Chicken in Mint Soup


Created something from mint leaves that I brought from peninsular recently:

INGREDIENTS:
8 Chicken pieces
1 potato
- cubed
1" Ginger*
3 cloves Garlic*
Some Mint Leaves*
(* pounded)
1 tbsp Curry Powder
2 tbsp Tomato Puree
2 tbsp Chili Sauce
Water
Salt & Sugar

METHOD:
Heat up few tbsp oil & saute the pounded ingredients until fragrant.
Add in curry powder & add in some water to prevent from burning.
Add in tomato/chili sauce, potato & chicken. Stir well.
Add in some water, salt & sugar.
Boil & cook until chicken is done.

Chicken Feet Kerabu / Salad

Made this by trial & error and I think it does not matched the original Thai recipe, although may be good enough to satisfy my craving.

INGREDIENTS:
6-8 pieces Chicken feet
2 Shallots*
Some Chili Padi & Red Chili*
1 Kasturi Lime*
Ginger Flower*
Mint Leaves*
(* chopped)
1 tbsp Nampla
Sugar & Salt

METHOD:
Boil or pressure cook chicken feet until tender.
Deboned & mix with the rest of the ingredients.

Laksa Taiping

Masak Laksa Taiping untuk sedara-mara jalan raya hari tu, so memang masak banyak & selalu nya resipi main agak-agak & rasa-rasa aja. Sememang nya my laksa mesti kaw-kaw i.e. pekat - guna ikan banyak baru puas makan. Laksa tu pulak, import dari Taiping, di buat dari tepung sago, so rasa nya amat berbeza daripada laksa tepung beras, kenyal2 gitu... best betul! Semua orang makan bertambah2 sampai licin satu periuk.

Ini resipi agak-agak untuk 10 orang, kalau buat open house kena gandakan.

BAHAN-BAHAN KUAH:
1 kilo Ikan Tenggiri / Kembung
10 ulas Bwg Merah
- blended
2 senduk Cili mesin
1/2" Belacan
Asam Keping*
Asam Jawa*
(* secukup masam)
Bunga Kantan
Daun Kesum
Garam, Gula

BAHAN2 TABUR:
Timun, Daun Salad, Nenas, Bunga Kantan, Daun Kesum, Cili, Telur Rebus & Petis

CARA2:
1. Rebus ikan & buang tulang.
Blender isi ikan & rebus dgn air rebusan ikan tadi dan kesemua bahan2 lain sehingga mesra rasa.

2. Hidangkan dgn laksa yg di rendam & di celur dan bahan2 tabur.

Pandan Jelly

Source: Sister-In-Law (Kak Lang) but simplified

INGREDIENTS:
1 packet Jelly Powder (13g packet)
1 liter Water
250g Sugar
6 Pandan Leaves
- blended for juice
1 Coconut
--> produced 1 cup thick Santan
2 Eggs
Green color
(optional, without it the bottom will be colorless)

METHOD:
1. Boil jelly & water until dissolved.
Add in sugar & stir until dissolved.

2. Slightly beat egg, santan, pandan juice & color.
Add into the boiled jelly.
Pour into mould & cool at room temperature.
Chill to completely set.

Soya & Cocktail Jelly

INGREDIENTS:
1 tsp Jelly powder
1 tsp Gelatine
130g Sugar
700ml Water
200ml Soya Milk
100ml Fresh Milk
1 can Cocktail Fruits

METHOD:
1. Boil jelly, gelatine & water.
Add in sugar & stir until dissolved.
Add in soya & fresh milk.
Pour into mould. Chill once cooled down.

2. Serve with cocktail fruits.

Idh Tea with Relatives

After returning from travelling and a day of rest, my husband & I invited my BIL & family for makan-makan in conjunction with Idh Fitr / Hari Raya. The laksa noodles were imported from Taiping which is made of Sago flour and hence very springy. Also imported some mint leaves from Taiping. Everyone enjoyed the makan-makan and we were so full like Python who has just swallowed a goat - heavy & unmoved! LOL!

