Butter Fish Fillet


More Tuna menu .... I told you that I have a lot in my freezer.... anyway, no one in the house complaining about it as they all love it.... I've been creating different menu with the Tuna so far and was a hit every time. Since I am allergy to prawn, fish fillet is a good substitute to Butter Prawns. My two sons said they don't mind having this menu everyday as it is so delicious.... Initially they suggested that I cook Fish & Chips again but after tasting this dish, they couldn't choose which one is better.....LOL.

Serves: 5-6 persons
INGREDIENTS:
300-500g Fish Fillet - cut into small size 
1 tbsp Curry Powder*
1/2 cup Flour* (* mixed) 
2 Egg Whites
2 Eggs**
2 Marie Biscuit Crumbs** (** mixed) 
2 tbsp Butter
4 cloves Garlic - chopped 
Some Chili Padi - chopped 
3-4 sprigs Curry Leaves
3 tbsp Oyster Sauce

METHOD:
1. Rub fish fillet with salt.
Dip fish in flour & curry powder mixture, egg white & flour mixture again.
Deep fry until cooked & golden color.

2. Heat up a cup of oil & fry egg & crumb mixture until crispy.
Dish out.

3. Heat up butter & stir fry chili, garlic & curry leaves.
Add in oyster sauce & stir for 1 min.
Add in fish & crumbs.
Serve immediately.

Sotong Bilis Masak Lemak

Just an ordinary Masak Lemak (Green Spicy Broth) but tried it with Sotong Bilis (dried tiny squids). Taste good!

INGREDIENTS:
100-200g Sotong Bilis
1 bowl Coconut Milk
2 Green Chilies*
Some Chili Padi*
2 Shallots*
1" Fresh Turmeric / 1 tsp Turmeric Powder
1 pc Dried Tamarind
1 Lemongrass - bruised 
1 Turmeric Leaf - crumpled 
Salt

METHOD:
1. Place all ingredients in a pot & keep stirring until boiled.
Cook for 5 min & dish out.

2. Served with white rice.

Fish & Chips

 I still have many kilogram of the huge Tuna that I bought recently sitting in my freezer - Fish & Chips will be a quick way to finish them. I made the potato chips from scratch which were nicer than frozen ones from the supermarket. The whole family enjoyed it so much that all gave me thumbs up.

Makes 5 pax
INGREDIENTS:
5 pieces Fish Fillet
5 tbsp Tapioca flour
2 Egg Whites
A plate of Breadcrumbs
Salt & Pepper

METHOD:
1.Rub fillet with salt & pepper.
Coat thoroughly with tapioca flour.
Dip in egg white & roll onto a plate of breadcrumbs.

2. Deep fry fish fillet in a flat frying pan.
Fry until golden & cooked. Flip one.

3. Served with potato chips, salad, lemon slice & tartar sauce.


MAKING POTATO CHIPS:
1. Peel, wash & cut the potatoes.
2. Boil until 3/4 cooked & drain.
3. Add pepper & salt and deep fry.

Below is how I sliced the Tuna - lengthwise and the three pieces weighted about 1.5kg, enough to serve 5 pax. It has very thick skin which I removed & reserve it for something else (am thinking to make crispy fish skin with chilies... I'll share after I make it later).

Liana in Miri Water Park

 Petang tadi bawa Liana main2 kat Taman Awam Miri. She likes playing in the children's pool, sampai dah kecut2 badan & terketar2 sejuk pun tak mau keluar....

Laksa Johor II

 It is Mackerel (Kembong) season and hence those sold in the market are all very fresh. I made our family's favourite laksa for breakfast this morning in order to make use of the Mackerels. This time I made little variation from the first recipe i.e. simpler version. See here for the first version.

INGREDIENTS TO MAKE GRAVY:
1 packet of Spaghetti -
boil until tender & drain
1 kg Fish (Mackerel or others)
4 tbsp Oil
4 tbsp
Curry powder
1 Big Onion*
3 cloves Garlic*

1" Galangal (Lengkuas)*
2 Lemongrass
(Serai)*
1cm Belachan*
1 tbsp Dried Shrimps (Udg Kering) (*blended)
1/2 pot Coconut Cream
(Santan)
2 pieces dried Tamarind (Asam Keping)
3 tbsp roasted Coconut paste (Kerisik)
Garnishes: Long beans, bean sprout, Polygonum, Chilies, Lime (Bahan Tabur: kcg pjg, taugeh, dun kesum, cili, limau)


