Pineapple Pachrey

The pineapples I bought recently have ripened and would be suitable for this dish.

INGREDIENTS:
1 Ripe Pineapple
- cut into semi-circle shape

3 Shallots*
2 cloves Garlic*
1" Ginger*
(* sliced)
Some Rempah Tumis
2 tbsp Curry Powder
- add some water to form paste
2 tbsp Kerisik
1 bowl Coconut Milk
2 tbsp Sugar or to taste
Salt & MSG

METHOD:
1. Heat up few tbs oil & fry sliced ingredients & Rempah Tumis.
Add in curry paste & stir until oil emerged on the surface.
Add in Kerisik, coconut milk, pineapple slices, salt, sugar & msg
Cover & boil until pineapples are cooked.

2. Serve with rice.

Pais Pomfret

This is another Malay kampung dish. "Pais" describes cooking method using banana/palm leaves which are grilled above charcoal fire, hot griddle or oven (modern method).

INGREDIENTS:
1 Pomfret - cut to small pieces
3 Shallots*
1 clove Garlic*
1 Lemongrass*
5-8 Chilli Padi*
1 Green Chilli*
(*blended)
2 tbsp Thick Tamarind Juice
1 tsp Turmeric Powder
1 Turmeric leaf**
Some Daun Cengkil**
(**sliced finely)
Salt, Sugar & MSG
Banana Leaves - for wrapping

METHOD:
1. Mix fish with all ingredients.
Wrap fish with banana leaves.
Grill until cooked.

2. Serve with white rice.

Sweet Pineapple Cocktail

I happened to buy a few big pineapples which intended for curry and Rojak. Today's hot weather reminded me to try the recipe from Che'iza. Really good to quench my thirst in the hot afternoon or anytime at all.

INGREDIENTS:
1 Pineapple
- peeled & cubed
1 liter Water
100g Sugar
50g Rock Sugar
Yellow Color

METHOD:
1. Place all ingredients in a pot & boil.
Cool.

2. Served with ice cubes.

Football Cupcakes

Made this for a colleague's (HZ) birthday on his request. This is the simplest deco and dare not try the more complicated ones yet. Miri was blacked-out since 7pm until noon of the next day, so this is an easy & quick thing I could do. The filling is butter cake and topped with BC.

Minced Beed Wrapped in Omelet

This is supposed to be an omelet parcel but my pan is not big enough. Hence I simply topped the miced beef with the omelet like the above picture.

INGREDIENTS:
4 Eggs
1 cup of Minced Beef
2 cloves Garlic*
1" Ginger* (*pounded)
1 small Big Onion - chopped
Some Chilli Padi & Red Chilli - sliced
1 Tomato - chopped
Some Mixed Veg
2 tbsp Oyster Sauce
Black Pepper powder
Salt
Water

METHOD:
1. Beat eggs with fork & season with salt & pepper.
Fry in a flat pan to make a thin omelet.

2.Heat up some oil & fry pounded ingredients.
Add in chopped onion & chillies and fry for a while.
Add in the rest of ingredients.
Add some water to make it juicy.

2. Wrap cooked minced beef in a omelet like a parcel or just top the omelet like I did above.
Serve hot with rice.

Orange Poppy Seed Muffins

As opposed to cup cakes, muffins are typically a bit heavier & denser. This recipe produces moist & soft muffins although a bit heavy. My hubby loves it but not the children due to strong orange flavour from the peel.

I dare not mention the blog where I've got the recipe as she has deleted the recipe from her blog as instructed by the police (who said that poppy seeds is illegal...!). Poppy seeds is categorised as spice and not drug. You can get some info about poppy seeds here .

INGREDIENTS:
300g Self-raising Flour - sifted*
40g Poppy Seeds* (*mixed)
90g Caster Sugar
130g Unsalted Butter
200g Marmalade Jam
230ml Milk
2 Eggs
1 tbsp Grated Orange Rind

METHOD:
1. Put butter and marmalade jam into a bowl and microwave it till butter melts.
Stir and mix evenly. Cool slightly.

2. Whisk together milk, eggs and orange rind.
Add in the butter mixture and mix well.

3. Make a well in the flour mixture and pour egg mixture.
Fold gently with a spoon until just combined and should be a bit lumpy.
(Do not overmix - overmixing will make them tough)

4. Spoon mixture into prepared paper cups and bake at 190C for about 20 to 25 mins or until muffins are risen and golden.