Gift from Holand for Liana

Read what it says on the t-shirt & you understand why I like it so much...hehehe it may also means the opposite but I'll take it as compliment (dah tua pun perasan). I've received the t-shirt from YG a couple of months ago and waited for Liana to grow slightly bigger. Although it supposed to be Dutch baby size, it fits well with Liana. Thanks Kakak YG from Baby Liana... mmmmuah kiss from baby (get ready with a tissue hehehe!)

See Liana above get excited with her very first pair of jeans to match the t-shirt. At the time of the photo was taken, she was a week before 4 months and can sit up by herself.... (second photo)! We were getting ready to leave Miri and catching flight to KLIA.

One More Posto for Liana

Received the parcel just a day before we flew to Peninsular which came from loving Auntie Azie, Abang Amin & Kakak Anies. Special posing from Baby Liana above. Mmmmuah, mmmmmuah, mmmmuah for each of you from Baby Liana (sori yek ayaq lioq baby meleleh ni, bashah dah pipi semua... hehehehe). Thank-you so much for your thought!

Fat Free Grilled Squids


Another belated posting. I was in a hurry leaving for Peninsular Msia to celebrate Hari Raya & hence missed out some earlier menu. Made this during the week I was refrained from consuming fatty food.

I simply threw in whatever ingredients and that was more than a week ago but I think the recipe is more or less as follows:

INGREDIENTS:
Some squids
2 Red Chilies*
2 Shallots*
1 Garlic*
1 Lemongrass*
1/2" Ginger*
(* pounded)
1/2 tsp Turmeric powder
1 tomato
- cut to small wedges
Salt

METHOD:
Mix all ingredients, except tomato, and place them on a sheet of aluminium foil.
Arrange tomatoes on it.
Cook it on a griddle above slow fire until squids are tender.

Ulam Daun Cengkil


This is belated posting. Just to show it off to those who have not tried this. The young leaves were plucked from my backyard. Apart from boiled as ulam, the leaves are also added into many types of Sarawak dishes like Bubur Pedas, Grilled Ikan Pais, Masak Lemak, etc.

Fat Free Menu

This one week I have to constraint myself from oil/fat consumption. So here what I came up with yesterday. The menu is only for myself and a separate menu for the family (with fat of course). However, my second son AngahRus likes my pan-grilled fish and I have to stop him before he finish my portion too....LOL.

Anyone interested in the recipe...? hehe may not appeal to you but I think the fish is quite tasty. Will update later as it is midnight right now (by the way, I just returned from office - a lot of works as it is peak period plus need to clear workloads before Hari Raya leaves).

Posto for Liana

Today I received a parcel from one of my blog fans, Mira. It is a surprise gifts for baby Liana. A lovely card, two t-shirts and a skirt. Although the t-shirts are labelled for 12 months old, theyt fit well with Liana. Liana's photos above specially dedicated for Kakak Mira (I laughed seeing my little girl wearing a skirt.... so cute!), thanks so much for your kind thoughts and many hugs & kisses from both of us to you Mira... mmmmmuah!

Spicy Honey Chicken

Although I cannot consume oily food this week (on doctor's advice), I still need to ensure the family continue having good meal especially in Ramadhan. When one lost appetite, her brain get blocked as well... so I've got to search for help from someone... The first person crossed my mine was Kak Ummi who always cooked delicious dishes. This recipe looks easy enough on the first instance. I took a pinch of the sauce (hopefully will not distort the test tomorrow... hehe) and yes, yummy! Thanks Kak Ummi for sharing.

Kak Ummi, hope you do not mind me pasted the recipe here. Anyone needs it in English, please shout.