METHOD:
1. Clean fish & grill until dry. Flake off the bones and blend with some water.
Grind the bones with some water & filter the bone stock.
{Panggang ikan kembung & blender isi nya dgn air. Tulang nya di kisar & tapis}


2. Heat oil in a big pot. Fry blended ingredients & curry powder until fragrant.
Add in coconut cream & stir until boiled.
Add Salt, tamarind, pounded fishflakes & roasted coconut paste.
Boil a bit longer until the taste are well blended.
{Panaskan minyak, tumis bhn2 yg di kisar bertanda* & rempah kari sehingga harum. Masukkan santan & kacau sehingga menggelegak. Masukkan kesemua bhn2 lain}

3. Serve spaghetti with gravy & garnishes.
{Hidangkan spageti dgn kuah & bhn tabur}

Thin & Crispy Cheeseburger Pizza

 I was searching my fridge this morning and figuring what to prepare for breakfast. I found a packet of Kawanku Flaky Wrap, only 3 pieces of beef burgers, french fries, some cheddar and parmesan cheese and that's all. So I came up with this simple menu for our beakfast and whole family was very happy with what was served on the table.
This recipe can be prepared and served in less than 30 minutes....!

Makes five 9" diameter pizza (one each for my family)
INGREDIENTS:
5 pieces Tortillas / Roti Wraps
Tomato Sauce
Beef Burgers (put as many as yo like) 
1 Big Onion
Mixed Herbs, Parseley & Black Pepper
Cheese (I used Cheddar & Parmesan. Mozarella will be nice)

METHOD:
1. Cook beef burger on a flat pan. Chop to bite size. Keep aside.

2. Spread each tortilla with 2 tbsp tomato sauce.
Sprinkle chopped beef burger & arrange big onion rings.
Sprinkle herbs & black pepper.
Lastly sprinkle cheese on top.

3. Bake at 240C (fan oven) for 5-7 min until cheese is melt & tortilla is crispy.
Serve immediately accompanied with french fries.

NOTE:
You can add or less the ingredients with whatever you have in hand following your appetite of the day....!
Since I only had 3 pieces of beef burgers, I also added minced beef cooked with some black pepper sauce.

Nasi Ayam Goreng (Fried-Chicken Rice)

This is unusual way of cooking chicken and rice and that was the reason why I tried this - to satisfy my curiosity...! My curiosity was answered finally after waiting for long time until I have the time to try it out. I am very glad that I tried this as it is a discovery of an excellent recipe. My whole family enjoyed it so much!

Recipe translated into English & modified to suit size
Serve: 5-6 persons
INGREDIENT A:
1/2 Chicken - cut 6 
1/2 tbsp Turmeric Powder
1 tbsp Curry Powder
1/2 tsp Salt

METHOD:
Rub chicken with all the ingredients & deep fry until cooked.
Keep aside.


INGREDIENT B:
4 cup Rice (measurement using rice cooker cup) - washed & drained 
1" Ginger*
4 Shallots*
2 cloves Garlic* (* pounded coarsely) 
Mixed Spices (2" Cinnamon, 2 cardamons, 3 star anise)
1 tbsp Curry Powder
Ground Black Pepper
1 Chicken cube
1/2 cup Fresh Milk / Santan
4 cup Water (adjust amount according to type of rice) 
Coriander/Basil Leaves - chopped 
Salt

METHOD:
1. Heat up some oil & stir fry pounded ingredients, curry powder & pepper.
Add in curry powder & stir for a minute.
Add in rice & mix well.

2. Place rice in a rice cooker.
Arrange fried chicken on top.
Pour in milk, water, cicken cube, salt & coriander leaves.
Cook with automatic rice cooker as usual.

3. Serve with salad, cucmber salad, plain soup and Thai sauce.

Eggless Chocolate Cake II

 
  I was quite in a baking mood lately and my hubby started to complain that I've put additional calories on him. My respond to him that he need not worry or feel guilty as this is an eggless cake (although I know nothing  about calory counting). As for the kids, they will be delighted of any chocolate cake especially with chocolate ganache. By the way, I think this chocolate ganache is quite high in calories which will offset the calory reduction without eggs.
This cake is not sweet and therefore I decided to complement it with chocolate ganache made of sweetened condensed milk and it turned out to be very good combination.

