready-Baked Tartlet Pastry - see here for recipe
Pineapple Jam - see here for recipe
1/4 cup Bisquick - see here for recipe
1 tbsp Caster Sugar
1 tbsp Margarine

METHOD:
1. Spoon pineapple jam into tartlet pastries.
2. Mix bisquick with sugar & rub in margarine until crumbly pastry is forms.
Sprinkle on top of pineapple jam.
3. Bake 5-10 minutes until the topped crumbs is crispy.

Kebetulan semua nya sudah siap sedia... inti nenas pun baru jer buat baru2 ni selepas sedara kasi nenas banyak hari tu. Along pun experiment lah nak letak dalam pastri tartlet yang siap sedia ada. Tabur lak pastry crumb atas nya.... fulamak... sedap banget... makan suam2 selepas bakar pekena dgn kopi O mmg best sangat tak terkata... Hubby pun suka sangat dan teringat lak dgn AngahRuz & UsuRaz... they all tu hantu pineapple tart kalau dapat ni tentu mereka suka sangat.

BAHAN2:
Tartlet Pastry yg sudah siap sedia - tengok resipi di sini
Jem Nenas - tengok resipi di sini
1/4 cup Bisquick tengok resipi di sini
1 sb Gula Kastor
1 sb Majerin

CARA2:
1. Sudukan sedikit jem nenas ke dalam pastri tartlet.
2. Campurkan bisquick dgn gula & gaul marin menjadi pastri hancur.
Taburkan ke atas jem nenas.
3. Bakar 5-10 minit sehingga topping crumbs rangup.

Apam Pisang Putih Gebu (White Steamed Banana Cake)

 This fabulous steamed cake is really tasty, light & moist in texture....  I created it while experimenting with egg whites and turned out marvelous..! I love every bite of it and had several pieces without any guilt...! Brought some to the office and the mates didn't have enough... The egg whites help to lighten the cake, whilst banana makes it moist... such a wonderful combination!

Yields: 8" round
INGREDIENTS:
175g (about 5 eggs) Egg Whites
3/4 cup Sugar
3/4 cup Veg Oil
30g Margarine
1 tsp Ovalet
~490g (about 5) Bananas - mashed 
1 tsp Baking Powder*
1 tsp Baking Soda*
2 cup Flour* (* sifted) 

METHOD:
1. Beat oil, margarine, sugar & ovalet until well mixed.
Add in egg whites gradually while beating.
Add in flour mixture* and mix well.
Add in mashed bananas.
2. Steam 45 minutes until cooked.



BAHASA MALAYSIA VERSION
Wow.... Apam Pisang Putih Gebu... ! Amatlah sedap, gebu ringan dan lembab dengan rasa pisang. Along rekakan resipi ni sebab belum ada lagi kan resipi apam yg menggunakan telur putih sahaja. Rezeki pisang kat rumah ni tak putus2 sebab Along tanam banyak pokok pisang. Bagi anda yang suka makan apam pisang, harus cuba resepi ni.

CARA2:
1. Pukul minyak, majerin, gula & ovalet sehingga sebati.
Masukkan putih telur sedikit demi sedikit sambil di pukul sebati.
Masukkan campuran tepung* & gaul sebati.
Masukkan pisang lecek & gaul sebati.
2. Kukus selama 45 minit sehingga masak.

Pulut Serimuka

 I made this last month but had very limited time to update the blog. In fact I still have a handful of delayed entries which I'm slowly updating when I can find time and energy to do so. This kuih is good for breakfast although I prefer to have it for afternoon tea. I made mine moderately sweet and the plain glutinous rice layer will complement it well. I'm always successful making this but this time my top layers smudge into the glutinous rice layer slightly and I guess because I didn't press it firm enough.... Anyway it still looks good except not photogenic....LOL!

Yields: 8" round
INGREDIENTS:
BOTTOM LAYER:
2 cup* Glutinous Rice -
washed, soaked few hours & drained 
2 cup* Thin Coconut Milk
(* 170ml measuring cup)
1/2 tsp Salt
TOP LAYER:
2 Eggs
100g Sugar
40g Flour
175ml Thick Coconut Milk
4 Pandan Leaves
- blend with
½ cup & extract juice 
Green Coloring - optional

METHOD:
1. Place bottom layer ingredients in a tin & steam 30 minutes until cooked.
Pressed firmly using spatula or cake presser.
2. Mix all bottom layer ingredients until smooth.
Pour onto the first layer.
3. Steam over medium low heat for 20 minutes or until firm.
Cool the kuih completely before slicing.