Bahan:-
6 ketul ayam - sederhana besar
4 sudu besar cili kisar
5 ulas bawang merah - tumbuk
2 ulas bawang putih - tumbuk
2 cm halia - tumbuk
1 batang serai - ketuk
1 sudu kecil rempah ketumbar
1 sudu kecil serbuk jintan manis
1 sudu besar rempah kari daging/ayam
1 sudu besar cuka makan
2 sudu besar sos cili
3 sudu besar madu
2 sudu besar gula
sedikit garam
4 sudu besar minyak

Cara Memasak:-
1. Ayam digaul dengan serbuk kunyit, rempah kari dan garam.
Goreng kekuningan. Angkat dan ketepikan.

2. Dalam kuali panaskan minyak dan tumis bawang merah, bawang putih, halia dan serai hingga wangi.
Masukkan cili kisar, gaul rata.
Masukkan serbuk ketumbar dan jintan manis.
Gaul sebentar dan masukkan ayam.
Masukkan cuka makan, sos cili, madu, gula dan sedikit garam secukupnya.
Masak sebentar dan gaul rata. Tutup api.

INGREDIENTS:

1 tsp Coriander powder
1 tsp Fennel powder
1 tbs Curry Powder
1 tbs Vinegar
2 tbs Chili Sauce
3 sudu besar madu
2 sudu besar gula
Salt
4 tbs Oil

METHOD:
1. Rub chicken with salt, turmeric & curry powder.
Deep fry.

2. Heat up oil & fry lemon grass & pounded ingredinets until fragrant.
Add in chili paste & fry for a while.
Add in spices powder & fry for a while.
Add in fried chicken, vinegar, chili sauce, honey, sugar & salt.
Stir few more minutes & dish up.

Rice Porridge II

I've not been feeling well and the doctor asked me to refrain from oily food consumption for a week in order to do pancreas test this weekend. I've lost appetite this few days and rice porridge is just the right solution - just swallowed down the throat with not much fuss... Hopefully I survive the remaining Ramadhan with rice porridge only.....uwaaaaa!

INGREDIENTS:
1/2 cup Rice - washed
3 cups Water/Beef Stock
Boiled Beef Shreds
1/2 Potato
- diced
1/4 Carrot
- diced
Salt
Spring Onions & Fried Shallots for garnishes

METHOD:
1. Place rice & water in a rice cooker (porridge setting).
Boil until the rice becomes porridge.
Add in potato & carrots & beef stock.
Cook further until soft & tender.
Add in Salt.

2. Serve with soya sauce, chili oil & garnish.

Cheese & Chocolate Layered Cake II

I've been looking for this recipe for years but no one willing to share. Finally I managed to get it from my husband's relative in exchange with my recipe that she likes so much. I like to share the recipe here but permission not granted and much apology to all. There was one version I made earlier here although the texture is quite different. I will look out the recipe from another relative and hopefully she will let me share here... be patient & meanwhile enjoy the photo.

Oreo Layered Cake (Again)

Made this many times already but this time the middle layer is strawberry flavour instead of Pandan. Some are asking for the recipe and I asked the recipe owner again but permission not granted. What shall I do? I will make my own version next time and will post the recipe if it turns out ok... just be patient and very sorry for that.

Fried Sardine Buns


Finally I managed to make this after waiting for a week to get myself to visit the supermarket for burger buns. Actually made it two days ago but today I was sick & whole morning in a clinic appointment and hence not able to update the blog or visiting blog friends.

The recipe is from Nor (T'ganu) and really a superb idea. My children loved it & ask for it again which I will make again today. Thanks Nor for sharing.

(Makes 10 pieces)
INGREDIENTS:
5 Burger buns
1 Egg

FILLING:
1 small can Sardine
1/2 Big Onions
1 Red Chili
1 Kasturi Lime
Salt

METHOD:
1. Cut burger into half (become semi-circle).
Cut a slit in the middle & stuff with sardine filling.

2. Beat the egg lightly.
Dip burger in the egg on the side with slit & fry on flat pan until golden.
Flip to brown other surface of the buns.

3. Serve with Chili sauce.