Source: Suma (I've rewritten the recipe for my ease of reference and added 1 cup Yoghurt as it is too thick)
(Makes 8" sq)
INGREDIENTS:
60ml Warm Milk
50g Milk Powder
1 tbs Nescafe / Instant Coffee
1/2 cup Oil
100g Sugar
1 tsp Vanilla Essence
1 cup Yoghurt (HomeKreation: I've added this) 
125g Plain Flour*
80g Cocoa Powder*
1 tsp Baking Powder*
1/2 tsp Baking Soda
1 pinch Salt* (* mixed)

METHOD:
1. Mix warm milk, milk powder & Nescafe.
Add in oil, sugar & vanilla essence.
Add in yoghurt & stir well.
Add in flour mixture until combined.

2. Bake for 30-35 min (I've reduced it instead of 40 min).


CHOCOLATE GANACHE

- Mix & double boil until smooth.

Cream Puffs III

 
 Made this on AngahRuz's request and I was obliged because he's been studying hard lately to prepare for his SPM (his first paper will be tomorrow). Besides the two big boyz, Liana loves it too & she had three pieces in one serving and wanted more.... have not seen her eating that much of anything else before.... anyway gotta to stop her as not to spoil her appetite for dinner.
This version produces very nice crispy pastry and it did not shrink after came out from the oven. The inside also cooked well and most of all very delicious with the custard filling. This is the best cream puff recipe of all that I tried - perfect pastry & creamy custard filling.

(Makes 3 dozen)
INGREDIENTS:
250ml Water
78g Butter
93g Flour
4 Eggs

METHOD:
1. Place water & butter in a saucepan & boil.
Remove from heat & add flour, all at once.
Beat with wooden spoon until well mixed.
Return to heat & stir until smooth & non-sticky.
Cool slightly.
2. Beat in egg, one at a time until light.
3. Pipe or spoon onto greased baking tray.
4. Bake at 250C for 10 min, then 180C for 15 min until golden.
Cool on rack.
5. Inject custard filling.

CUSTARD:
2 Egg Yolks
50g Caster Sugar
30g Flour
200ml Fresh Milk
- Mix all & stir cook until thick & glossy.
- Alternatively microwave for 5 min, stir every 1 min.

1-2 Green Chilies* (* pounded)

1 bowl Coconut Milk
1 Tomato - diced
1 Big Onion - sliced 
Salt

METHOD:
1. Rub fish with salt & turmeric powder.
Deep fry until golden brown.
Place aside.

2. Heat up few tbsp oil & stir fry the pounded ingredients & ginger until fragrant.
Add in coconut milk, turmeric powder & tamarind piece. Let it boil.

3. Add in fried fish, tomato, big onion & salt.
Let it boil for 5 minutes.

4. Serve with white rice.

Stir-Fried Black Pepper Beef


 More beef menu lately to clear stock from Qurban & Aqiqah..... This is my family's favourite dish. My third son UsuRaz had double plates of rice & 2 slices toasted bread to go with this dish.

INGREDIENTS:
500g Beef - sliced 
8 Shallots*
1/2 Big Onion*
3 cloves Garlic*
2" Ginger*
1 tbsp Black Pepper Corns*
1 tbsp Fennel Seeds* (* blended) 
3 tbsp Chili Paste
4 tbsp Soy Sauce
1 Red Capcicum - sliced
3 Green Chilies - sliced
1 Tomato - diced 
1 Big Onion - diced
Coriander leaves - garnishes
Salt (if necessary since soy sauce is already salty)

METHOD:
1. Heat up 1/2 cup oil & fry chili paste until fragrant.
Add in blended ingredients & stir until fragrant.
Add in soy sauce, beef & some water and let it cooked.
(I actually pressure cook at this point. If you do not have pressure pot, you may need to add some water to let the beef cooked properly).

2. Add in the rest of ingredients & stir another minute.
Dish out & sprinkle chopped coriander leaves.

3. Serve with hot rice  or roti.

Puffs with Black Pepper Beef

 What can be better than crunchy pastry with tasty black pepper beef for an evening coffee.... of course there are many better options but there is no choice, that's all that I can offer....hehe.

INGREDIENTS:
1 packet Puff Pastry
200g-300g Beef* - chopped till small bits 
2-3 tbsp Black Pepper Sauce* (* mixed & marinate 10 min) 
2 cloves Garlic - chopped 
1/2 Big Onion
Chinese Celery / Coriander leaves
1 Egg for glaze

METHOD:
1. Heat up few tbsp oil & fry chopped garlic until fragrant.
Add in marinated beef & stir until cooked.
Add in chopped onion & stir another minute.
Add in celery/coriander, stir well & off heat.
Cool.