Lemon Meringue Pie


Women Network threw a farewell party for Sheh Hwa at my house last Friday. SH is leaving Miri to Holand for job posting. Considering it was a working day, I catered most of the foods (SH's treat) except desserts. Desserts & kuih were potlucked from few friends & I made the above pie.

PASTRY SHELL:
1¼ cup Plain Flour
3 tbs Icing Sugar
125g Butter
3 tbsp Iced Water

FILLING:
¼ cup Corn Flour
1/3 cup Water
1 cup Lemon Juice (I used ½ cup juice coz not enough + water)
2 tsp finely grated Lemond Rind
¾ cup Sugar
6 Egg Yolks
30g Butter

TOPPING:
6 Egg Whites
¾ cup Caster Sugar

METHOD:
1. Prepare pastry & line 22-24cm pie pan.
Chill for 20 minutes. Blind bake at 180oC for 10 minutes.
Remove beans & bake another 10 minutes until pastry is light golden.
Cool.

2. Mix filling ingredients, except egg yolks & butter, in a sauce pan.
Stir over moderate heat until boils & thicken & simmer for a minute.
Remove from heat & whisk in Egg Yolks & Butter.
Cover with foil & cool completely.

3. Beat Egg Whites until soft peaks.
Beat & add Sugar gradually until thick & glossy.

4. Pour filling into pastry shell & spread meringue over the top.
Bake at 150oC for 20 minutes until lightly brown.

The Making of Cencaluk

Miri is famous with its shrimp-based products like Cencaluk, Belacan and dried shrimps. Miri is surrounded by beach and blessed with seasonal shrimp flows and hence not surprising that most locals make their own Belacan & Cencaluk. Me too, does not want to be left out...! I learned making it from my sis-in law few years back. A couple of weeks ago when I saw fresh shrimps sold along the beach, just thought of making it again.

Wanna try making your own Cencaluk? Here it is:

INGREDIENTS:
1 kg Fresh Shrimps
3 handful Sugar
1 handful Salt

METHOD:
1. Mix all ingredients.
Keep in a clean & covered jar & leave it for 4-5 days.
Stir every other day to ensure even fermentation.

2. To serve, mix with lime juice, Chili Padi & Onion.

Oreo Layered Cake

My youngest sister & family moved to KK, Sabah last year & coming to visit me for the very first time this weekend. She ordered me to make for her any delicious layered cake.... as she is my "adik manja" and my bro-in-law who always "bodek" me, of course I will oblige.

This cake is very popular in Miri. I've got the recipe from a friend but I have not got her permission to publish the recipe. Enjoy the photos in the meantime.

Sausage Buns

This is for kids' breakfast tomorrow. Recipe is from the book of Alex Goh. The bread is very soft. My second son complimented his mum while having a big bite..."Emmmh, this is delicious (with his thumb up) & even better than the XX bakery"....and my reply to him "Wah, pandai nya nak bodek mama haa...(with a big grin on my face)"!

(Makes 16)
INGREDIENTS:
1 portion Basic Dough (see here)
Chicken Sausages
Mixed Vegetables
Mayonaise
Tomato Sauce
Shredded Cheddar Cheese

METHOD:
1. Divide dough into 70g ball.
Roll it flat & wrap a sausage.
Slice like a comb & twist it open.
Leave to rest for 45 minutes.

2. Brush with egg wash.
Top with mixed vegetables, mayonaise, tomato sauce & cheese.

3. Bake at 190C for 15 min.
Pipe with more mayonaise & tomato sauce.

Yam Buns II

There is plenty of leftover filling from Angku kuih yesterday, so here how I made use of it. For the dough recipe, see next posting.

Crispy Fried Chicken

Buat ni untuk bebudak... bukan saje simple tapi memang best:

BAHAN2:
8 ketul Kepak Ayam - potong dua
2 st Serbuk Cili*
2 st Onion Powder*
1 biji Telur (+ sedikit garam & pukul)
2 sb Tepung Gandum**
5 sb Breadcrumbs** (** campur)
Garam*

CARA-CARA:
Gaul ayam dgn bahan2 *.
Celup ayam dlm telur & golekkan atas breadcrumbs.
Goreng sehingga masak.