Kuih ni nak buat nya tak susah tapi kalau nak beli pun merata-rata tempat boleh beli. Along saja buat sebab ada pulut dah lama terperap kat dapo tu. Along buat ni bulan lepas tapi tak kesempatan nak update blog ni. Lagi pun banyak juga tunggakan yang belum Along publish lagi di sebabkan kesibukan dan keletihan selepas bekerja, tambahan di bulan Ramadhan ni tak cukup masa nak berblogging. Kali ni comot sikit sebab lapisan pulut tu tak tekan cukup padat tapi nampak ok juga cuma bila guna macro lense, tak photogenic jadi nya.... sikit comot pun dah nampak sangat....  huuuu...... takpalah, janji ngap rasa sedap dan puas hati makan....heheeeee

BAHAN2:
LAPISAN BAWAH:
2 cwn* Pulut -
basuh, rendam beberapa jam & tapis
2 cwn* Santan Cair
(* Saiz cwn sukat170ml)
1/2 st Garam
LAPISAN ATAS:
2 bj Telur
100g Gula
40g Tepung
175ml Santan Pekat
4 helai Daun Pandan
- blend dgn
½ cwn air & perah jus
Pewarna Hijau - optional

CARA2:
1. Masukkan kesemua bahan2 lapisan bawah ke dalam tin & kukus 30 minit sehingga masak.
Tekan dengan sudip atau penekan kek sehingga padat.
2. Campurkan kesemua bahan2 lapisan atas sehingga rata.
Tuangkan ke atas lapisan pulut.
3. Kukus dgn api sederhana selama 20 minit sehingga masak.
Sejukkan kuih sebelum di potong.







White Banana Butter Cake with Chocolate Chips

 I had some egg whites leftover and abundance of bananas..... so here what I created from it.... fabulous moist banana cake with bitter sweet chocolate chips..... I shared with corridor mates in the office and received good feedback! I had a piece for my boss too but didn't ask for his feedback....hehe

Makes 1 bundt cake
INGREDIENTS:
225g Butter
330g Sugar
150g Egg Whites
~300g Mashed Banana
430g Plain Flour*
1½ tbs Baking Powder* 
½ tbsp Baking Soda*
½ tsp Salt* (*sifted together)
100ml Evaporated Milk**
200ml Coconut Cream** 
1 tsp Vanilla Essence** (** mixed) 
200g Bitter-sweet Chocolate Chips

METHOD:
1. Cream butter & sugar until white & fluffy.
Add in egg whites bit by bit while beating.
Add in mashed banana & mix well.
Add in flour* & milk mixture** alternately until well mixed.
Add in chocolate chips & mix well.
2. Pour into greased bundt pan.
Bake at 170C for 60 minutes or until cooked.


BAHASA MALAYSIA VERSION
Along experiment buat kek pisang dengan lebihan telur putih.... wow.... seperti yg di impikan, memang sedap sangat... lembut gebu & lembab! Rasa nya di imbangkan pula dgn coklat cip bitter-sweet memang perfect! Bagi anda yg suka buat kek lapis, memang banyak lebihan telur putih, cuba lah buat kek ni.... memang sedap sangat!

BAHAN2:
225g Mentega

1½ sb Baking Powder*

100ml Susu Cair Evaporate**
200ml Santan Lemak**

200g Coklat Cip (Along guna bitter-sweet)

CARA2:
1. Pukul mentega & gula sehingga kembang.
Masukkan telur putih sedikit2 sambil di pukul.
Masukkan pisang lecek & di gaul rata.
Masukkan tepung* dan campuran susu** berselang-seli sehingga sebati.
Masukkan coklat cip & gaul rata.
2. Tuang adunan ke dlm acuan bundt.
Bakar 170C selama sejam atau sehingga masak.

 Kelmarin Hari Sabtu tak kerja so dapat lah sediakan hidangan Iftar dengan kawan-kawan. Along jemput 5 orang jer, campur kami sekeluarga cukup-cukup untuk semeja. Makanan utama nya sempoi jer Nasi Ayam Goreng. Meh tengok menu.....