2. Roll out puff pastry until 1/2cm thick.
Cut out to rectangle shape.
Place filling on half side, fold and seal with beaten egg.
Glaze top with beaten egg.

3. Bake at 200C for 20 min until golden.

Chewy Brownies

 I actually baked this brownies to serve for Idh on last Wed but somehow didn't manage to slice the cake despite reminded myself repeatedly.

After 15 minutes baking, the electricity was cut-off and in order to save the cake I baked it in AMC pot over a gas cooker. It took double the time to cook & it came out very chewy that I thought it was failed. So I put it in a container & ignored it with frustration. I mentioned to Mal that I had a failed brownie in case she still wanted to try but we were so busy eating, chatting, photographing, etcs that we both forgot about the brownie eventually.

The brownies get ignored for few days and finally managed to slice it today and to my surprise it has improved over these few days.... it is actually really awesome! We didn't know what we missed.....!! Once sliced, they are gone in no time....LOL.

(Makes 8" square)
INGREDIENTS:
4oz Butter
4oz Chocolate
1½ cup Sugar
2 tsp VE
2 large Eggs
4¼ oz Flour
2 tbsp Cocoa Powder

METHOD:
1. Line tin with overflow parchment paper.

2. Melt butter & choc separately & mix. Cool slightly.
Add in sugar & VE.
Blend in egg, one at a time.
Whisk in flour & cocoa until smooth.

3. Bake at 180C for 35-45min (toothpick almost clean).

I'm a big girl now and can stand still & do posing (mommy need not chase me around anymore)..... Liana is very talkative.... very clever too. She can name many animals, fruits and things in English by now (she'll be 1½ years old by 24th Nov).

Grill Black Pepper Steak

 I had fresh beef from the mosque for my share of Qurban this year. In fact we had three portions, two qurbans (mine & hubby's) and Liana's aqiqah. My hubby picked it up from the mosque just few hours after the cow was slaughtered so the beef was really fresh and sweet. 

I saw Nor (Tganu) making baked black pepper beef from her qurban meat and that gave me an idea to do the same. I gave a kg of the beef to my friend Hatta and he told me that he made pan-grill steak. So I decided to do something along those ideas.

I made two portions, one was rare & the other was well done. Only me and AngahRuz enjoyed rare steak which is more juicy and tender. The steak was very tasty and the Thai chili sauce wasn't really necessary.

Here is how I made mine:
INGREDIENTS:
500g Beef - about 1" thick
Black Pepper sauce
Olive Oil

METHOD:
1. Marinate beef with black pepper sauce (I marinated 6 hours in fridge).
2. Heat up grill pan (pan with raised ridges) with some olive oil until really hot.
3. Pour olive oil on meat & place in the grill pan.
4. Cook one side for 5 min without touching.
5. Flip & cook another 5 min.
Let it rest for 5 min with heat off.
Tips:
a. Do not overcook otherwise the meat will be tough.
b. Do not prick the meat while cooking as you will spoil the taste if doing so.
6. Slice thinly & serve with Thai chili sauce.

Lychee Jelly

 Many people have tried this.... I made this to serve for our Idh yesterday and it was nice.

INGREDIENTS:
1 packet (10g) Agar-Agar / Jelly Powder
5 cups Water
3/4 cup Sugar
1 can Evaporated Milk
1 can Lychee - blend at one pause only so that not too fine
1 Screwpine Leaf (optional)

METHOD:
1. Boil jelly & water until dissolved.
Add in sugar until dissolved.
Add in milk & lychee.

2. Pour into mould & let it set at room temperature.
Chill.

Orange Punch

 Serving home prepared cordial is always prefered by guests as opposed to carbonated drinks as it will not cause stomach bloating and most of all lower sugar content. Just a simple twist can be impressive sometimes.

  Assalamulaikum w.h.b  dan Selamat Hari Raya Aidil Adha to all muslims in the world. May Allah accept our qurban this year and bless our life & therefater...Amin!

My activity today started with prayer in Lutong mosque and of course big makan thereafter. I've invited Mala, her family & a friend to celebrate with me this year. Aidil Adha is not a big celebration in Sarawak so we didn't do open house and confined to small group of guests since there is only one day of public holiday. I couldn't take leave a day before to prepare for the food so we had just a simple menu prepared by me & Mala brought several foods along.