Yam Angku

This is one of my favourite Chinese kuih. Recipe extracted from Yochana. Take note that there is more than half of the filling leftover from this recipe.

INGREDIENTS-FILLING:
150 g Green beans - soaked overnight, drained and steamed until soft
2 tbsp Oil
150 g Sugar
120 g Yam - steamed and mashed

INGREDIENTS-SKIN:
250 g Glutinous Rice Flour
120 ml Thick Coconut Milk
1 tbsp Castor sugar
1 tbsp Oil
120 g Yam - steamed and mashed
Purple Color

Banana leaves

METHOD:
1. Blend green beans and oil until fine while it is still hot.
Add in remaining ingredients and mix well.
Cool and divide into small round balls.

2. For Skin, mix all the ingredients into a soft dough.
If dough is too dry, add in some warm water and mix till a dough is formed.
Divide into small portions.

3. Flatten the dough, wrap in filling and press into angku mould.
Knock to release the angku and place onto greased banana leaves.
Steam with low fire for 8 minutes till cooked.
Brush with some oil while it is still hot.

Chicken Masak Merah II

Chicken is a must in daily menu when my eldest son is around. Since he is home for only a week, he gets the privilege to choose his favourite chicken dishes. This is a simpler version than the one I posted earlier....making do with limited available ingredients in the pantry.

INGREDIENTS:
10 pieces chicken
1 Star Anise#
1 Cinnamon Stick#
1 Cardamon#
3 Cloves#

1 Big Onion*
10 Dried Chillies*
2 cloves Garlic*
1" Ginger* (* blended)
4 tbsp Tomato Sauce
1/2 cup Coconut Milk
Salt & palm sugar

METHOD:
1. Rub chicken with turmeric powder & salt & deep fry until half-cooked.

2. Heat up several tbsp oil & fry ingredients#.
Add in blended ingredients & fry until fragrant.
Add in tomato sauce & coconut milk & stir until boiled.
Add in chicken, salt & sugar.

3. Dish up & serve with rice.

Black Koci


I've been thinking of this since ages.... The last time I made Kuih Koci (white ones) was in in the early year 2000's. I remember brought them to the office for a colleague who never eaten Kuih Koci in her life (there is no kuih Koci being sold in Miri).

Tonight I just could not hold my desire anymore & gave myself no more excuses. I bought the black glutinous flour many months ago. So, after watching my favourite Indonesian series and dinner was cleared up, I managed to get my sleeves up for this...! My boys were so curious what kuih I made out of the ugly dough. However, half of those were gobbled right after the steamer was opened... "oooosh...heavenly delicious but wanna keep some to bring to school tomorrow", they said!

(Makes 18 pieces)
INGREDIENTS:
200g Glutinous Rice Flour
100g Black Glutinous Rice Flour
1 tsp Salt
275ml Water (adjust if necessary)
- Mix until smooth dough is formed

FILLING:
50g + 50g Black/White Sugar
50ml Water
150g Desicated Coconut
1 Screwpine Leaf
- Heat up sugar & water until boiled. Add the rest & cook for a while.

GRAVY:
1 packet Coconut Cream
1 tsp Flour
1/2 tsp Salt
- Mix & microwave for 1 min.

METHOD:
1. Wrap filling into a small portion of the dough.
Place on a piece of banana leaf & pour 1 tsp of gravy.
Wrap.
2. Steam for 25 minutes.

White Butter Cake (Again)

I promised my friend, J to make the cake again for her to compare to her last attempt, which she complained did not turn up well. My cake turned up fine despite I left it half way after beaten the egg whites, waiting for my hb to return from shop for the flour. I thought I would fail this time as the meringue has returned watery after waiting more than 1 hour but the cake still turned up light & fluffy.

Ginger Chicken II

INGREDIENTS:
Some Boneless Chicken - sliced
1" Ginger - pounded
Ground Black Pepper
2 tbsp Oyster Sauce
1/2 tsp Turmeric Powder
1/2 Big Onion*

2 Green Chilli*
2 cloves Garlic*
Some Chilli Padi* (*sliced)
Salt

METHOD:
1. Marinate chicken with other ingredients other than *.
2. Heat up 2 tbsp oil & fry slice ingredients*.
Add in chicken & stir until just cooked.
3. Dish up & serve immediately with rice.
